"At Jonathan Waxman’s decades-old institution I sampled the Barbuto kale salad, a favorite of Howard’s and the first dish they made in the Dame space before they had a full kitchen: breadcrumbs are toasted with olive oil, drained and seasoned, Szymanski whips a basil-garlic-parmesan-anchovy dressing, then thinly slices and massages the kale into the umami-rich dressing — he calls Waxman’s version “the gold standard” — and Howard says she can’t wait to introduce her daughter to the original salad." - Emily Venezky

"Opened in 2004 and built its reputation on a breezy Californian Italian menu—centered on items such as the famous roast chicken with salsa verde, a garlicky kale salad, and pastas like gnocchi. The restaurant closed in 2019 because the building’s new owners didn’t want a restaurant, but Waxman was determined to relocate: it reopened in a new West Village address in 2020 (briefly), paused for the pandemic, and fully reopened in 2021. "Barbuto reopened on Wednesday, October 13th. The longstanding West Village restaurant moved into a new space on Horatio Street right before lockdown in spring 2020 (and has been closed since). Yes, the famous chicken with salsa verde is still on the menu, along with a couple pastas, roast vegetables, and other shareable Italian-leaning snacks.
