Fish is not my usual catch, but this place hooked me!
Every dish had this beautiful balance - bright acidity, little surprises in flavor coming from regional ingeredient, and everything was cooked just right. The whole course felt regional, Provençal, and they only serve fish!
1st course: cold cucumber soup with amuse bouche. I’d had a similar soup elsewhere in the city, so it wasn’t totally new, but it was super refreshing for a hot summer day. The mini onion tart in the amuse bouche - Absolute umami bomb. I wanted 10 more.
2nd: seared tuna-like fish and green pepper. Simple, but seriously delicious. The green pepper is so crunchy, tangy and the fish was perfectly seasoned and seared. Also look, so beautiful with fennel flowers, which I’d never had before so aromatic and delicate!
3rd: zucchini flower stuffed with (I think?) a light fish cream. The cream inside and at the bottom felt a bit repetitive for me, but the mushroom garnish was a nice touch - it kind of reset the palate.
4th: fish steak. Cooked just how I like it—not too raw, just slightly under. And the herb on top? Gave it such a great punch.
5th: dessert heaven. Apricot tart, meringue, chocolate puff, mousse... I finished them all.
