Bellwether at Toledo Spirits

This place gives me West Coast vibes!! I don't live in this state, but I didn't feel like I was in Toledo. The signature and custom drinks were amazing. They had a Christmas theme, and they didn't over do it. It's a bar/lounge/cozy place to enjoy some drinks. The basement looked cool, and I wish we sat down there. Overall, this place deserves recognition. Enjoy

I love this place. The food has been decidedly Asian lately which I think they went a little too 'all in' on but it's good stuff. The drinks are where it really shines. They're so good. And served by great staff in a hip setting. I like to sit on the couch if I can, and relax with a few drinks.

Live music on a Tuesday night is rare and welcoming. I had a flight of their liquors - the rum was good; the rest was average. I really enjoyed the hanging art that the waitress says the local artist comes in regularly and adds to it - very cool.

A gem in a previously unexciting part of town. Bellwether has an ever changing array of inventive cocktails, paired with light snacks. This is a great place to begin or end a night out!

I absolutely love this place! Was very impressed with the service and decore. The food and drinks were immaculate.

My wife and I came here to start a date night off and it was amazing we had some amazing cocktails that really broadened our normal comfort level! Atmosphere was calm unique and had tons of character!

Recently went back to Spiriti di Toledo that's Toledo spirits in Italian it's my #1 favourite cocktail lounge in the Toledo area. My family has been in the craft alcohol industry for more then 30 years! Out of California and let me tell you Toledo Spirts is a Gem! Great cocktails & they make some excellent spirits themselves! The atmosphere is nice with the diversity of different kinds of music every time I'm there! Service is fast and very consistent yet not over overbearing which is nice some places the service is just to much. Amazing rotating menu and of course drinks! They have a wide variety of types of spirits and their respective cocktails. The service is great and everyone is so friendly and gives great recommendations. They sometimes have live music but for the most part it's a cozy spot that is clean and well maintained. I need to explore this location more but I believe they have a brewery in the basement as well. I can't wait to return!

I appreciate a cocktail that mixes complex flavors in a unique way that doesn't just rely on sugar. This is the place for that. They raised the bar for me on what to expect from an old fashion. Friendly & competent staff, & a parking lot with a view of the bridge I was just as an out-of-town friend, seeing the best cocktail places that Toledo has & it did not disappoint. It's located in North Toledo and I hope the bar helps lift the area up.

On a cold dark, February night, Ashley welcomed me and my wife into this phenomenal establishment. She stated there was a short wait but took our name down and suggested we enjoy the Heavy bar, downstairs. We waited, enjoying the boa buns. Instead of texting our number, Ashley came downstairs, made eye contact with our group, and gave us a smile and a thumbs-up to let us know we could go to our table. She even offered to carry all of our food upstairs. Emma -the server- came to our table with the most excellent service we have experienced in years. She handled all of our requests with a positive, welcoming, experience. We have had her as a server on prior visits and requested her today and will request her specifically next time we visit. She was able to hold small talk while keeping the conversation personable and professional. Emma and Ashley continued to provide excellent service. Ashley spent her free time bussing tables and checking on customers. The fritters, drinks, and wings and overall nutritional value were phenomenal. Thank you for the shadow puppets. I felt like I was amongst friends the entire night.

Really enjoyed the vibes here on Saturday night. The ambiance is low light and pretty chill. The cocktails are pretty good as is the food. We got the chorizo nachos for an appetizer and they were pretty good. We both got the beef sandwich specials after which was tasty. The cosmo was very good and the stone jam was up there too! I think it's a little pricey for this area but I haven't encountered similar cocktail bars around here so this is a nice choice for a classier place :)

With Chef Aaron from Fowl & Fodder taking over the kitchen of Bellwether, the already great dining options have been elevated! While they are known for seasonal menu refreshes, this year's Fall items are particularly fantastic.

Fun to go support locals trying to do it. Nobody else is. The ambiance is pretty cool, we get it. The bartenders service was not wonderful nor were the drinks. So we will meet half way 3stars.

It was my first time here and it was my 21st birthday. All the staff went above and beyond to make my birthday special. I had no idea what to get and our server offered amazing suggestions. Every staff member we encountered was extremely friendly. I will definitely be back!

Cool vibe and ambience and very very eclectic cocktail selection from around the world. How 'bout a Suffering Bastard from Cairo? (Bourbon, gin, bitters, ginger soda) Or a Green Swizzle from Barbados? (Rum, lime, absinthe). We had a couple of not so exotics: a White Russian (off menu) and a Margarita. Alas, we like the ones we make at home better but at home we don't get a view of the Maumee River through big open garage doors, open to the cool early evening air. The kitchen fare is pretty electric too. And awesomely delicious!! You MUST try the Elote Flatbread. I love Elote (Mexican roated corn) but I've never had it like this before! It's incredible!

Service was amazing. Claire was extremely personable and knowledgeable about the menu. The atmosphere is very comfortable. The food was delicious too. Will definitely go back.

Easy five stars, baby. Easy five. Bellwether, located at Toledo Spirits Distillery, is a sophisticated cocktail bar located on Summit street. It's in the Vistula neighborhood (just NE of downtown). The parking is easy and safe. This place features a large selection of hand crafted cocktails utilizing, primarily, Toledo Spirits products. Creative stuff, good stuff...powerful stuff. Check out the 'Roche de Boeuf.' You should google it, then you should order one. It's Toledo's version of a Long Island, and It'll knock your dick in the dirt...if you're a dude. If you're a chick, prepare to be smoked, fried, and laid to the side. (Damn, I actually said 'dick in the dirt.' Apparently I'm reliving 7th grade through my kids). Honestly, the RdB isn't THAT dangerous, but if you have two, you might want to think about Uber. Outstanding atmosphere. Exposed brick, original wood, comfy seats, lots of natural breezes and light, cool tunes. Outstanding service (thanks to Dan and the other guys). Outstanding food? Yes, but only appetizers so far. I had the feta cubes with cantaloupe (seasoned with mint, herbs, and honey). Three bucks for a delicious and nice-sized portion. Satisfied, I was. Outstanding prices? Well... I can hear you saying "But Mikey, how are the prices?" So let's just say that like Kengo and Element 112, Bellwether is expensive, but you get what you pay for. Like I said earlier...easy five.

Excellent every time. The espresso martinis here are the best I've had in Toledo and some of the best anywhere. The cocktail menu is extensive and haven't found one I don't enjoy. Smaller food menu but it's all great, especially the appetizers.

3 Strikes and you're out. 4PM on a week day. 9 guest total inside and outside. Quote of the night. "Sorry for the delay, but the bar is backed up." -Waitress Strike 1: For the time it took for service, I could have ordered from the bar and walked back to my seat. But was told waitress service only. Strike 2: (9 guests still) The drink time was 15 minutes for a drink and a beer. Also, the specialty cocktails need to be reevaluated. Wrong glassware, inconsistent garnishes, sloppy pours and not every drink is served with a straw. Strike 3: The owner. Well..... he was to busy drinking a beer out back with his friends, while I was waiting 15 - 20 mins to pay his bills. MVP: The Waitress. She was nice and kind but she had to apologize for all the issues. Hmmmm.... I can get better service and timely drinks at a franchised restaurant. The Toledo Spirit does not shine here.

I went there with my fiancé and a friend and we had nothing but great things to say. The inside is open and airy and the service and suggestions from the bartender were appreciated. Frequent flyer now, and every time we come here everything is amazing from snacks to drinks. Great service too! Very glad this is part of the local community!

Loved my experience here and can't wait to visit next time I'm in Toledo! Was here for a rehearsal dinner and enjoyed so many cute and amazing drinks! Staff was so polite and told us a lot about the spirits. Even got a tour! The location has a super cool vibe. I should have brought a bottle home!

Really enjoyed this place a lot, easy parking and easy to find location is always a plus. On top of that the service was fantastic, the cocktail options were numerous and were all delicious. Also got to try their flight of spirits, was pretty impressed for a micro distillery. Can't wait to go back!

I came for Sleigh Bellwether and it was magical. The Christmas inspired drinks did not disappoint. The miracle on summit was probably my favorite but honestly I liked them all. We also tried a few things from the regular menu. I recommend trying the picked grapes and pimento cheese. It's well worth it. They have an interesting selection of hot dogs as well. I had the Hurley. It's basically a beef Frank with Mexican street corn, pico de gallo, and avocado creme topped with cilantro. They have vegan options as well.

The Bellwether is hands down Toledo's premier craft cocktail bar. It's not the only place offering craft cocktails by any means, but it's the only place where the drink is central to the theme. The recently renovated interior is a surprising and beautiful treat from the buildings rugged nondescript exterior. Inside it is warm and cozy, hip and contemporary, and ultimately classy and fun at the same time. Toledo Spirits own distilled liquors are what the menu is mostly built around, which means each drink has been uniquely concocted by the staff to match the vision of the flavors coming out of the distillery. Regionally, this alone makes the Bellwether unique. As for the drinks: you can't go wrong. Classics like Old Fashioned and traditional daiquiris are sure to be found, excellently crafted and delightfully sipable. But the real magic here is in the staff's ever-evolving menu of new creations and slight takes and offshoots on old standards. My personal favorite is the Rum Old Fashioned. The Snoop in a Coup is a classy play on Gin and Juice that'll throw you way back, and the Flamingo is a slightly sweet with a touch of tart summer refresher. And that's barely scratching the surface. Play around on the menu, go deep, chat with your server or bartender and they'll help find something that matches your specific palate. The place gets busy and the drinks can be a little slow in coming just by the nature of how they're made, one at a time. So settle in, try some of the snacks - the pickled grapes get my vote for best bar snack in Toledo hands down, wonderfully weird and delicious! - but the fried chickpeas and salami spread are worthy munchies too. Ask questions, and try something new - you won't be disappointed and your palate will thank you. Straight up - it's not cheap, like most craft cocktail bars, drinks are going to run you $10 and up. For beer drinkers, no fret, there is a small but kind collection of craft brews available and Coors Banquet is always just $3. Standard cocktails (vodka soda, rum & coke, etc run around $7). But you get what you pay for and the Bellwether is offering an experience wholly original to any other place in Toledo. Kudos, a welcomed addition to downtown and the beginning of the revitalization of the beautiful and historic Vistula neighborhood.

I go in there...order a margarita and an Old fashioned. Sat down a 20.00 bill. Attitude fulfilled bartender says. That will be 26.79. Are you fucking kidding me? The margarita was the worst I've ever tasted. I complained. She says. There's 2 oz of tequila in there. Lol. I didn't even taste Any triple sec. (I am a n experienced bartender). 26.00?????? Wtf?

First time here and will definitely return. The hand crafted drinks are a great start to the evening or a perfect night cap. The atmosphere is trendy and social. The space allows you to move around and enjoy the bar area. You can watch the drink makers do their craft and it's very entertaining. You will most likely order your next drink after watching them produce beautiful beverages. Don't plan on eating dinner there, but definitely enjoy some tapa style dishes that go very well with the spirits. If you meet Noel, she's an awesome server and will definitely make some great recommendations based upon your palette preferences.

Hidden gem! I shouldn't post because I hope it stays this way!! We are not in Kansas any more Toto!!! Excellent atmosphere, service, drink and 'grub' selection .....this is a must see and I can't think of many places in comparison in this area

A place that absolutely doesn't belong in Toledo (in a good way), Ive been coming here since they opened and everything they make is incredible. The menu is wonderfully creative and constantly changing, variety of atmospheres for being such a small building, and the staff has always been top notch. Emma has been a friendly face making us feel like regulars for years when we come in after a long day at work, and her and the other servers really tie together an incredible place. Out of the way, but we'll worth the trip down Summit!

Quote from my husband "10/10 would recommend to my worst enemy". But that was after I forced him to eat one of the "edible" flowers in our drink. Drinks were for a palate a little more refined than ours, but the atmosphere was nice and bartenders were great.

My friends and I had the best time at Bellwether. Amazing drinks and great service.... oh and spectacular hot dogs. They even had a great mocktail menu for those who do not drink.

Toledo was lacking in the craft cocktail dept until Bellwether. Great drinks made with local spirits for creative and classic pallets alike. They do gin really well. Plus, great music and ambiance.

We took their tour and did a tasting for $10 on father's day weekend. We've been back several times since then and love their drinks!

Phenomenal concept and amazing cocktail menu of their own distilled liquors and enjoyable snacks! We had items off of their specialty holiday menu, such as the "Holly Jolly" and the "Shoot your eye out!" so it is joyously fun and happy. The atmosphere was fun and breezy with easy parking. Easily one of the best places in Toledo!

simply the best place in town to grab a drink. the staff is a friendly, their cocktail menu rotates often, and everything is always amazing. you can also buy their spirits at liquor stores around town. i only wish this place had better hours on the weekends!! i'd love to see brunch here. i love this place so much

Fantastic cocktails. Only house-distilled liquor I don't love us the gin, very heavy on some unusual botanicals. Make sure you start with a tasting.

Sigh...I don't know where to begin. I'm sorry, but honesty hurts. I am from Toledo and now living in Chicago. I try not to compare because it's not an even match. This was my WORST distillery/bar experience. And I am a man of whiskey and have been to more distilleries than I can remember. To start...we put our drink order in and it took over 35min...over 35min before I had to get up and ask the server "what happened to the order??". They didn't know. By the time we got any drinks it's was 55min in. So drinks, flights, and food was in the house. Thanks you, but it's the principle and how the operation runs. Next. I ordered an Old Fashioned and it WASN'T even made with their own whiskey! WTF? You should be making every drink with your own stuff. And if the cost/oz is too much, then you have a broken process/purchasing. I know this because I'm a process engineer who has been in the food industry! Alright...overall I won't return. And I would highly encourage anyone I know to NOT go there. I'm sorry, but the truth hurts. Best of luck in your business!

A must try. Serious about cocktails. Nice atmosphere that seems to change themes according to season (New Orleans theme currently). Enjoyed the Manhattan and the Snoop in a Coupe. Both excellent. Come out and support this Toledo gem.

This place is very cool and trendy. The drinks are a great. They have unique ones and classics. Service was great too. However, menu is trendy snacks. Don't plan on a meal here. Also, they need to buy some river property and put in some docks. It would be great to ride the boat to.

We had an amazing time at the Toledo Spirts' Bellwether last night. Awesome old school cocktails and ambience. This East Side Toledo girl loved their use of botanicals in their house gin and the special tonic/soda combo. The proprietors are building something very special -- definitely showcasing how creative and classy Toledo is. One teeny, tiny recommendation: coasters would be great. The deliciously cold drinks created a drippy table. We'll be back!

Staff were very informative with ingredients for food allergies. The vodka is extraordinary. The crisp strawberry flavor and quality of the vodka place it quite possibly in the Ciroc range. Will definitely return to purchase more!

Went to Toledo Spirts a few months ago with family that live in Toledo. It was impressive We did a flight and ended up buying 3 bottles before leaving.. the Strawberry Vodka AMAZING. WTF.. Got to have it..
