The baked bread tastes good and I've been buying it for years. For about the last year, most of the time, Berolina bakery bread is filled with holes. Like, half the loaf of bread has holes! You cannot make sandwiches with bread like this. How does a professional bakery sell bread with a bunch of holes in it?
Posting because it's happened so many times, and they are still continuing to sell bread with holes in it.
UPDATE: Editing because I found the owner's response a little bit strange.
First of all, I know what sourdough bread is. This was not sourdough.
Second, many artisanal breads are made by hand. And they do not have big holes. It is poor quality work. Bread prepared properly does not have holes. Perhaps the yeast was not mixed properly, or perhaps fermentation went on too long, or maybe it was another issue. Like I said, it's hit or miss with Berolina bread. It tastes good, but hopefully they can improve on their process and make bread like an artisanal, hand-made bread should be made - without half the loaf containing big holes. It did not used to happen before, so they had it figured out back then. Maybe go back to the prior method.
