Beut Opens From a Former Joomak Banjum Owner - Eater NY

"Beut is an all-day modern Korean restaurant serving homey lunch sets and eight-course, seafood-heavy tasting menu dinners ($125) based on Korean royal court cuisine. It’s slated to debut on April 10. Chef Sang Hoon Jeong, from the now-closed Hwaban and Antoya, leads Beut’s kitchen. The lunch sets will focus on sotbap, clay pot rice with options like beef and fish, served with soup and assorted banchan. For dinner, courses include: mulhwe, raw fish in kimchi sorbet with dongchimi (white kimchi broth) poured table side; lobster maewoon tang (spicy soup); and charred abalone imported from Jeju Island and cooked in a perilla seed-infused rice soup topped with caviar, as well as sinseollo, a deluxe Korean hot pot that was once a fixture of Joseon Dynasty-era royal court cuisine and makes a rare appearance in NYC." - Caroline Shin

Prepare to be impressed! I had the pleasure of dining at what has quickly become my favorite spot for Korean fine dining. This restaurant takes you on a grand journey reminiscent of a Korean royal dinner with an elaborate nine-course menu, including an enticing amuse-bouche to start the evening. The attention to detail here is remarkable, especially when it comes to the silverware. They switch it out for nearly every course, a practice not even all Michelin three-star restaurants adhere to. This meticulous care made me feel like royalty. The highlights of the meal were undoubtedly the abalone and lobster dishes. Each was exquisitely prepared, bursting with flavors that are calling me back for another visit already. If you’re looking for an exceptional dining experience where each dish is a masterpiece, this is the place to be. Your palate is in for a royal treat! Lastly, I must mention the value. An eight-course meal (plus one amuse-bouche) for only $125 is truly a bargain. Don’t miss the chance to experience this exquisite dining at such an affordable price.

I finally checked out this exquisite Korean royal cuisine restaurant! Each dish was a stunning treat for both the eyes and palate 🥰. From the ingredients to the cooking, every detail was meticulously crafted. The ambiance was elegant, and the decor was exquisite, exuding a sense of luxury 💕 🍅 Marinated Tomato The refreshing tomatoes combined with subtle scallion oil and a special tomato and sugar broth were wonderfully sweet and appetizing 🌟. 🍣 Sool Bang Soft rice cake paired with a unique persimmon sauce and top-quality Hokkaido sea urchin—I could eat ten of these 🤤. 🐟 Mul Hwe Fresh yellowtail slices with Korean white kimchi—perfectly fresh fish paired with the crisp, slightly sour kimchi brought a refreshing, non-greasy flavor. The presentation was simple and natural, showcasing the style of traditional Korean cuisine. The bottom layer of tapioca pearls was clearly defined, soft, delicate, yet chewy💕 🍲 Sinseollo My first time trying this Korean royal hot pot, which included scallop dumplings—a soup filled with various ingredients. The broth was rich, and the scallop dumplings were tender and juicy, each bite a perfect blend of seafood and broth. It looked so appetizing with its rich colors 🤤. 🤤 Abalone Grilled Jeju Island abalone with Oscietra caviar, Korean rice milk, and scallion oil—a luxurious and exquisite combination. The abalone was tenderly cut into pieces, firm and elastic. The rice wine added a subtle sweetness, and the caviar brought a luxurious texture and salty flavor to the dish—I loved it‼️ 🦞 Lobster A trio of grilled lobster tail, lobster coral goose liver, and spicy lobster broth—the grilled lobster tail was bouncy and visually appealing, the lobster coral goose liver was rich and delicate, and the spicy lobster broth was exceptionally tasty. 🥩 Wagyu Top-grade Wagyu, cooked to a perfect medium-rare to keep it juicy, paired with cauliflower and fermented bean sauce. The richness of the meat and the savory bean sauce were a perfect match. 🍚 Sotbap Korean traditional iron pot rice with a rich mix of ingredients: maitake mushrooms, pumpkin, sweet potato, and homemade kimchi—plus a serving of Hokkaido sea urchin. The rice grains were distinct and each bite was heartwarming💕 🤎 Daechu Cha Sorbet I absolutely loved the combination of jujube tea ice cream with pine nuts‼️ The cooling sensation came with the sweetness of jujubes and the rich aroma of pine nut foam, plus the crunchy texture of pine nut particles. It looked simple yet exquisite, with a unique taste that was sweet but not cloying, yet felt very nourishing with every bite 😋. 🧡 Pavlova This dessert was more like a work of art—I didn't want to eat it 🥹. It was my first time trying rice wine-flavored sorbet—amazing! I must recommend it to the world 🤤. Coffee pavlova paired with ginseng cream not only looked stunning but also had a mix of soft and crisp textures, sweet with a hint of ginseng's bitterness and the aroma of wine, complex and delicate. It brought many surprises and was the perfect end to this visually and gastronomically delightful journey 👍.

If you're looking for an authentic Korean fine-dining experience, look no further than Beut. When you first walk in, you will immediately feel as if you have been transported to a comfortable and elegant setting to begin your culinary journey. The ambiance is incredibly warm and interior design is very simplistically modern with just the right amount of decor. They also use a very luxurious brand of diffuser in their bathroom which symbolizes the extent they go through to maintain their unique and idealistic image of elegance they want diners to experience! The selections of their tasting menu are also extremely exquisite, where each dish is so drastically different and delicious that it takes you on a magical ride of unique flavors. My favorites were the Sinseollo (Korean royal hot pot with scallop mandoo), the Lobster Three Way (lobster tail and lobster pate served with lobster foam broth), and the dry-aged duck with crispy skin and kabocha squash. The sinseollo provided a warm sensation, one that one enjoys in either a cold winter day or when feeling under the weather! The lobster three way provided an exciting novel experience of eating lobster as you never had before, where the differing textures, smells, and flavors are integrated to provide an extremely elevated experience of eating lobster that you will not find anywhere else! Lastly, the duck with crispy skin was reminiscent of Chinese fried pork, where its skin was the crispiest duck skin I ever had, like eating a moist, tender duck with the crispy skin of a fried pork! I definitely recommend the duck over the dover sole if you like duck! The kabocha squash was also so unique in its flavor profile, where it was kind of nutty and so soft, yet firm (contradictory I know, but I think that's what makes it so unique and fun to eat!). The Daechu cha sorbet was my personal favorite of the two desserts, where it was so refreshing that it ended our meal (which was incredibly filling) perfectly to round out the amazing fine-dining experience. Lastly, the service provided by both Brian, Daniel, and the head dessert chef's assistant were exemplary and embodied what 5* fine-dining should look like. Brian was very friendly, warm, witty, and receptive towards our overall experience of the entire meal. He routinely came to check-in on us and engaged in small talk which we found to really enhance our experience and made it fun! He also wasn't always social with every table, demonstrating how attuned he was to how each diner wants to enjoy their meal, either in isolation or more socially. Daniel was also so attuned to our needs as well, where he offered a plastic spoon for our 9-month-old to play around with so we can enjoy our meal with a little more peace, since she refused to sleep haha. He also made small talk with us here and there and shared in our struggle with balancing our meal with taking care of our daughter, demonstrating his empathic approach which also made us feel less stressed and less alone in our struggles. The dessert chef assistant was equally friendly, explaining his process in working collaboratively with the head dessert chef and how they refine their seasonal desserts, which was exciting to hear and learn about! Overall, this was one of the better Korean fine-dining experiences we have ever had. They were on the quieter side since the restaurant is still in its infancy, which was better for us because we definitely had the undivided attention of all the serving staff! The food was delicious and the service impeccable, both of which was reflective of the elegant dining experience that executive chef Sang Hoon Jeong and pastry chef Sarah Kang perfectly and successfully crafted for us lucky diners. Thank you everyone for the amazing dining experience and for making my first Father's Day so preciously memorable! Thank you for reading and I HIGHLY recommend giving Beut a try for a very pleasant night out!

Beut made a strong impression on me from the second I walked in. The staff were very friendly and made me feel like a welcomed friend. The taste, presentation, and portion were perfect and perfectly spiced from the amuse-bouche to the final dessert. I left feeling pleased and well taken care of. I will return to this restaurant for an uplifted and intimate dining experience.

I also really appreciate that the chefs and team were able to accommodate me being vegetarian and made such a fantastic meal!

Beut NYC is a new spot that opened in April in the Koreatown area. My friend who was visiting from Canada booked our reservation and was lucky enough to be invited. The decor is clean and elegant with dim lights with candle in each table. The menu is inspired by traditional Korean royal court cuisine by Michelin star chefs featuring a tantalizing array of authentic recipes all prepared with the freshest, highest-quality ingredients. Everything was delicious from start to finish and the service was attentive and knowledgeable, with the waitstaff offering helpful recommendations and ensuring our dining experience was nothing short of flawless. Thanks to Brian for being there to help us out with all our questions too! Overall, Beut nyc is true gem and I highly recommend reserving a table at this outstanding restaurant. It's an experience you won't soon forget.

BEUT serves royal Korean cuisine, which picked my interest that we came celebrated friendiversary here. Flavors were simple, light & clean. Chef definitely intended to let the main ingredients shine. While some of the dishes being very homey & soothing, others were executed well with a French twist. It's a menu showcased tradition with modern elevation. What didn't work for me was the rice dish before desserts. The course was too plain even we did add uni additionally. It only had a few banchan with rice, and there's no protein at all. To me, it didn't provide the grand finale before desserts, which was less satisfying. My other little complaint was that they used quite a bit of white dishes for light color food. The plating wasn't as attractive as it intended to be.

4.5 stars, especially if they stay at the current price level. If they increase the meal price, it's prob closer to a 4 star. This is one of few tasting menus I felt was really KOREAN and not fusion. So many of what I ate tasted like an elevated version of things I've had at home (that whole sotbap bapsang) or famous Korean historical palace foods (ie shinseollo). The only additional thing I got was the uni for the sotbap but to be honest, I don't think it added much to the rice bc the rice was already so flavorful I almost felt it was a waste of hokkaido uni. Desserts were both such unique takes on Korean flavors. That pavlova dish really came together excellently when you had each of its parts together. Pretty quick service, very nice and attentive servers. Not too dark, music not too loud. Otherwise wished they had non-wine options for alcohol. They had a Brooklyn made makgeolli. Nice that they had non alcoholic choices though.

Food was ok. We were still eating and had few dish left but sommelier tried to give us a check while bringing out the first dessert, and still had one more. Place was empty on Friday night. Not worth the price.

Absolutely stunning concept of traditional Royal Korean cuisine that's beautifully deconstructed for the tasting palette of NY diners. Each course is well thought out and sophisticated and at the same time dynamically curated out. Unique ingredients and highlighted receipes are comprehensively described by the waiting staffs enhancing the dining more enjoyable to the fullest. Coming back for their SotBap lunch, clay pot rice, in near future!

1.5 stars Not a fine dining experience but with fine dining price. Food was fresh but tasted average, nothing standed out compared to other Korean fusion restaurants. Wagyu was a little too chewy and didn't go well with fermented soybean sauce. Lobster was over cooked. The only highlights were desserts in the end. Service was slow and inattentive.

Sharp and focused cuisine, warm and cosy ambience, (mostly) welcoming and (generally) amicable service in the old Joomak Banjum space by one of its business partners. The new concept is much simpler, but the cuisine is just as bold yet entirely different. My first experience was wonderful through and through. However, my second experience was a different story entirely but only because one component changed. While the food was of course excellent both times, there was a new server on my second visit, and for some reason she kept stopping by my table every five seconds to ask if I was finished so that she could remove my plate so that she could bring the next plate so that she could rush me out the door so that she could finish her side work so that she could go home. She was very obviously in a hurry to go home. I haven't felt this rushed at a fine dining restaurant in a very long time. Just under $350 (I didn't even have any alcohol!) for a meal that lasted just under 2 hours, she quite literally rushed me through 12 courses. She quite literally rushed me so much that I couldn't concentrate or enjoy my food, and toward the end she got so focused on the finish line that she forgot (or refused?) to give me an essential step of one my courses which had a separate supplemental charge ($65... $90 after you include tax and tip!) which leaves a bitter taste in my mouth. While my first meal, again, was wonderful all-around, my second meal was meant to be an experience of peaceful contemplation. In advance of my second meal I actually wrote the owners telling them of circumstances taking place in my life which this meal was meant to honor. I loved my first visit; however my second visit: I really didn't want anything special, if only I could have been left alone and not been rushed, just been brought every component of every dish, just been allowed to have the full experience, just been allowed to enjoy myself, to get my money's worth... The savory chef and pastry chef are incredible, the general manager and sommelier are fantastic, now if only they could find some good servers...

I am loving this new edition to the neighborhood. I find it really unique and refreshing that they are bringing Korean royal cuisine and techniques to America rather than how so many other Korean American and Korean restaurants are trying to "Frenchify" Korean food, there is a nuance there. Korea has had upscale food for centuries, it is great to see that this team is acknowledging that and standing out on its cultural significance instead of relying on some other culture to "bring up" their cuisine when Korean food has this rich history.

I'm not usually a review writer, but I just want to express how much this place made an impression on me during my solo dining experience here, and that everyone should try it at least once. I received great service as well as food, which I was definitely able to feel the journey/story intended. Their lobster course was my favorite but was hard to choose between that and the abalone (I'm a seafood lover). The restaurant was not too dark and helped me hone in on my dining experience despite it being busy. The management team was great and I really felt like I was welcomed. Will be back soon with family.
