Matteo Ferrantino, who, together with Dieter Koschina, previously ran the kitchen of the two-star Vila Joya restaurant in the Portuguese city of Albufeira, presents a modern and creative take on Mediterranean cuisine in the form of two set menus named "Emotion" and "Garten" (vegetarian). Each begins with an array of amuse-bouches and is rounded off with a series of equally delicate petits fours. In between you might opt for Loup de Mer, Porcini, Spinach or Sot-l`y-laisse, Carbonara Ravioli, Black Summer Truffels. With his great taste and considerable technical prowess he prepares premium ingredients, creating exceptionally interesting flavour combinations. Our visit to Bianc for fine dining was nothing short of perfection. Every aspect of our experience, from the impeccable dishes to the excellent wine selection, left us thoroughly impressed. Each bite was a culinary delight, and we found it difficult to choose a favorite among the exquisite offerings. The portion sizes were just right, allowing us to savor every flavor without feeling overly full. The chef's personal touch, coming out to greet us and share his inspirations behind the meal, added an extra layer of enjoyment to the evening. The staff were friendly and attentive, enhancing the overall atmosphere. We also appreciated the sentimental touch of the olive tree from the chef's parent's home. Bianc truly exceeded our expectations and is deserving of high praise.

Wonderful place - gorgeous food - friendly, professional service. We were treated to a feast of tastes and textures. Colorful, artistic servings. Fabulous wine in the wine pairing menu. The owner strolls around and engages in small conversations at the tables. The big distance between tables ensures privacy. Acoustics is controlled, which enables an easy conversation without raising the voice. My wife had the Emotion, while I had the Garden. Both menus were great.

Bianc elevates contemporary fine dining to new heights, making it a haven for seasoned food enthusiasts. My visit was shortly after its opening, which left me in awe of the seamless operation that felt as if the staff had been perfecting their craft together for years—a true testament to the exceptional chef and management team behind the scenes. Upon entering Bianc, the immediate greeting and attentive service set the tone for the evening. The interior, at first glance simple, revealed layers of thoughtful design upon closer inspection. The dining space, divided into two tiers, centers around a striking live olive tree, with the flooring transitioning from rich tumbled tiles to character-filled solid wood as you move between levels. Bianc masterfully balances dim ambiance lighting with spotlighted tables, ensuring the focus remains on the culinary art, your company, and the detailed menu in front of you. This thoughtful lighting design, reminiscent of photography principles, creates an intimate atmosphere within an open setting and beautifully highlights the dishes as if they were performing on stage. The kitchen, visible behind large glass panes, resembles a culinary theater, with bright lights and a tranquil environment that allows guests to witness the meticulous preparation of their meals without the typical kitchen clamor. Opting for the "Emotion" prix fixe menu, I embarked on a 20-course journey (13, if you count the first seven as part of the amuse-bouche) that was nothing short of a culinary masterpiece, with each dish artfully presented and paired with meticulously selected wines, predominantly from Germany. The à la carte menu offers a robust wine selection, presented in a sophisticated box for guests to explore and choose from. My "Emotion" experience began with an array of creatively served amuse-bouches and continued through a main menu featuring dishes like tuna with anchovy and blood orange, lobster with carrot and lemon, and a dessert that was the epitome of a perfect summer day on a plate. Each course was accompanied by a harmonious wine pairing that enhanced the flavors of the dishes. The level of creativity, attention to detail, and passion at Bianc is palpable, from the food and service to the ambiance. Chef Matteo's personal table visits to describe each dish and engage with guests underscore the exceptional dining experience Bianc offers. It's not just a meal; it's a journey that excites the senses and leaves a lasting impression. Bianc stands out as a world-class destination for those who appreciate the art of fine dining. On a side-note, I was absolutely certain after my visit that one day, they would earn a Michelin Star. Sure enough they did...not one, but two.

2 stars Michelin restaurant didn’t disappoint. Great dining experience. Service was of high level. Good wine recommendations to dishes. Pauses between courses were on point. The interior is nice. I like the fact that chef designed restaurant himself and brought a tree from his parents’ house, as well as imported tiles from Italy.

Wine pairing was strong, yet food came sometimes later and we had to wait, this way I felt hungry. It is as simple as that. You want to be at least nourished for this price, not just drunk. I must admit that there was no dish that I will truly remember. Kitchen itself is gorgeous and an atmosphere is indeed Michelin. It was just lacking smth I will truly remember in terms of food.

Might be the greatest tasting experience I have ever had. The staff welcome you from the moment you enter the restaurant and afterwards everything Runa very smoothly. The restaurant it self is also the most gorgeous restaurant I have ever visited.

Bianc is incredible, extraordinary, hard to put in words. A night here is something that can’t be described, but has to be experienced. The food is out of this world: the taste, the texture, the looks, the presentation. But of course it goes much further than that. The service is extraordinary, how the kitchen & service team work together is a symphony of perfection. The design of the place, even the bathroom, the plates, the glasses : it indeed has to be experienced. We spend 5h to get through the menu and would therefore also recommend to get there early. We had the Garden (vegetarian) and Emotion (meat/fish) menu and did the wine pairing and the non-alcoholic pairing. Both excellent. You can also regularly take a look in the kitchen and see how everything is prepared. Everything is explained to you in details as well (wine & food) by the service team. The whole staff is very attentive, friendly and creates such a welcoming and warm atmosphere. We can only imagine how much hard work & dedication it takes to create such an experience! Thanks so much to the whole bianc team. We will be back!

Italian cuisine at this level is an extraordinary experience. The service does its job unobtrusively and always extremely attentive. Chef Matteo Ferrantino is also constantly present at the tables, explaining the menu and its components. Sommelier Mathias Mercier is also happy to take the time to provide background information on the accompanying wines. The food itself is second to none. Every detail is worked out to the smallest detail, the flavors wonderfully combined and complex, but without wanting to be too complicated. Especially the amuse bouches at the beginning set the tone with an incredible variety of delicacies. The dishes themselves then concentrate on a few ingredients, which are, however, worked out with outstanding skill. The two Michelin stars are well deserved. The prices are naturally high, but absolutely appropriate for what is on offer. I am already looking forward to my next visit. Many thanks to the entire team of the bianc!
