Being a vegan in France is always intimidating. Especially when you are being taken to such a fancy restaurant with a famous chef. I didn't need to worry, the staff were super accommodating and we're able to put something together for me, bespoke, that was delicious, healthy, and didn't make me feel like I was missing out.
The dish itself was an asparagus starter with a herb and olive dressing, followed by a delightful seasonal vegetable dish, filled with beans, greens, pea shoots, and bedded on a squash pureé. Delighted with it and would happily go again. The wine list is also excellent and filled with local gems of the southern Rhône.
