Bichelmeyers is getting a lot of attention these days, and to be fair to them, not always for the right reason. They're become a darling of locations with good street style Mexican tacos, and it seems to have detracted a bit from their true purpose.
It's not just a taco stand. That's a relatively recent development. It's a 100+ year-old butcher shop that hosts a taco stand on Saturdays. But that's not a criticism of Yelpers. We tend to get excited about little things like this. To be perfectly clear: me included.
On Saturdays they fire up a taco stand on one end of the shop, and the tacos are fine, unique to my experience. For my personal taste, they're not the best in KCK. You may not agree. I can say the technique they're using to make these is not what is typically found in the plethora of marvelous joints this part of this city boasts, ala Bonito Michoacan, Carniceria El Torito 2, Tortilleria San Antonio, El Camino Real and others. Very good, but not great, and that's more about the end result: flavor, seasoning of the meat, etc. The taco shells are dipped in oil and warmed before being served with meats so they're much studier than those mentioned. To my taste could use a bit of salt, maybe improved seasoning of the meats.
But lets get to the star of the venue.
Meat. Lots of it. Carve up by large, burly mean in bloody aprons, in forms those of you shopping at Hen House, Sprouts and Whole Foods may find uncomfortable.
Tongues, trotters, liver, cheeks, pig ears next to superb rib eyes, ribs, ground beef, filets, etc. Meat cornucopia. I've purchased beef cheeks here, rib eyes, burger, pork, and their secret which can be difficult to find: probably the best beef jerky and smoked beef sticks in city as far as I know. Stupidly good.
Bichelmeyers is a Kansas City treasure, and you should get there. Soon, and find out why. And if you're on the hunt for great tacos on a Saturday, score!
Hint: their tamales may be the best in town. If they aren't, tell me where they are. I want to know. They're spectacular.
