The whole taco is bathed in the consommé’s spices and chile flavor, from the stained tortillas to the meat itself, making for a delicious (but slightly too oily) taco. Mulita Like the quesataco but with a second tortilla on top, this sandwich-like taco is twice as spicy with twice the beef birria and consommé dying everything a glistening orange color. However, the cheese in the mulitas is more melted and less crispy, creating a tasty glue between the two oiled tortillas. Torta Beware: this torta is roughly the size of a football. This bolillo is stuffed to the brim with beef birria, onions, cilantro, and griddled cheese that’s both semi-melted and semi-crispy.
