The owner, Michael, was SO kind. We had a small problem with our order and he came to chat with us and was extremely apologetic and offered us free desserts, a refund, AND a bag of their homemade pasta. Went way above and beyond to make sure we left happy and we absolutely did. Super good vibes & the staff was great too. A restaurant may have the best food in the world, but its service is what makes a good restaurant great.

This rustic roadside eatery is turning out some of the best paninos I've had! (aka hoagie, hero, grinder, sub) The meats are cut fresh to order, and are salty, savory, spicy goodness. The bread is baked in an open air oven out back, and has a perfect crust/chew ratio.(chef's kiss) The pasta is fresh (notice a theme), cooked al dente, and complimented by a myriad of sauce options. We tried the Pasta Mira, and the creamy lemon and basil sauce was perfection. The staff was helpful, friendly and hustled to ensure food was delivered quickly. We snagged two large Charcuterie to go. The meat and cheese assortment was delicious! Save room for the house made Gelato... Cheers!

And don’t sleep on the drinks—whether it’s a cold-brew spritz or a sparkling Italian soda, they round out the meal with a burst of flavor that’s as refreshing as the vibe. Speaking of which: the vibe. Bordo nails the “laid-back but curated” atmosphere. It’s warm, inviting, and stylish without trying too hard—kind of like your coolest friend who also happens to make the best pasta from scratch. Service is another highlight. Friendly, fast, and knowledgeable staff who clearly care about what they’re serving and want you to love it as much as they do. Austin, are you listening? We NEED a Bordo. incredible experience from start to finish. We got takeout, but upon going inside, we were surprised by a gift of a seeded loaf. All their bread is amazing. We also got the roasted pineapple, sorbetto and toasted coconut gelato— incredible. Pasta was great, the potatoes were the best version of patatas bravas I’ve ever had. The vegan sandwich was very flavorful and the Emilio was perfect.. can’t recommend this place enough.

top tier italian restaurant and a must try when in marfa! all of the ingredients were fresh, food was flavorful, and patio vibes were great. waited 40+ mins during lunch time so keep in mind if pressed for time. dimaggio: exceeded expectations, must try pasta! think of a perfectly executed cacio e pepe emiliano: another great dish! bread was top tier and had the perfect ratio of ingredients.

We heard about Bordo while shopping in Marta. It was a great Italian sandwich shop. The bread was delicious and the meats were fabulous. They also serve wine, cocktails and gelato. My friend and I shared a sandwich the vegetarian salads at a table near us looked amazing. Large portions!

This is one of the friendliest establishments I’ve ever been to. They serve the best Italian sandwich, and we can’t wait to go back. I highly recommend trying it if you’re in town.

This place is amazing!! I highly recommend coming here for food and gelato if you're ever in town. They have a small storefront where you order and then open seating in the attached patio. After you place your order, the food will be brought out to your table in the patio area. The serva sandwich was so delicious--all the ingredients were super fresh (and they make the bread in-house in the pizza oven located in the patio area!). I also loved the butter pecan gelato--the perfect texture and super creamy and rich, speckled with pecan bits throughout. The only miss was the pistachio cream Italian soda; I thought it was pretty bland and didn't really taste like pistachio (but the cherry saba soda was great!) This spot is a must-go when you're in Marfa. You won't be disappointed!

Omg! Possibly one of the best sandwiches I've ever had. And I'm 67 and a foodie so that's a lot of sandwiches. The bread! The cheese! The pistachios! Seriously you will not believe it. It's kinda hidden and you order in the shop and they bring it out to you in the eating area. They were super helpful ordering. I shared a sandwich. It was huge.

If you're going to Far West Texas, schedule your trip around Bordo's open hours. We went on a Saturday morning and braved the Marfa heat in line with about 10-12 other patrons before they opened at 11:00. Definitely worth the wait, we had the Italian and one with mortadella and pistachio butter with mozzarella. It lived up to the hype that we had heard and more!

Wow. Where to begin. We were in Marfa on sort of an off-day and we received a recommendation to come here for lunch. One of the absolute best sandwiches I've had in ages. I ate the entire thing and it wasn't small! Worth a trip for sure if you're in the area. It's a busy place so expect a little bit of a wait but you will not be disappointed.

Last day in Marfa, TX! Finally get to try the gelato folks raved about. It was delicious. Had the banana split and the strawberry. Meatball sub was the special. Fresh mozzarella and basil on top, a little burnt sesame bread. The spritzer with a pasta straw was refreshing. Nice place but you'd never know it from the outside. Lots of seating and friendly people. Gotta try before you head out.

Hoffner Knives Culinary Recognition Award: Bordo, Marfa TX for "A Damn Good Sandwich" I consider myself a sandwich connoisseur and I am always in search of a great sandwich. Well, I found one in Martha Texas. Chef Michael Serva, 2025 James Beard Best Chef in Texas finalist, makes a killer sandwich. The bread is wood fired in house with the sesame seeds blackened just right (my favorite part). The contents of the sandwiches are a culinary delight to give you a wonderful flavor experience between those tasty buns. There are many good reasons to visit Marfa, it's a funky fun town, but I would go just for another sandwich.

Amazing place. You enter and order on one side and wait for your food in the other side. Both of our sandwiches were memorable. I got the Emiliani which was a prosciutto basil sandwich covered with parmigiano reggiano. My wife got a Cashiola , which had multiple salamis ,stracciatella, and a spicy calabrian chili kick. Both of our sandwiches were really , really good. Hers had more kick and bold flavors, mine was more subtle. The homemade bread is the perfect match to the artisanal meats and cheeses. Speaking of which , they sell those meats snd cheeses on their own if you feel like taking some with you. The pasta dishes looked great ... we'll have to make a return visit. We did get some gelato on the way out as well. Little flecks of biscotti in the chocolate biscotti gelato made for a great dessert.

Delicious sandwiches at Bordo. They had limited options for plant-based dining, but they were delicious, fresh, and hearty. The DeSimone is pickled beets with goat cheese, basil and arugula. The Secret vegan sandwich had roasted butternut squash, beets, orange slices, and olives. There's a great wine selection and sparkling water, as well as house made gelatos. Service was fast. They also have a "pay it forward" option where you can spend $15 to buy a Marfa local a sandwich, which we really appreciate.

This tiny place blew each of us (group of 10) away. The sandwiches were absolutely amazing! It was the perfect lunch to start our day. Everyone was super friendly. There was a bit of a line/ wait, but totally worth it! Do not skip this spot if ever in Marfa. DELICIOUS

Another great place to eat in Marfa. Hope to see this one stick around. I had the pasta and hubby had a sandwich. The cashiola was what we wanted to try but sold out right before we got up to the front of the line. But we were both very pleased with our selections. The portions were humongous. We also got the potato appetizer, which was good but was really too much food in the end along with the meals. There is a self serve water station outside. You place your order on one side of the building, then head over to the patio area (enclosed). Even though they said it would be a bit of a wait, it felt like hardly any time passed when they brought out our food.

Marfa is blessed with great restaurants. But this is the best. It starts with a great vibe and ambiance when you walk in to order and it just gets better. The ingredients are fresh, the preparation even better. Everything we tried was excellent. I highly recommend Bordo, you will love it. The coolest part is Michael and Hannah...great people who love what they do.

Let me tell you, A-M-A-Z-I-N-G! From walking in and checking out their menu, to their lovely staff, cooks and the break maker! These folks were lovely, pleasant and just have a wonderful experience! We tried a pasta and a Sandwich to share and split, and let me tell you they did not disappoint! It was so delicious! Def could use more outside seating but it was great! I can't stop raving about it! Out hotel clerk told us about this place and I'm glad she did, who knew there was such a great taste for food and presentation in Marfa! You def have to try, you won't be disappointed!

What a pleasant surprise!! A quick transport from far west Texas straight to Italy. Food is unreal. Flavors that I have never experienced before! Homemade everything, friendly staff, cool atmosphere, a must when in the area. I will be dreaming about that pasta for the foreseeable future.

Bordo came highly recommended by a friend who loves the area. If I had not been recommended, I am not sure that I would have even noticed the building and I likely would not have stopped. I would imagine that most of the people that go there have been told to go there by Yelpers or friends. The line was out the door the entire time we were there and it seemed that the amount of seating was just right to allow people to sit just as their orders were ready. We didn't realize how hungry we had gotten, so we were very ready for our sandwiches to appear in front of us. My husband ordered the Cashiola and I went for the Emiliani. Let's talk about the bread, guys. Oh my gosh. The bread was being made right there where we were seated and it smelled amazing. And tasted even better. It was perfectly fresh with the tiniest hint of crisping when they made my sandwich. The Emiliani was absolute perfection. So balanced, so delicious and SO FILLING! I was so disappointed that I could not eat the entire sandwich and fully planned on enjoying the rest later - until I realized it wouldn't fit in my cooler. I ended up NOT getting to eat it and that was the ONLY disappointment I had about the entire experience. If you eat pasta, I can't recommend it first hand because I didn't eat any, but my guess is that they aren't skimping on it. If the line hadn't been longer by the time we were leaving, we would have bought some of their packaged pasta for home. My advice, don't pass them by without getting something. You won't regret it.

10/10. Truly, unbelievably incredible. The vibe, the people, and the food. Everything we tried - sandwiches, pasta, cannoli, and cocktails - was next-level. We were there a little too late to snag any gelato, so we will definitely be back for (at least!) that before we leave town.

In my five decades on this planet I've never had a better sandwich than the Cashiola. And I've been places. I can't imagine a better one. The service is so wonderful--they love their profession and want to serve excellent food. Mission accomplished. The dining area is quintessential Marfa--simple, functional, and with fresh, clean, air. Marfa is exceptionally lucky to have a restaurant like this.

I'm telling you.. if I could give this place 100 stars, I would. Only thing you need to see in Marfa, really. Don't underestimate the vegetarian sub (Desimone).. even my non-veg friends were kinda wishing they got it instead. Bordo is run by the most passionate and kind owners, and you can taste it in every bite you take of their homemade bread and pastas. Seriously, this place gets better every time I go. Someone stop me because I could go on forever.. Did I mention the gelato?!?!!

This is a gem in Marfa! We tried two different sandwiches, both were very fresh and delicious, while pricing was on the higher end for two sandwiches and two drinks, I would say it's completely worth it for the experience. The owners were very warm and friendly, offered us their suggestions on their favorites. We will definitely be back when we are in Marfa!

The Cashiola may be the best sandwich on the planet. And I've had a lot of sandwiches in a lot of countries. I literally come here every day they are open every time I'm in Marfa. Great, friendly service, lively atmosphere, covered outdoor seating, and some hard to find Italian goods for sale too. Every item on the menu has been exceptional. Don't forget to grab a spritz and try their gelato! Can't wait to come back.

Anyone who is accustomed to sharing their meal with a swarm of flies will enjoy their meal at Bordo. It was the low spot of our day in Marfa. The dining room was loud and uncomfortable. Our pasta dish featured nice ingredients, but not enough flavor - maybe it was the thickness of the pasta. Did not enjoy or buy in to the hype.

In my review of a couple weeks ago, I said that Bordo use local ingredients where available. That seems to be true. But I should add that Bordo source authentic products (DOP) from Italy as well, according to the menu. DOP is short for Denominazione di Origine Protetta (literally "Protected Designation of Origin"). So it's a stamp of authenticity, the real deal, similar to DOC for Italian wines. Conveys greater authenticity to the dish. Whatever, in plain Texan, it's right tasty y'all. Among the best meals in Marfa.

An Italian oasis in marfa. Pretty well curated shop/bodega/restaurant. Pasta, charcuterie, wine, cheese plus tinned fish. Don't expect an Eataly but you don't need that really. They have a brick oven and the owner baking fresh bread to order almost outside. Just crack open a Peroni and take it all in. Oh ya there's a ton of variety in house made gelato afterwards.

You can tell that the people behind Bordo care about the quality of their ingredients and creating interesting flavor combinations. Everything we ate was fantastic. We had the chopped salad, a sandwich, and the sunflower pesto pasta and each one was unique. We also had a spritz and even that was perfectly delicious. We will be back if we come to Marfa again.

This place was so wonderful that we ended up going 3 times in 2 days. We will be dreaming of this sandwich for years to come. The house made bread coupled with the hand cut meats and delicious cheese make for a tasty culinary ride for your tastebuds. The gelato is by far the best I've had, grapefruit was super refreshing and the pistachio was delightful with a pistachio butter touch on top. AMAZING place, you will not be disappointed! After spending 3 days in West Texas, where fried food is king, Bordo is truly and oasis of fresh, tasty, satisfying Italian goodness. Might be the best food we have ever eaten. The Emiliani sandwich and Chop salad (the only 2 things we ordered) were unbelievably balanced in terms of saltiness and sweetness and the bread was delicious, like pizza dough. We are mostly gluten free but will cheat for this bread. Our order came out fast and the staff was really nice. Highly, highly recommend!

Excellent and unique sandwiches on memorably delicious bread baked on premises. I haven't tried the pastas dishes yet, but I shared a table with a group that was enjoying theirs. The gelato is very rich, a bit much for my tastes, but my husband really liked it. Very casual with only outdoor seating (shaded) and take out. It's not inexpensive, but the quality is very high and the flavors are crave-worthy. Nice folks, too.
