We loved these pastries- we couldn’t stop coming back for more during our weekend getaway! Our favorites were the morning bun and the cruffin, but everything was great. Super high quality and made with care! Definitely coming back next time we’re here.

We were in the neighborhood and saw a long line in front of Breadfolks Bakery. I was so curious about how delicious it is, so we immediately pulled over and joined the line. The decor is modern, artsy and furnished with wood. It was super cozy to have an afternoon coffee and pastries there. The options were limited since we were one of the last groups. We had one latte, 2 croissants and 2 madeleines with decent price. The coffee was refreshing and flavorful. However the pastries were not delicate as our expectation. We probably did not have their signature product and would like to try other options next time if we are around.

Breadfolks is a delightful bakery that specializes in sour dough baked goods. From croissants to baguettes and loafs, everything here is baked fresh and is truly delicious. The coffee is great too. Wish they had more in terms of desserts and pastries but they do have some. It’s worth the long lines just for a little taste! Baked to perfection.

Totally worth the 2 hour drive from NYC. Happened to stumble in, after a slightly disappointing breakfast at a nearby cafe, and picked up the tomato ricotta danish and oatmeal cookie. The danish was so savory and delicious I could not stop raving about it. Absolutely delicious. Oatmeal cookie was phenomenal as well, not the ordinary oatmeal cookie I’ve had before. A lady walking past stopped to ask me about the goods I had in my hands. Interior was nice, service was quick and kind. Will definitely be back for the tomato ricotta danish!!

While this place isn't exactly cheap, the breads and pastries are truly amazing. I came here twice in a weekend and purchased 5 different pastries and an Italian baguette, and each was something special. Just do yourself the favor and come here, even if that means waiting in line. - - - The cruffins (croissant-muffin hybrid) is incredible. The layers are nicely separated and distinct, and the outermost layers were delicate and crispy while the interior remained fluffy. The passion fruit cruffin and danish had a nice tangy and creamy filling. The cheese Danish was supposedly great, and the chocolate-pistachio croissant was enormous, baked beautifully, and very tasty. Also, the baguette was great. The store itself is somewhat strangely organized. You order the pastries first, even though you're not quite in front of the pastry display case. Then you move over to the register and pay and/or order drinks. It took a moment to figure it out, and it was a bit confusing, but I guess it worked. Regardless, the incredible food far outweighs the puzzling ordering process. Also, I saw that there is a full bakery around back. I didn't check it out myself, but I'd imagine they have more fresh breads and can maybe do more custom orders. 2 danishes, 1 cruffin, 1 croissant, 1 baguette, 1 coffee, and a soda came to about $27. Not exactly cheap, but well in line with what you should expect in Hudson. I highly recommend this place for special loaf or some great morning pastries.

Ok Breadfolks is legit. It's not just hype. We came here on a Saturday around 2pm in late November and there wasn't a wait nor were they out of anything critical. We got the batard, the baguette, and about 6 pastries (croissants, sausage rolls, cruffins) along with some capers and sauerkraut. The total ended up being $50, which was surprisingly not bad. The pastries were amazingly good—I'm not a croissant person but I was bowled over by their lamination and how well they got flavors into their flavored pastries without overwhelming the pastry itself. The bread is where it's at though (it's in their name!)—incredible texture and flavor, a nice, tangy/sour-ey flavor without being acidic. Definitely worth a detour!

Excellent! Bought an assortment of pastry (apple turnover, lemon curd meringue, chocolate croissant), they were all expertly made! Flaky, buttery and delicious. Staff was friendly and helpful. Will be going back before our weekend trip to Hudson is over.

This is the best viennoiserie in the United States, if not the world. Absolutely puts New York City to shame. Impossibly thin, well-defined layers, and the perfect airy interior. Don’t miss their canelé, donuts, danishes, kouign amann, etc. Basically, they can do no wrong. Worth a special pilgrimage from the city.

This is the REAL deal, folks. We stopped by while visiting Art Omi and oh my goodness.... The bread here is truly remarkable. The wait wasn't too bad on a Saturday morning but we got there a few minutes before opening. There was already a line! There is a nice outdoor seating area where you can enjoy your treats. We also got to chat with the owners, which was a plus. Everything was delicious. Get a mix of everything that sounds good to you. You won't regret it.

This place is worth the hype and ofcourse the wait line. I had heard so much about this place so I just visited Hudson town for this bakery and turns out to be amazing! We tried 1. passion fruit cruffin - it looks beautiful on the outside and it tasted so good. Not too sweet and just right. 2. Chocolate croissant - yum! Buttery, flaky and soft inside. 3. kouign amann - this was the best. Soo good. Sweet burnt sugar outside with a crunch and soft with cultured butter inside. I can eat this everyday, worth the calories. 4. Pesto focaccia bread. It was good just the cherry tomatoes were little too much I felt. Pesto was yum! And bread was tasty too!

Worth a detour. Can't wait to go back! Highlights: baklava cruffin, chocolate pistachio croissant. I also think I got a focaccia bread. The cannele was OK (when compared to Balthazar in NJ). The mister liked the twice baked pistachio croissant at Barlett House more.

Can't give more than 5 stars or I would. Best canele I have ever had. The baguettes are unbelievable. Crunchy, sour...everything you would want. Cube is in the freezer because we couldn't eat that much but couldn't pass up a cube of croissant dough. Worth the 2 hr trip!

Really enjoyed this place and recommend that everyone try it at least once when visiting Hudson. We woke up pretty early to try and be one of the first in line when the store opened but when we arrived, the line was already pretty long already. Definitely try the Passion Fruit Cruffin if it hasn't sold out already by the time you get there. You cannot go wrong with that!!

Passion Fruit Cruffin from @breadfolksbakery - a hybrid of a croissant and a muffin.. . How pretty is that pastry? I mean, once you cut it up, it's like a massacre and that is why I am only posting a before picture... it's definitely not something you'll want to eat with your hands and have wet naps ready.. . I am not much fan of muffins.. I only like the tops of muffins since they are the best part and they are usually dry... could be I never had a good muffin ‍ - but this cruffin didn't resemble any muffin to me honestly. The entire pastry from top to bottom, from outside to inside was perfection... the visual as just as good as the taste... . The pastry part was so light, flaky, airy and crispy. The passion fruit was also light, so if you're not a fan of passion fruit due it's tartness, you won't have any issues here. They also had a vanilla cream and chocolate version but trust me, get the passion fruit if it's available... . They don't have any indoor seating but plenty of outdoor seating and it was almost all the tables were occupied and even lines to get it. I can see why and it's worth the wait. The wait isn't long so don't get discouraged if you see a line... they are only opened Friday - Sunday, only 3 days a week... . Believe you me, btwn the 7 adults and 2 kids, we got 8 pastries (2 cruffin, 2 croissant, 2 kouign amanns, 1 brownie and a morning bun, we then went back to get a baguette, some focaccia bread and the last 2 #kouignamann -

When I was looking up places in Hudson in anticipation of visiting a friend who recently moved there, every list said Breadfolks was the place to go. And they mentioned cruffins... so I was intrigued. We waited on the line as is customary with a place like this, but it moved fast. Which was good because it was a particularly chilly morning. When we got inside, the staff was so kind and you never feel rushed when making a decision, which is nice given the line you just had to wait on. When I scanned the selection -- there were no cruffins! Alas! My heart was only broken for a moment before I spied a a pistachio chocolate croissant that was going to take my ails (and hunger) away. I also snagged a small ciabatta to bring home to my family when I was driving back down later in the day. I also saw a bottle of lavender peach kombucha that had my name on it. With all that ordered, paid for, I took it outside and enjoyed my breakfast with my friend. The croissant was everything I could have wanted. Crunchy, Soft, and Big. But also light and hefty enough to hold the delicious pistachio cream and chocolate which were mixed in different layers. The ciabatta bread was also delectable! I had a few slices when I got in later that night and loved its balance. It was also still fresh the next day which was great for breakfast too.

This was the highlight of our trip to Hudson,NY. We knew it had to be good when we saw the line outside of the bakery before it even opened! The line went quick and we ordered two of their cruffins. We got the passion fruit and baklava, both were SO DELICIOUS. I think the passion fruit is a little bit better because it was filled with passion fruit cream in the middle! Highly recommend stopping by here if you are in the area for some goodies. I will definitely be back to try other items if we take a trip to Hudson again.

Sadly I was a bit disappointed with this place. Not so much the baked goods but sadly it was the service. On a good note first the baked items were all very good. The croissant was very buttery and flaky. This vanilla thing i ordered was very good. Sorry forgot what the items were all called. My son had a ham and cheese croissant and an apple turnover which both being very good he stated. As far as service goes I was pretty upset. I waited in line for a bit since they were a bit busy at the time. As I finally reached the front and was about to order, I was skipped. I was skipped due to the fact that I was waiting behind a group of Asian and being Chinese myself the girl just assumed that we were all together and did not bother asking if everyone was being helped but instead she skipped me and went to the person behind me. Now even the lady behind the gentleman has saw what happened and said to me " did she just skip you"? I stated I was but as I waited and then was finally helped by the other lady, the one the disregarded me did not even apologize and walked off to do something else. She knew that she has skipped me because I was ordering now with the other lady. I ordered I would save over about $70 dollars worth of baked good as they were a bit pricy, when I got outside and opened the box of the items I noticed that two items were missing. Good thing I checked because now if I were have left I would have been missing the two items which costed about $7 each and would have been out of $14 dollars for two small croissant wrap sausage. I think it would have been nice to ask who's next and instead of grouping me with other Asian customers.

This was our second time coming to Breadfolks. We stumbled here randomly the first time mid afternoon and most things were already sold out but they still have a few canele which was one of the better ones we've had. The second time we made sure we came early...around 1030am I think. We just beat the rush and got in before a line started forming. This time the store was filled with goodies and we walked out with 2 box full of pastries. The baked goods here are definitely not cheap but as long as they're tasty, I wouldn't mind paying a little extra. Their croissants were buttery and flaky which is a must. Their baguettes were fluffy inside and crusty on the outside but not to the point where your gums are getting sliced up. They were also very generous with their passion fruit filling and pistachio creme. There was one thing that wasn't consistent and that was the canele. It was much better the first time I had it, this time it was a bit on the burnt side. They have a couple of tables and chairs outside for customers which is nice but could be a little annoying when the line starts to form because you'll have hungry customers stare and salivate while you're trying to unwind. I'd recommend getting some pastries and coffee here and take a walk to the nearby historic site Olana.

Ok so I'm pretty sure the two pastries that my husband and I had during our visit to Hudson had a stick of butter each in them. They were both so light and scrumptious it is worth the risk of clogging your coronary arteries. Take a dose of Lipitor and try all of the pastries. We had the pistachio croissant which had chocolate chunks in it-yum. And the Kouign-amann was just heaven.

This place is awesome! I was in Hudson on a Fall excursion, and our guide suggested bakery for coffee and pastries in the morning. This is a popular spot in the area. It opens at 9AM, but there is a consistent line outside throughout the day. There are so many varieties of bread and pastries at Breadfolks. I had the tomato ricotta danish, which was nice and savory. My only complaint would be that I wish they would offer to heat up the savory pastries like the tomato ricotta and sausage danish. This place is soooo good that you could very easily purchase multiple pastries and/ or breads. I also bought the kouign amman, which is a European pastry that's reminiscent of a croissant. Theirs has a carmelized sugar coating on top, which was the piece de resistance. This thing was hella good like a sweet, buttery croissant. I can't wait to return to Hudson for Breadfolks.

We drove 2.5hrs just for Breadfolks again. 3rd time visit here. We got there at 12. They didn't have the hazelnut cruffin. The staff said it sold out :( Ordered: Passion fruit cruffin - DELICIOUS. Give u a hint of sourness and sweetness at the same time. Vanilla cruffin - Awesome. I think it's a bit too sweet personally. It's very vanilla! Still love it. Country sourdough - Fresh and great. Polenta sourdough - Must try item if u like sourdough. It gives you a special texture. Lemon Curd- That's so good! The pastry is so crispy. Love it!!!! We spent $60 totally coz we got so much. Still think it's worthy haha.

We were in Catskills for a weekend getaway trip and was looking for a coffee spot. While scrolling through bunch of places, breadfolks caught my eye. I LOVE bread and pastries so I had to try it out. This was our first time in the area and was surprised how modern and chic this pastry shop was. They only let 4 people in at a time, which I appreciated considering the current COVID situation and how small the shop is. We got four pastries, Baklava Croissant, Double Chocolate Cruffin, Lemon Meringue Danish, and Kouign Aman. We also got an oat latte and a regular drip coffee. The pastries were amazing, not too sweet but still rich in flavor. The oat latte was sooo good. I loved how the coffee flavor pulled through unlike other lattes I've had where all I taste is the oat milk. They also offer around 6 types of milk alternatives (not just almond and soy like many other coffee shops ive been to) so that was a HUGE plus. If I am every back in the area, I will definitely go back. I just wish there was one in my neighborhood!

Was excited to try this place and was not disappointed! We came around 10am on a Saturday and there was a short line. We got: - kouign amann: very nice creme brulee like top with nice soft layers inside - canele: crunchy outside, soft inside, slight rum taste - passion fruit cruffin: delicious meringue on top, flaky pastry, delicious and a lot of passion fruit cream inside. We really liked everything and couldn't wait to come back - so we did, for lunch! We got: - blt: baguette was great as well as the combination of the aioli with the arugula, hearty bacon, and tomatoes - pesto, roasted tomatoes, and parm focaccia - so much flavor on top and the foacaccia was so nice and soft It was all excellent!

We waited in line for almost an hour to experience Breadfolks pastries and bread. Was it delicious? Absolutely, some of the best croissants I've had period. However it was a bit of a long wait so be prepared... Any of the croissants are a must have. We tried the Ham and Cheese and Almond as well as the Baklava Cruffin. The Cruffin was yummy but didn't think it tasted that much like Baklava. Overall a great find!

saw this on one of the recommended places and stopped by around noon. There was already a line, and by the time we came inside all the cruffins had been sold out. We ended up getting one of the foccacias to share, pistachio croissant and a few other treats. Everything was so fantastic and I really regretted not purchasing a few additional items!

Amazing flavor, crispness, light years away from insipid rubber dough from grocery stores. We bought a miche ( large loaf ) for the price of an entire bakery in a small town in France, reward of patience for spending an hour on the sidewalk watching a threatening cumulonimbus. Hard not to eat a whole baguette on the drive home, but be reassured that if you succumb to your desire, a whole loaf of Campagne will last several days without losing any quality.

We had such a great time visiting Breadfolks during our stay at The Maker Hotel in Hudson New York. The staff was super friendly and the baked goods were next level amazing. I definitely had this bakery on my list of places to visit on our trip and it did not disappoint. I look forward to traveling to Hudson again and try your amazing bakery for a second time.

Where to start. Like everyone else here, our "meet cue" with Breadfolks was while we were wandering the neighborhood and saw the long line. We thought, "hmm, has to be good if there's a line". And that was history. We have since returned to the Germantown area (a short 15-20 minutes away from the bakery Meca of our lives), driving 4 hours from our home in Philadelphia, PA. Today we spent $80 to try every single pastry they had, I got two Lattes because one is never enough for my obsession with their lattes, and a loaf of their brown rice-based bread. Their croissant and cruffins leave us WORDLESS. The layers are endless. The freshness is unbeatable. When you go to pull a piece of bread, it stretches out and doesn't even break.... Literally SO DOUGHY and fresh. Needless to say we are customers for life, advocates for life, and devoted lovers of Breadfolks bakery. Why are you still reading this... GO GET IN LINE!!!! I'd love to say that we're here for all the gorgeous views, waterfalls, mountains etc. but if we're being honest those are all just excuses we use to make a trip to Breadfolks. lol.

So upset that they are gone! I went several times and once even had to wait in the dreaded line. Service was average, they did not go out of their way to help or offer suggestions. Croissants were always great even the monstrous filled croissant was delicious with the fillings, only wish I had a chance to sample one of everything before they silently closed.

The tomato mozzarella sandwich was excellent but it was the baklava croissant that was to die for. Buttery and the right level of sweetness (it wasn't drenched in syrup)--so perfect that we'd go back again today if the bakery were open.

I got a Canelé here today, and it was the best canelé I've ever had. I have had them in Bordeaux where they originated from, too. The crust was so crispy and caramelized, and the middle was a perfectly sweet and textured custard. I would love to try something else here.

Excellent bakery and excellent coffee. Famous for their cruffins - a towering croissant filled with chocolate and topped with same. They come in other flavors too. Very flaky, very decadent. The breads are all sourdough so if that's not to your liking you're out of luck here. But if you love sourdough this is your place. They also have excellent coffees. And they sell a few items like yogurt etc. Very popular (line out the door) and deservedly so.

Truly a gem in the area. The pastries taste just as lovely as they look. Haven't had sourdough bread like that since I was working with a baker in a small provincial French town. My favorite purchase of the day was their baguette which tasted terrifically nutty and sour on its own but imagine if I'd paired it with a great butter and raspberry jam!

It's such a treasure. It's a completely indulgent experience getting pastries and loaves from them. There's always a line, and you kind of have to think fast about what you want, but it's never been a problem and I've never had a bad pastry or experience. Well, maybe the one downside is that it's a cult-like addiction to obtain a pastry from them. Thank goodness they're not open 7 days a week. Butter, flour and sugar. xoxo

Hands down the best pastries I have ever had in my life (and I have travelled quite a bit). The dough used is the highest grade. We got 3 types of cruffins, potato pastry, lemon meringue pastry, and a sourdough loaf. We got there around 9:30AM on a Friday and were the first in line when they opened at 10. The line got quite long when they opened so I would recommend getting there earlier. As of now, it's pick up only.

Love breadfolks!!!! Everything I have had from here has been sooo good. Wish I still lived in Hudson and could enjoy it more but I try to stop by when I'm back in town! Highly recommended trying if your in the area!

We got here a few minutes before 9 am and there was a line by the time we cashed out!! We couldn't make up our minds and each got 3 pastries. The lemon curd and passion fruit cruffin were by far our favorites. This place is a gem and I am so happy we got to try while we were in the area! ++The coffee was great too.

The puffed pastry gets five stars, but two out of three said their coffee (almond milk) was very sour. Cruffin super decadent but worth it! Everything looks delicious!

Yes, this seems to be a solid artisan bread, viennoserie -- and sweet baked goods -- bakery and a good addition to Hudson food. I went here after Sparrowbush was between deliveries at the farmers market. I bought the country and seeded loaves. I've baked plenty of bread myself and hoped it would be leagues beyond my ability. Though the crust was excellent, the crumb was a tad gummy (which is a problem I encounter when I think I under-baked bread) and very open with extra large holes. The crumb was super-airy, somewhat damp/gummy, and I found heft overall was lacking, compared to Sparrowbush (which is I think top notch in all respects). So very good, but not "as good as it gets," sadly. I had to toast the bread slices for a sandwich so it had sufficient firmness and dryness. The counter person did know what he was selling. He did not know what flours were in the breads. I would think devoted bakers would want counter people who can do more than ring up a widget sale -- that is, know the quality product. I asked about what was offered and he pushed the polenta. I was not interested and asked about the country, and said I would take that, and he went to take down the polenta, and I had to correct him. (Why is he working in a bread bakery??). I also sampled a ham and cheese croissant which was very well done, even though the filling oozed out during baking it had the requisite croissant crackle, which I know is a challenge with stuffed middle ingredients. I wish them success and wish I could give five stars, but that's my appraisal, and hey it's Yelp, not Michelin!

It looks like they are trying really hard & put a lot of thought and effort into the space and the food but my wife and I had a really bad experience. It was so confusing and uncomfortable. You feel pressured immediately to order but then you're told you're not standing in line the right way & then when you try to order a coffee you're told you have to step over two feet before you can order even though you're talking to the same person. And all their bread is made with sourdough. All that said the espresso was good & so were the pastries. Maybe consider some more straightforward bread and improved customer service.... but sadly it seems the owner is not interested in improving the customer experience. I don't think they will be around a year from now if they don't improve the customer experience despite the quality of the food. See below.

If you're ever in Hudson Friday through Monday you have to visit this place. The bread is delicious. The pastries are a must! Expect to wait on line for about 15 mins but that's nothing compared to the reward at the end...totally worth it.

We picked up a couple items to go. We had a bacon, egg, and cheese croissant and a banana walnut bread. The croissant was savory and flakey. The bread wasn't overly sweet. It had a good balance of flavors and textures.

Embarrassed it has taken me so long to get here. Thought this was just another place for hipster folks from the city to squander money trying to be cool. My new favorite bakery now that the Maker and Bartlett House have become overrun with Instagram types and they no longer have some of the really gorgeous pastries they had back before the hotel opened up. Everything has been delicious. Staff great despite crowds and lines. I can't believe I stand in line, but I do. I can make my own sourdough, but the laminated pastries - those are really fine art in edible form.

I had the ham Croissant and the cheese Danish and it was delicious. Service was fast and friendly and the space itself is clean and beautiful. It looks like it was just opened. We sat outside but apparently there is a Cafe and bakery in the car park.

don't know about anything except the country bread. it looked amazing and tasted even better. got a loaf in the morning when they opened up, and had two slices with butter within minutes. it was really a proudly great bite of bread. there is usually a line at 9am when they open. when i got there at 9:30 this past Saturday it took about 10 minutes to get through the line. i would have gladly waited much longer for this experience. the other breads and pastries looked amazing too. if you are in the area and you are a foodie this is not to be missed!!

As my friend texted me on his first visit, and I couldn't put it better: "Breadfolks is the weirdest place...long line of hot rich people...felt deeply uncomfortable in there...got yelled at by a barista...but the best pastries I've had in America"

Best bakery in Hudson... New York... the US? French laminated pastries on par with great Paris bakeries. Canelle amazing. Cruffins varied and delicious. Great savory stuff at lunch. Always experimenting and mixing things up. Love Breadfolks!

Recently visited for the first time on a busy Saturday morning and Breadfolks Bakery certainly lived up its considerable hype! The long line moved quickly. We were soon enjoying both sweets and bread. Best bakery I have enjoyed during my 20 plus years in Columbia County. Wow!
