It is a comprehensive class. Unlike a lot of classes where they prepare the dough ahead of time, here you make everything from scratch and you don’t need to share any ingredients. I took the basic bread class followed by 2 days of sourdough. They make the effort to time every step so you are always occupied with kneading, baking or in tutorial mode. So anytime you have to sit and rest is well appreciated. There’s a lot of attention to detail. Your needs are well taken care of and sometimes you even feel a bit bad if you have requirements. Lunch is provided and a mid afternoon tea. Coffee, tea or wine. You can have as much as you like. I was fortunate enough to grab the class slot with Dean but Jay and Skye were very helpful and attentive to support. And gosh the amount of bread you make in a day - I had to call the village to share my spoils and even then my freezer is maxed out.

Attended: 5-Day Bread Making with Chef Jenna White This was my first baking class with Brettschneider’s Baking & Cooking School and the whole experience was incredibly fun and enriching. For an amateur baker like myself, it was extremely eye opening and I have learnt so much, in terms of understanding how to work a dough properly and getting good and consistent results and also gaining the knowledge to troubleshoot while baking at home! Chef Jenna is a fun, engaging and encouraging teacher. She shared her knowledge generously and that really helped me and my classmates to take our bread making to the next level. We were very well taken cared of by her and her team during these 5 days. The lunches and afternoon tea provided were super delicious as well! A highly recommended course if you are interested in getting into bread making or even if you are a seasoned baker. Just make sure you clear your fridge and freezer space, you are gonna be bringing home a lot of yummy loaves, buns and treats! A big thank you to Chef Jenna and her team (shoutout to Jay and Bernice for feeding and hydrating us during the whole course :)) at Brettschneider’s Baking & Cooking school for such a fun and lovely experience!

The perfect way to kick off the new year! I had such a lovely time at the sourdough pasta and amaretti class with Chef Jenna and Chef Jyune. They were both so friendly, helpful and knowledgeable, explaining with clarity and great practical tips. Jay, who sent reminder emails, was also really pleasant. The atmosphere of the class is welcoming and conducive, with soft music in the background, and a clean and well laid-out workspace. There's a little dining space too, to eat what you've made. The space has clearly been designed with thought and warmth (I don't mean that literally-- you'll be in airconditioned comfort). I love that the class is hands-on, just a small group, with various ingredients prepared in advanced for ease. Whether you're here on your own or attending as a couple/with a friend, you'll feel at ease and ready to pick up some new techniques and recipes. Great for both beginners and intermediate cooks. Very accessible too, just a short walk (~10 minutes) from Tan Kah Kee MRT station. I was also pleasantly surprised that we were able to take home such generous portions. Will definitely be back for a future class!

Attended tart class with Chef Nic on a Sunday. It’s my first time at this baking school and i had a great time! Chef was great at imparting his knowledge and patiently answering questions and we also had good coffee and lunch too. I’ll definitely be attending more classes after this 🙂

Attending baking classes at Brettschneider's is always an enjoyable and fruitful experience. Friendly, knowledgable and professional chefs, coupled with super delicious lunch (good wine included), tea time and yummilicious end products to bring home. Personally I feel it is the best baking school in Singapore! Looking forward to more new classes/recipes in the future.

My fiancé and I attended the basic bread baking and we absolutely loved it. Dean was not just fun and engaging, but also detailed and clear in every explanation he gave. He patiently answered the questions we threw at him as well. We love the fact that this class is not just about following recipe, but we were given an in-depth understanding of what happens behind each step of the baking process. As an added bonus, we felt the lunch provided was delicious and wholesome! Our friends who tried the bread we brought back all said they were amazing, and are excited themselves to sign up for it sometime in the future!

Period attended: mid September – mid October 2022 I am giving my highest recommendation for Brettschneider’s courses. The classes have been instrumental in refining and improving my baking/ cooking knowledges and techniques. You can definitely feed the whole village with your final results after the end of every classes. No secrets, nothing hidden. All chefs share generous rich knowledge and experience both on personal and commercial settings. Don’t be shy on asking as many questions as possible. I’m most appreciative of Chef Jenna’s principals in balancing between skilling up our hands skills first to understand the basic of making a bread but at the same time understand how to use machine to help on dough kneading processes. Jenna will ensure her class participants not to slack! Be prepared to keep up with her pace with the intensive production time and you will be rewarded with generous amounts of magnificent high quality breads (If you like your HIIT class but in baking, this is the one). You might want to get a good reflexology session after her 5 days bread making class. Both Chef Carlos and Chef Juyne bring fun and crazy stories to their classes. I see more of Chef Juyne as she’s also assisting in Jenna’s baking classes. If you have kids who are interested in baking, I will highly recommend them to attend her classes too. I was also fortunate to attend Dean’s French Affairs class. Even though it seems that he prepared simple recipes, the details of techniques shown is on another level. Don’t worry, all of his recipes are easy enough to be repeated and applied to do home entertaining. He’s a very humbled and truly living his passion on bread making. I enjoyed his methodologies and detailed explanation. Last but not least, attending the classes in Brettschneider will also mean access to Jay’s coffee. Not only she’s very attentive on taking care the administrative part but she’s also the exclusive barista for all of class attendees. Don’t miss her cappuccino and latte. I think they are one of the best that I have in Singapore!

Did the 5-day bread baking course. Learnt from the masters, Dean and Jenna, assisted by the wonderful Jay. A great course to quickly level up bread making. I had no experience in bread making at all, but the techniques taught were easy to learn. The products? Amazing, fluffy, professional looking and tasting bread. My friends think I’m a pro now. The icing on the cake? Freshly prepared lunches, breakfast and tea accompanied with great coffee, and a free signed copy of Dean’s Bread book.
