So much so that last month he debuted his latest restaurant, Brodeto, an ode to the Italian-Balkan cuisine that can be found across Northern Italy, Slovenia, and Croatia. There’s his take on peka, a traditional Croatian dish slow-cooked over and under hot coals, a version of crni rizot (black risotto), plenty of pastas, and more.
