"An anticipated tasting-menu restaurant named after the chef’s grandfather’s nickname will showcase elevated Afro-Caribbean cuisine, and the chef is hosting sneak-peek pop-ups while gearing up for the opening. The chef, who moved to Houston permanently in 2024 after earlier stints at Four Seasons Hotel Houston and Pass and Provisions, frames his approach in terms of both personal history and formal training: he is of Trinidadian descent, spent much of his childhood traveling while his mother served in the military (stationed in places like Guam, Japan, and the Philippines), and says that those travels helped shape his love of international flavors. He recalls the start of his infatuation with cooking: “It was the most amazing thing that eggs can go from a shell to this viscous orb — that we could turn into something really delicious,” he says. “That alchemy blew my mind.” After earning a bachelor’s degree in culinary arts and food & beverage industry management at Johnson & Wales and completing a three-year apprenticeship at the Greenbrier Hotel, he appeared on ABC’s The Taste and worked with Marcus Samuelsson — moving to New York to work at Samuelsson’s Red Rooster in Harlem, traveling with him to projects in London, Sweden, and the Bahamas, serving as first executive chef for Cooks & Captains in Brooklyn, and later working as executive chef for Samuelsson’s Miami Red Rooster (which received a Michelin Bib Gourmand). My favourite stop on a recent food tour. Eric accommodated our large group, took the time to walk everyone through their menu, explaining each dish and making recommendations. Amazing service. The food matched the service. Incredible flavours in the Pancit. Also tried the Miki with extra pork - incredible fall dish. Real comfort food. A little difficult to find at first because they’re located inside a small mall, but their stall has a really interesting vibe, and we got our orders very quickly. 10/10 need to go back!

We tried the Kamayan Christmas dinner special—a collaboration with Dobe & Andy—and wow. If you’re a meat lover, this will absolutely blow your socks off. The spread was loaded with BBQ pork, crispy pork, chicken, duck skewers, veggies, cream cheese and crab dumplings, plus a generous portion of fried rice packed with even more meat. Reservations are required since it’s a group-style meal, and it’s well worth planning ahead. Other standouts for us were the coconut soup with crispy pork and the bone broth—both comforting and deeply flavorful. Buboy is truly a rare gem in Montreal. Huge thanks to Chef Eric for consistently offering such unique, delicious dishes at prices that remain accessible.

Everything about Buboy is perfect. The food, the setup, the service. Number 1 you get your food in no time and it's always piping hot, you literally see them prepare it right in front of you. Number 2 it's delicious. Number 3 the staff is great, so sweet. And number 4 the setup since they changed location is just perfect, it's a little counter and fills like home. A MUST try in Montreal:

It might not be the biggest or the fanciest spot, but trust me the food is absolutely delicious and the service is warm and welcoming. Sometimes it’s the simple places that deliver the best meals, and Buboy is definitely one of them. A true hidden gem worth checking out! ✨🍴

Delicious! This was my first time at their new location, however I've eaten at Buboy's multiple times so far and it's always amazing. One of my favorite restaurants in Montreal. I really liked the sliders and the pancit sauce was so good.

Room temperature was freezing...some rice was hard (either old rice or cold rice) I've ordered 3 plates unfortunately it wasn't hot but more likely between cold and warm ....felt like if I add 2 more minutes in the microwave it would have been hot enough. The sauce was gelatinous, probably not hot enough. Don't get me wrong, I love philipino food, but this time .....I was disappointed.... never have I ever had a plate semi hot and hard rice ...

I recently had the chance to try the boodle-feast (Kamayan) dining experience. It was an engaging and interactive meal, where I got to enjoy the food with my hands (plastic gloves were provided). The price tag was $60 per person, but the portion sizes were generous, making it a worthwhile and enjoyable experience. I loved the garlic rice and the deliciously charred meat.

the restaurant is inside a building, if you are not from montreal you might have a hard time finding the place. the restaurant gives an authentic carenderia vibes limited seating. Food is good we had the pares, bulalo and pancit. everything was packed with flavors and delicious. Service was good they also offer some filipino baked goods. I will definitely visit this place again when I visit montreal. Definitely recommended
