"A former officers' mess, this mansion standing proud next to the Porte des Moulins is now a charming restaurant, designed and set up by chef Laurent Petit. Both the name and decor of this elegant property surrounded by a large vegetable garden pay homage to the tradition of basket-making in Fayl-Billot – the birthplace of this champion of ingredients from Lake Annecy. The carte blanche menu devised by Valentin Loison (the chef from the Jura previously worked at Le Clos des Sens and Mirazur) is creative and on point, drawing inspiration from foraging (polypody), garden vegetables, local livestock (matured Black Angus beef), Saône fishing (carp ventrèche, matured pike-perch, catfish) and hunting (roe deer). These fine, well-balanced dishes are enhanced by sommelier Anaïs (partner of the chef), who oversees things front of house with professionalism and warmth, dispensing judicious wine recommendations." - Michelin Inspector

The newly opened fine dining establishment, where young chef Valentin blends innovation with seasonal ingredients to create a truly unforgettable dining experience, is a true masterclass in food and wine pairing. From the moment we arrived, it was clear this was no ordinary dining affair. The experience was multisensory from the very start, as we entered through a dimly lit, almost mysterious entrance infused with a smoky, woodsy aroma that instantly set the tone for an evening of sophistication. This was followed by a warm welcome of mushroom broth, served while we were treated to a view of the kitchen, where the chefs worked their magic. The sight, sounds, and scents combined to create an immersive dining experience. Additionally, the restaurant itself honors the local craft, where the use of wicker by the local artisans creates a rustic yet luxurious ambiance. The menu was packed with innovative dishes rooted in tradition. Special mention to the shallot soup, Valentin’s homage to the classic French onion soup. It packed an incredible depth of flavor while maintaining a delicate balance. Another standout was the quince dessert, which transported me back to my childhood with its nostalgic flavors—proof of the chef’s ability to evoke emotion through his creation. Everything was served smoothly, and it was beyond delicious. Additionally, It was nice to see the use of fresh herbs and produce from their own garden, adding another layer of personality and freshness to the plates. The wine pairings were equally exceptional, featuring some truly unique selections. Each wine was thoughtfully explained by Anais, making the experience even more special. Chef Valentin’s restaurant isn’t just a meal—it’s an experience. The unmatched quality of the food, the thoughtful innovation behind each dish, and the seamless integration of seasonal products make this restaurant a must-visit for any lover of fine dining. Langres is incredibly fortunate to have such a culinary visionary, and we feel even more fortunate to have experienced his creation at its birth. We can’t wait to return to see what Chef Valentin creates next. Highly recommended!

An amazing experience from the moment we passed under the bamboo tunnel to the willow-lined alcoved dining room, where we enjoyed a delicious 6-course gastronomic meal of locally sourced produce, using locally sourced cutlery, plates and other dishes, to our coffee and mignardises in the rampart gardens, overlooking the rolling countryside. I highly recommend this restaurant. It merits its Michelin star and many more awards. The town of Langres and the views from its ramparts are worth a visit!

An intimate experience with innovative dishes. Chef Valentin and Sommelière Anaïs tell their story elegantly through dishes that evoke the gardens of Clos Vauban and the forests of Haute Marne. A truly revolutionary experience in gastronomy. Will be back.

Le personnel attentionné et très professionnel, la cuisine juste et pleines de subtilité le tout dans un cadre idyllique fond du Clos Vauban un établissement d'exception qui incarne la quittance de l'excellence et du savoir-faire Français. Une expérience exceptionnelle à faire sans hésiter ! Au delà du lieu qui est juste magnifique, le personnel est toujours aux petits soins, et explique parfaitement chaque composition des plats et des vins qui les accompagnent. Quelques heures de dégustations pour voyager à travers les plats proposés. Aussi belles que bonnes, les assiettes sont un réel délice pour les yeux et les papilles ! Une expérience unique au coeur d'un restaurant d'exception. L'accueil est chaleureux et très professionnel. Tous les mets servis sont très bien expliqués et l'on ressent vraiment la philosophie du chef. La cuisine, un sans faute! Du goût du goût et encore du goût. Les plats s'enchaînent comme un ballet avec un accord mets vins recommandé par la responsable des lieux au top. L'ambiance y est très décontractée, une deco chic et sobre. Tout pour passer un moment inoubliable !

Merveilleux moment passé en ce lieu, de bout en bout la cuisine de Valentin Loison (un nom en devenir) nous a fait voyager à travers les méandres d'une gastronomie goûteuse, équilibrée avec des créations impressionnantes de raffinement, des saveurs époustouflantes. Bulle de bonheur. Longue et belle route à eux. Amateurs de gastronomie faites le détour par ce très prometteur endroit.
