"Butterfly, the scaled down and sped up version of José Andrés’ long-standing Mexican restaurant Oyamel, is the next dining spinoff at Penn Quarter’s experimental Think Food Lab. Butterfly is specifically designed to cater to food fans on the go. Its menu includes five types of tacos, four torta sandwiches, two salads, a handful of sides, and a pair of sweets. Ingredients from Oyamel, like featured meats and bolillo bread from Panorama Bakery, are used here. The restaurant uses a ready-made mole sauce and collaborates with local producers Dog Tag Bakery and Pleasant Pops for desserts to maximize productivity.
