"Driving down the miles-long road to the Chablé Maroma property, you might wonder if you’re lost, almost hitting a wild baby pig as it races across the road. But then you’re welcomed into the wellness retreat with a Mayan cleansing ritual, smoke billowing. Once you’ve set an intention with the spa’s Mayan elder, you’ll be led to the restaurant to eat. Bu’ul, Mayan for bean, was created by Jorge Vallejo of two-Michelin-star Quintonil and recently nominated for both the world’s most original wine list as well as the best-designed wine list. It’s one of the only restaurants in Mexico recognized for its wine program, helmed by in-house sommelier Michael González. The dishes at Michelin-recommended Bu’ul are a lesson in how something seemingly ordinary isn’t ordinary at all. Before meals, families across Mexico will eat beans with tortillas, and a meal at Bu’ul starts the same way: with a bread course of rich, blended beans spooned onto homemade tortillas and drizzled with a trio of salsas. Even the simplest dish here has a thousand-year history, a terroir, and a story. Continue your meal with the Charred Mamey Tartare. Tossed with escamoles and served alongside a housemade sweet bread dotted with dried fruit, it’s paired with a Schloss Johannesburg riesling, which tastes like bobbing for fresh peaches and apricots in a shockingly cold ice bath. Move onto the J2:10 Mexican cabernet sauvignon and nebbiolo blend with the duck, which is dipped into a Oaxacan chichilo negro mole. Wow, what a delightful experience! The food was truly exquisite, hitting that perfect trifecta of sweet, tangy, and salty in just the right proportions. And the drinks? Clearly crafted by a master! Their mixologist, hailing from New York, whipped up something truly special: a churrojillo – a clever twist on the classic carajillo with a hint of spice and the delightful essence of a churro. As for the service, it was impeccable. The staff were friendly, attentive, and absolutely deserving of a 5 out of 5. Highly recommend!

Bu’ul is truly a gastronomical experience. The waiters are truly experienced and have a beautiful way of explaining every ingredient in all the dishes and explaining why the chef chooses these Mexican ingredients to go with every dish. This is high end Mexican food like no other restaurant in the riviera maya. The presentation of every dish is though out and beautiful. The food is flavourful and the ingredients very much compliment each other. Glad that we were able to experience this and will definitely be coming back for more!

The hotel is lovely, quiet setting tucked into the wildlife. Unfortunately, we had an odd server who was not helpful with the menu. His jokes did not land well. The food was just OK especially for the price point. We won’t return.

Bu’ul est une véritable pépite culinaire ! Les plats sont absolument délicieux, avec des saveurs originales et parfaitement travaillées. Chaque bouchée est une découverte. Un petit détail, cependant : les noms des plats peuvent être un peu déroutants au premier abord, mais cela fait partie de l’expérience et ajoute une touche intrigante à la découverte du menu. Mention spéciale pour le dessert au chocolat, que je recommande vivement. C’est un mélange sucré-salé parfaitement équilibré, une explosion de saveurs qui conclut le repas en beauté. Si vous cherchez un restaurant qui allie créativité et qualité, Bu’ul est une adresse à ne pas manquer.
