Wonderful food by a wonderful Chef. People who do not know the nuances of sushi would not be able to fully enjoy the experience here as the Chef is crazy talented. The way he does his sushi flips are amazing, transitioning from various methods for different fishes with amazing finesse, watching him is simply a visual symphony. The dishes were all perfectly prepared, with my personal favourite being the steamed abalone served with its own liver sauce cooked to creamy perfection, almost like a French style sauce.
He seems like a shy Chef but when you start to open him up by asking him questions and showing interest in the meal, the night is transformed to one filled with laughter and good times!
Shari is not very strong as it is more on the sweeter side and not sharp. But it’s texture pairs well with fishes that he chose which are lovely.
Overall, a definite must try if your in Hokkaido and looking for some really solid Omakase.
