Cambium

"Located in the centre of the village, Cambium, which is Latin for “change” and is also the word to describe one of the outer layers of a tree trunk, is keen for guests to discover the flavours of the Aragonese Pyrenees from a different perspective. In its pleasant, rustic-style dining rooms, featuring a profusion of wood and views of both the village and its impressive surrounding mountains, choose between an à la carte option and an extensive seasonal set menu with dishes such as trout from Lanuza and IGP Aragón veal, which connect us with the culinary traditions of this part of the Alto Gállego region. An impressive array of D.O. Somontano wines completes the picture!" - Michelin Inspector

Sorry I don't get it. I mean, it's nice, the food is nice, the atmosphere and service as well. But it's overly complicated without real benefit and I actually didn't want to finish some plates even though the waiter kindly announced them to be their "star dish" (it doesn't happen to me, I was educated to finish my food). I am sure there are other good plates, but overall, the mix of "fency-ness" (tight atmosphere, need to reserve, prices) with the actual taste of what we personally ordered didn't cut it for us. We were traveling north of Spain for a week, eating in basic to fency places (some even in the same village) and we enjoyed pretty much all of them more. I mean, the Basque area has many GREAT restaurants, so if you open a super fency one, it should be better, or at least tasty the same, not just more sophisticated. I appreciate the effort and we ultimately enjoyed our time, so thank you. But I'm very sorry, next time I'd go to another place.

No terraza, just nice views from window. Good food. Wonder why this restaurant got in the michelin tables? Well the answer is in the quality of the food. We were amazed of the taste and balance of every steps in the dinner. This restaurant really deserve the prices it got, please don't hesitate to have a go!

Really nice place! Pretty views on the mountain and the village, especially if it’s snowing is specially romantic. Service is great and friendly, very helpful with her suggestions. In the pictures are Hamburgesa de Jabalí and a desert - tarta de manzana… Espectacular. We ate much more but didn’t take photos of it all… 5/5

Let me get one thing straight: I still dream about the lamb shoulder I had here. It was just perfection, the meat so succulent, falling off the bone, in its delicious juices and with a crackly-crispy skin... just wow. Service was very friendly. The jamon as a starter was a delight, the tomato could have been more flavourful but I really enjoyed the wasabi-avocado cream and cured bonito it came with. Update - 2nd visit, one year later: Having had cravings for the last year, I had to return - and the lamb shoulder is still one of the best things I have eaten. I also tried the delicious presa, and the outstanding leeks with a sauce I could have bathed in. Highly recommend the place, you really cannot miss it! 3rd visit: The restaurant, first of all, is beautiful and the service incredibly good (but it's been like this since I visited the first time three years ago). The food, especially the paletilla, has also always been incredible, and the reason I come back every year. This year, it was almost like it got even better: tartare - out of this world good. I am not sure I have eaten such a great one before. Mushrooms, especially if eaten with the egg yolk: pure comfort food in a bowl. Rodaballo: just spectacular, clearly the best I ever had. I loved how I could taste the fire, and smoke, and the sauce, the crispiness and bite of the skin... And then came the lamb shoulder: I know I love it, but this year it felt even juicier, even crispier, even better seasoned. To sum it up - I was in food bliss.

Everything was really good and the service was great. We felt here after a long hike great. The goat cheesecake is the best desert i had in years even though we do frequent good restaurants. Dont be afraid to order what sounds good because the portions aren't very big. Not small, but not huge. You'll handle them! And dont forget the goat cheesecake because it's incredible!
