There are three options for grilled skewers—lamb, beef, and chicken wings—that all get marinated in a mixture of cumin, salt, pepper, and Sichuan peppercorn before cooking over a tiny charcoal grill attached to the front of the trailer. Food arrives on metal skewers over metal trays, but you can fancy up the whole experience with a side of lamb pilaf or some grilled pineapple.
