My personal favorite is the Wagyu beef carpaccio, elevated to brilliance with black truffle and Japanese dashi vinaigrette, a flavor combination that delivers layers of umami and proves his genius. The cacio e pepe instantly transported me back to Rome, while the sweet corn ravioli, sourced locally, reminded me of summer in Boston. Every dish feels like a story that bridges tradition and creativity.
