We had a set dinner menu at Cartouches earlier this month (5 course) and it was an absolute delight. We were lucky enough to be seated right by the kitchen, and watching the chef and his sous working was incredible. You really get the sense that they care about every dish, every table. The food was delicious, plated beautifully, and unique.
I feel very fortunate to have had the opportunity to dine at a number of Michelin star restaurants, but this 'bib' will easily stand out in my memory as one of my favorites for many years to come. Service was extremely personable, every bite was exceptional. If ever I'm lucky enough to find myself back in Tolouse, I won't miss the opportunity to drop back in. You shouldn't either.
Chef, if you're reading this: thanks for the souffle - I'm still dreaming of it.
