When my husband read out loud that Caseus was not only opening a storefront again but right IN OUR HOMETOWN we practically cried in joy! Their original New Haven location was known far and wide, but my husband (then college boyfriend) and I never got a chance to go prior to their closing, which had devastated many. Thankfully, their prominent and well loved food trucks were still around, which was our only experience (and an amazing one at that!) with Caseus until now.
The location is small, take out only, and I don't think you can park in back. Besides a plethora of amazing cheese, they have an great selection or gormet and specialty items, such as pasta, honey, and chocolate, as well as anything you could want for a really nice charcuterie board.
As for the actual grilled cheeses, OH MY! SO GOOD! My husband got the classic and I opted for the french onion, but as I looked at the menu I really wanted to try a meat. When inquiring about a meat suggestion, the gentleman was very helpful and suggested bacon - good call! It was beyond delicious! Everything about both grilled cheeses was perfection. The bread to cheese ratio was on point! A common complaint I have with grilled cheeses is the bread being too thick and cutting up the roof of my mouth, but no such issues there! The sandwichs came with a side of Dijon mustard with french pickles that was also a perfect condiment addition.
Overall: AMAZING sandwiches, high end cheese and products, friendly and helpful service, all in a cute and clean shop.
I can't wait to go back and try their tomato soup!
