If you’re a grilled cheese lover, this place is an absolute must. The entire menu is dedicated to creative, cheesy perfection — and every bite delivers. I tried the classic grilled cheese (buttery and golden!), the French onion grilled cheese (incredible dipped in the tomato soup), and The Hog, which was packed with BBQ pulled pork and caramelized onions — so flavorful. The cheese pulls were unreal, the vibes were cozy, and the staff was super friendly. You can tell they care about quality and comfort food done right. Definitely one of my favorite food finds in Connecticut!

Top Grilled Cheese sandwich. If primarily making a GC sandwich one should take into account all aspects of a GC sandwich. Perfect ratio between cheese quantity and quality. Various types of cheese making a nice oooey-gooey tasty bite. Just the right thickness of sourdough bread grilled to perfection. So many times cooks burn the bread and cheese. When I try a dish from a restaurant who is known for some particular dish, for example Pizza. I will order a plain pizza just to analyze the basic dish. Multi toppings will mask the true nature of the dish. So I tried their The Classic GC sandwich. It was excellent. 5 out of 5 stars. Next time I'll add some tomato with that and perhaps a side of soup. The service was pleasant and quick. Note: There is no inside seating. There exist a few tables outside, yet not under cover. Hence weather permitting. Stop in and enjoy!!

If you are looking for a great grilled cheese at a fair price, why have you not stopped here yet? Not only do the sandwiches taste great and make anything you have cooked pale in comparison, there is a great selection of other goodies here that I have not seen anywhere else. Highly recommend this spot.

Wow, just wow. My first visit, and I loved it. Granted it is hard not to love a place that specializes in cheese, but this was a really great experience. The sandwiches were amazing. We had a Cuban, and a French Onion. They were both deliciously made with high quality ingredients. Ended up getting some snacks and cheese to take home as well. Super friendly staff who made great suggestions.

Delicious! Very happy with our grilled cheeses and soup from Caseus. We used to go to the restaurant years ago in New Haven and are happy to give them our business at there latest location. We will definitely be ordering a cheese board in the future.

Really disappointed, me and my boyfriend don’t live in the area and we were visiting my parents, heard this place was amazing and wanted to go in for some cheese. Right when we walked in we did not get greeted the woman at the counter goes “we are closing the grill now”. We weren’t even looking at the menu for the grill, but the cold case of cheese. Immediately left, the whole situation was awkward. Saw this place online but I don’t think I’ll go back. :(

I was devastated when the Caseus in New Haven closed. It was a regular stop for me and I was always on the wrong side of the state to go to the food truck other than a couple of lucky strikes. When they opened in my hometown (even though I don't live there anymore) I was stoked. A new market for them, a whole new legion of fans. I was visiting the last few weeks and had a free afternoon for once, so I finally got to go. I ordered the pesto grilled cheese and perused the shelves, picking up a few treats that spoke to me. The sandwich was deeeelicious and now I have to go back next time for more.

Small shop but incredibly busy! Solid menu, we had the Classic and a Bac-ish grilled cheese with a side of tomato sauce. It was really fresh and paired well with everything. We sat outside which is on an incline so not the most comfortable, cashier seemed to have an attitude when I asked about the menu and asked for spoons bc they were out. Other than that the inside of the shop is clean and well maintained. They support lot of different products sold by small businesses so that's always nice to see. Great food and prices, will definitely be back with friends!

"I'm sorry to ruin grilled cheese for you" No you're not! You knew exactly what would happen when I took my first bite. BAC-ISH was great. You could really taste all of the ingredients and the heat from the hot pepper and onion relish were not overwhelming where you could really enjoy the flavors. I love how the bacon is chopped and you get a piece of bacon in every bite. Well executed cheese delivery. The Garden was fresh and the house made pesto was something I never would have tried myself but would definitely eat again. It takes the traditional grilled cheese and tomato to the next level. Easy to get to, worth the drive from anywhere. Amazing service, witty humor and friendly banter. Outdoor seating and the local deli vibe make this shop an accessible must try for anyone wondering where to eat next. In addition to the amazing grilled cheese, you have artisanal cheese and cured meats. Also, a variety of jams and condiments for all your charcuterie needs.

Caseus Provisions hands down has the best tomato soup in Connecticut! It's rich and creamy, and pairs perfectly with any of their grilled cheeses. I love that the store is filled with all things charcuterie, whether you're looking to make one for you or someone else, they have everything you can think of! I tried the Classic and the Hog grilled cheeses, and that sourdough bread is quite incredible! I did wish the Hog has more onions and that they put BBQ sauce on it, but that's my take on it! The classic has 5 or 6 cheeses and they certainly don't hold back, you will get a quality, thick grilled cheese!

The absolute best grilled cheese & tomato soup can be acquired here. Seriously I crave it some days! They also have an amazing selection of cheeses and other goodies in the shop. It's takeout on the grilled cheese but I promise it stays crispy until you make it home.

Talk about delicious! Hubs and I stopped in today for a quick lunch. We met Christopher one of the owners who is super sweet - we love great customer service! We decided to go with the Classic and the Cuban. I'm gonna be honest... the classic was definitely the best grilled cheese I've ever had! It was the perfect cheese to bread ratio with a buttery crust, and let's not forget the creamy yet tangy tomato soup I got on the side for dipping. Yummo! The Cuban was really tasty as well! Next time I would probably add some type of hot pepper just to give it a little kick. We grabbed some specialty chips and a chunky brown butter chocolate chip cookie that I haven't tasted yet, but can't wait to sink my teeth into later tonight! The space was clean, cute and quaint with outdoor seating. We totally can't wait to go back and try some other others!

My first visit was last Friday with my daughter, and we ordered three sandwiches in order to try a sampling. We order the regular sandwich, the French onion and the pulled pork and they were all fantastic! Looking forward to going back soon. Keep up the great work.

A take out location for soup and grilled cheese as well as cheeses and accoutrement Their restaurant is greatly missed in New Haven but this was a great thrown back to their luscious indulgent food. Most items are seasonally made and so amazingly good. Gherkins on the side and delightful flavor explosions from all of their items. Don't miss this pop in location!!

I drove from Mystic on this rainy Saturday to try Caseus, because grilled cheese is one of my favorite foods. All the grilled cheese options looked excellent and I ordered the "Pickle Pickle". The flavor combination of sour and salty is quite balanced. The grilled cheese chef (whose name I am blocking on) is a master of his craft. The bread was crunchy and not burnt and all the cheese was perfectly melted. All the flavors and textures melded perfectly. Additionally, Natalie, who tends the shop, is an enjoyable conversationalist. It was fun talking to her whilst my sandwich was being constructed and completed. Caseus also has an excellent selection of cheeses and smoked meats for sale. They also make their own cookies. I bought two brown butter salted chocolate chip cookies to bring home. I will definitely be coming back.

Honestly, I don't go seeking grilled cheese. I just don't. Why? I'd prefer to get my calories and carbs from brunch and drinks and wings. LOL But I am SOOOO glad that some friends were going and inviting us, because these are on another level and their grilled cheese and tomato soup are allll freaking fantastic! I mean, like really. Grilled cheese is one of those things that (for me anyway) I didn't know what I was missing so I never wanted it. I tried The Hog and LOVED it, and also had The Pisano which was good, but had nothing on The Hog (IMO). Check them out if you haven't yet. If possible, go with someone so you can swap halves and try more than one kind! They also make beautiful charcuterie boards and sell whatever kind of cheese you could want! If you're GF, then popcorn and cheese may be all you can eat here, LOL. The space is small and clean with outdoor seating only. Food is cooked to order and so fresh and tasty! You can watch your sandwich being made while you wait.

I have eaten at the Caseus Food Truck a few times in the past, so when I heard they had opened a storefront in my hometown, I had to try it! The store itself is pretty cool, located on the first floor of what seems to be a two-family house on Center St. in Wallingford. This location was formerly Brunetti's Luncheonette, a well-known breakfast spot in town. At Caseus Provisions, you can purchase a variety of cheeses as well as some grocery items like crackers, cookies, jelly/jams, pasta, etc. They also have a new homemade mac & cheese which I am very excited to try! They offer a small menu of about six different grilled cheese sandwiches, as well as "build your own" toppings and their famous tomato soup. There isn't any seating inside, but they do have a few tables outside near the sidewalk where you can sit and eat. I opted for "The Classic" grilled cheese, which includes a mix of SIX different cheeses. It was so good! The bread was crispy, and the cheese was melted perfectly. It comes with a small side of mini pickles and mustard, which were very sour but good. I also ordered the tomato soup, which you MUST dunk the grilled cheese into for the full experience. Amazing combination! The service was very good! The staff (who I think were the owners) were very nice, and my order was ready in just a few minutes. I'll definitely be returning to try the mac & cheese. Caseus also still has their food truck available for catering. I would highly recommend!

INCREDIBLE!!! The sandwich was perfect, the soup was beyond delicious, and my chips were good! I got the cherry soda, which was refreshing, and I picked up an incredible dessert as well. This small sandwich spot also has a wide variety of charcuterie offerings, small gifts, and merchandise. Maybe you're stronger than me, but I bought some extra food while waiting around for my sandwich to be freshly made. Highly recommend. 10/10 you'll definitely want to check this place out.

Caseus Provisions is a food truck turned to small restaurant that specializes in cheese, charcuterie, grilled cheese, specialty foods and catering. I was reading an article promoting new and opening businesses and there grand opening was today. My kids and I traveled to taste there famous grilled cheese they serve on there food trucks. We all ordered the Classic Grilled Cheese which is a mix or Provolone, Swiss, Gruyère, Gouda, Sharp Cheddar and Munster cheese. The grilled cheese was really delicious but for me it was too much cheese but that's what a grilled cheese is all about. It had the right texture and flavors with buttery, golden, crunchy edges and the bread they used was just right to mellow with all the cheeses. The service was great and for it's grand opening there was a good flow. The staff were really nice and you can tell they take there grill cheese very seriously.

I am ecstatic that cheese masters Caseus has a brick and mortar again. They used to have a beloved place in New Haven, and have been operating out of food trucks for a while now. This time, the storefront is in Wallingford, CT, which is really having a moment food and drink-wise. The Caseus grilled cheese technique and the finished product are off the charts. For my visit, I jumped at that French Onion. They start with a blend of shedded gruyere, comte and other Swiss Cheese. They put it on top of French sourdough and they allow the cheese to get melty before they cap it with the other piece of bread. They also grilled the pre-cooked onions to get them hot again. The grilled cheese had perfect color, texture and taste. Fantastic! Caseus also sells cheese and other gourmet products. I sampled and bought a few cheeses for home, including old favorites like Aged Gruyere, Comte, Triple Cream and Roquefort. All top notch versions. Chris from Caseus also recommend a Percorino Tartufo, which was a peppery Sheep's Milk cheese with awesome truffle flavor. A new favorite for sure. I love Caseus and I'm happy to have it within driving distance from home. 5 Stars

This place is great. Such amazing customer service too. We went for cheese and grilled cheese. Cute little shop in there too. I got some jalapeño jam and my boyfriend got a nice cutting board. Chef making the grilled cheese let us sample cheese before making our selections which was so nice. Arethusa doesn't do that anymore and they used to which stinks. I bought two kinds of cheese I loved it so much. Grilled cheese was unbelievable. I didn't even know that I liked tomato soup and I bought a cup because I heard so much about it and wow was that good. I got the regular/plain grilled cheese because it sounded so good. Next time I come I want to try the Cuban. The only thing I wish is this place had seating for we had to eat in the car, so just know that if you come, there isn't anywhere to sit and parking is on the street.

If you are in Connecticut and you like cheese, especially grilled cheese, you need to go to Caseus. This is world class grilled cheese. This is a well crafted sandwich. From the fresh bread to the outstanding flavor and correct temperature of the cheese, this place pays attention to every detail. And it shows. This is a five star experience. Why? - The kind staff and owner behind the counter. Highly attentive and anxious to make your visit unique. - The outstanding flavor that is both unique and memorable. I've only had anything comparable (even close) in a café in Paris. Wallingford is much closer! I had the first item on the menu in the store (the classic I think). I'm going to promise and try every sandwich on the list. PS the invent your own sandwich looks compelling but I'll try the tried and true first. - The uncluttered store with additional excellent foods and cheeses. I bought a cookie and some bread pudding. Again, absolutely world class. I also really liked how there were tables outside, the food is served in classy little boxes that make sure the food stays warm but doesn't get soggy. Details matter. This place could have found a home in a half dozen international cities however we are lucky to have Caseus in Wallingford. I plan on making this at least a monthly stop to see what the chef/owner comes up with next. If I lived closer, it'd be more often. Summary: fantastic and simple, this place takes a great sandwich and makes it art. It's also a unique place to stop for some great cheese and unique foods with deliberate and excellent service. Go.

I don't know where else to find an as-close-to-authentic English-style grilled cheese in all of New England. I expected something delicious from all these Yelp reviews when I stopped while passing through from points south to home up north, but didn't expect to feel like I was suddenly road-tripping along the Cornish coast. So well done. I had a simple grilled onion and cheese and the only thing I would have asked for is a bit larger a side of mustard to dip, since the sandwich was so generously proportioned. Cracking lunch, wish this style of grilled cheese (perfect sourdough, perfect cheese blend, crispy and crackly, with the hugely important side of mustard or hot sauce and cornichons/pickled veg) was more common. But I haven't found it so I wish I lived closer!

This place is kind of fire! We got the regular grilled cheese and the pisano (chicken). The bread is pretty thick and the combination of cheeses in the sandwiches is pretty good. Not too much to add here, good food, good grilled cheese and you won't be disappointed.

Chris and Natalie were there the day that I went in and I could not have asked for a better conversation with two AWESOME people. So service- mark that down as amazing. Now let's talk cheese!! I had the Pisano- pulled lemon chicken with caramelized onions and cherry peppers- soooooooo gooooooooodddd!!!! Wowzers. Tell a friend to tell a friend! I also tried their Tomato Soup with a classic grilled cheese to dip and it was just like Chris said- like being home from school and watching the Price is Right kinda vibe. It's that warm blanket on a cozy fall night feeling that you want to last forever. Now- things really got crazy when I tried their Fried Egg Flavored Potato Chips! This was unlike anything I ever tasted before and these are the types of experiences that I am looking for in life! My mind didn't know how to comprehend what pure awesomeness was going on lol Try them if you see them there. Great find! Dessert Wise- Double chocolate goat cheese brownie- well- I can only say if those five words don't make you want one, I can't help you lol There is also a bread pudding that wasn't quite ready when I went- but I also hear amazing things that I will now need to return for that and the Cuban Grilled Cheese with BBQ pulled pork, ham, pickles and mustard. We have been familiar with the Crispy Melty food truck for a few years, so we were really excited when we learned that they opened a new brick-and-mortar in Wallingford! The space is definitely on the smaller side, but despite being busy, we were able to snag one of the tables outside. I was glad that there's a least a little bit of an option to dine there even though they're takeout only since we live about a half hour away. These grilled cheeses were AMAZING, possibly even better than the ones I've had from the food truck! Love the provisions offered in the shop too. We would definitely return!

When my husband read out loud that Caseus was not only opening a storefront again but right IN OUR HOMETOWN we practically cried in joy! Their original New Haven location was known far and wide, but my husband (then college boyfriend) and I never got a chance to go prior to their closing, which had devastated many. Thankfully, their prominent and well loved food trucks were still around, which was our only experience (and an amazing one at that!) with Caseus until now. The location is small, take out only, and I don't think you can park in back. Besides a plethora of amazing cheese, they have an great selection or gormet and specialty items, such as pasta, honey, and chocolate, as well as anything you could want for a really nice charcuterie board. As for the actual grilled cheeses, OH MY! SO GOOD! My husband got the classic and I opted for the french onion, but as I looked at the menu I really wanted to try a meat. When inquiring about a meat suggestion, the gentleman was very helpful and suggested bacon - good call! It was beyond delicious! Everything about both grilled cheeses was perfection. The bread to cheese ratio was on point! A common complaint I have with grilled cheeses is the bread being too thick and cutting up the roof of my mouth, but no such issues there! The sandwichs came with a side of Dijon mustard with french pickles that was also a perfect condiment addition. Overall: AMAZING sandwiches, high end cheese and products, friendly and helpful service, all in a cute and clean shop. I can't wait to go back and try their tomato soup!

Wow! What a terrific place . Our "cheese" sandwich's were outstanding. The rest of the shop was cool and well stocked with cheeses, chocolates and lots of interesting food items . Easy on off route 91. Staff friendly and welcoming.

This is our second time here and both times, the grilled cheese sandwiches have been the best! The mix of cheeses and the crisped up bread are spot on. We've had The Hog, French Onion, The Bac-Ish, a special w/short ribs, as well as the tomato soup. All delicious. One time we ordered there and one time we called in take out. Both times, our orders were ready quickly. The employees are friendly and very knowledgeable and passionate about their cheeses!! Grilled cheese sandwiches are not something I usually go out of my way for or crave but if you mention a Caseus grilled cheese, my response is pretty much Pavlovian and I will want it!! The shop/cafe is clean and it looks like they could assemble a pretty impressive gift basket or charcuterie board if you are looking for that.

My family and I happened to stop by while on the way home from a vacation. The food was delicious and 10/10. I would highly recommend if you are fan of grilled cheeses. My husband ordered a grilled cheese with lemon chicken and it was delicious as well. Looking forward to returning.

Put aside what your idea of a grilled cheese sandwich is. This place takes it to another level! So many choices that you've not even thought of. Have your choice with a wonderful bowl of Homemade Tomato Soup. Happily given to you by a knowledgeable staff. Enjoy take out or limited sidewalk tables.

Traveled from Rhode Island to check out this business. It was their opening day and it did not disappoint. I tried the classic grilled cheese which was delicious and everything a grilled cheese should be. I also checked out all of the other offerings such as cheese, honey,and charcuterie offerings. Almost forgot the olive bar. The staff was really friendly and offered samples as well as explaining the different products. I bought a fantastic Pradera Gouda Romana which I was delighted to add to my list of favorite cheeses! Can't wait to go back to try some new things in the future!

Just off the beaten path, in a small, non descript building in Wallingford, you'll find Caseus Provisions. Some of you may know the Crispy Melty food truck, or remember the original Caseus on Temple Street in New Haven. Well, they have a wonderful little store, selling grilled cheese to go, and all kind of cheese. My wife had the French Onion, and I had the Cuban. Both were wonderful. Definitely going back.
