What Is Cassava? And How to Use it for Cooking | Eater

"This Chicago shop, founded and run by Jorge Flores, focuses on cassava-based baked goods rooted in Ecuadorian traditions, such as meat-filled empanadas and cheese-flavored pan de yuca. Flores, who opened the business after returning frequently to Ecuador, built a concept around nostalgia and gluten-free appeal: roughly 95% of customers love the distinctive chewy dough while a small minority mistake its texture for undercooking, and about 20% of patrons seek it specifically because they are celiac or gluten-free. The operation uses processed cassava flour that has been rendered safe of cyanide-related toxins, and the owner prefers cassava in flour form for empanadas and breads even though he occasionally eats the boiled root." - Sylvio Martins

Chicago’s best gluten-free restaurants - Eater Chicago

"This Irving Park caterer takes celiac disease very seriously and makes its signature empanadas with cassava — a tropical plant with an edible tuberous root— root starch. They’re stuffed with fillings like Angus steak, pulled pork, roasted chicken, smoked sausage, and roasted veggies. The chewy cassava cheese rolls are terrific too. For added convenience, all items can be shipped anywhere in the country. Local ordering for pickup and delivery is available through Grubhub and Uber Eats." - Jeffy Mai

We recently placed our second empanada order! We ordered a large variety of flavors and every single one was extremely flavorful and delicious! First experience was not as great as our second. First time we did not cook them properly and the texture was wrong! Flavor was incredible but they were too chewy. Make sure to follow all instructions for cooking and they make a great meal!

I was so so excited to find a gluten free empanada! The pastry was perfect, but the filling could be better. There was a flavor within each one that I just didn’t like. For example, mushrooms overpowered the spinach dish (spinach and cheese might be a better combo) and there was a chicken empanada that was like 50% sweet potato. The steak was probably the best of the 3 because I could actually taste the protein. I will probably be back tbh because there aren’t a ton of gluten free restaurants near me, but it’s not my top 10.

THIS. IS. SO. GOOD. Holy cow, wow. Ordered some empanadas and pizzas for myself (severe gluten allergy) and friends, and my friends couldn't even tell these were gluten free. Absolutely delicious and outstanding. We ordered for pick-up and got to meet Marcos as well, who was so kind and helpful. I would 1,000% recommend all the food here!!

Honesty the empanadas are THAT GOOD. There was some confusion when I made my pick up order (honestly I think the confusion was on my end not there’s) and they didn’t have it when I got there. I called the next day and they were willing to delivery it. I wasn’t even mad because I know how good their food and desserts are and it was honestly worth the wait. If something similar happens to you, please be patient and understanding with them!!! They’re clearly very busy (rightfully so) and they will make it right! Keep it up! Will always be coming back!

My sister has celiac, and this was a perfect place to order in bulk for her weekend trip to Chicago. We snacked on these empanadas daily. They've got a wide variety of yummy flavors! I enjoyed them all, especially the chicken 😊

Oh my goodness!!!! I forgot I had celiacs! This place was amazing! My boyfriend keeps asking for me to get take out from them again but the timing keeps not working out. Definitely going to order some of their bake-at-home options next time!
