"Japanese-style sandwiches, or sandos, and snacks are exploding in popularity in Chicago during the pandemic, and now two local industry veterans with fine dining chops are leaping into the sando fray with a pop-up they hope to transform into a physical restaurant. Cat-Su Sando, a new venture from chefs Will Schlaeger (Next, Saison, Blackbird) and Shawn Clendening (Oriole, Saison, Blackbird), debuted Monday as a virtual kitchen featuring sandwiches, grilled skewers, savory Japanese pancakes, and more. Customers can choose from five sando options, including the signature Cat-Su Sando (fried pork cutlet, Cat-Su sauce, fermented jalapeno, cabbage, milk bread) and smoked fish salad sando (smoked fish, marinated ikura, celtuce, yuzu kosho, barbecue shrimp chips, milk bread). There’s also some pretty traditional kushiyaki, or grilled skewers, okonomiyaki (savory pancakes), and snacks like onigiri (stuffed rice balls) and a “Green Eggs and SPAM” musubi (smoked SPAM, green tamago, nori). They make delicious sandwiches that will melt in your mouth. Especially the chicken sandwich. Just the right amount of breading and crispiness. The pickles are also on point. All of their products with Spam are done very well. One of my new favorite sandwich spots.

Tried the Catsu sando, spicy miso chicken ramen, and both gyoza (chicken and shiitake). The toppings on the sandwich were very tasty and so was the chicken. The skewers with the ramen were soooo good, but the broth did not have any spicy notes and was a little underseasoned miso wise. The gyoza fillings were good, but the wrappers were very thick. Overall pretty dang good. Will definitely try them again.

love this spot for some good eatin noodle soups and succulent sandos. super thoughtfully prepared chicken skewers and a talented staff combines to make a harmonious experience that is good every time. i will be back and then i will be back again and then ill come back and once ive been back ill go back.
