"In Montorgueil, two mixology stars from Little Red Door have created something new for Paris: a hybrid tasting counter-bar based around ingredients and decor from French producers (even the washable wool coasters are artisanal French). For now, only the comptoir is open (the subterranean cocktail bar is expected to open this summer), and it shines. You can book a five-step seasonal drinks tasting that includes bar snacks (non-alcoholic options available) and lasts 90 minutes. The more interesting option is to go for the six-course discovery menu and add cocktails to get a full picture of how knockout and creative the pairings are. Depending on the season, you may throw back a raw oyster in black pepper oil, topped with kiwi granita, paired with an apple Sgroppino, or seasonal asparagus arranged between aged Comté in a savory tart, served with a hay soda, grass spirit, and yuzu saké cocktail—all from the comfort of one of twelve seats at the massive blue-green enamel counter." - Lindsey Tramuta
