Chancho Tortilleria delivers a bold and delicious take on traditional Mexican carnitas. The panza (pork belly) was especially impressive, rich, well-seasoned, and tender, with just enough crispness to keep it interesting. The meat is flavorful without being greasy, and the accompaniments, including salsas and pickled vegetables, are bright, balanced, and clearly made with care. Drinks were also a highlight, offering fresh, well-paired options that elevate the meal.
The birria tacos were another standout, packed with deep, savory flavor and just the right amount of spice. The meat was fall-apart tender, and the consommé for dipping was rich and satisfying without being overly salty, a detail many places miss. It's a dish worth returning for.
However, the plating could use some refinement. The tortillas are fanned out on the tray, overlapping slightly, with the carnitas piled directly over them. This looks rustic and generous, but it makes the tacos difficult to assemble without tearing. Serving the tortillas and meat separately would allow diners to build tacos at their own pace and to their own preference.
Despite the minor plating issue, Chancho’s food is standout. With a few tweaks to presentation, it could be exceptional.
