7 Restaurants To Explore The Regional Cuisines Of China

"Teochew cuisine is known for its clean, refined flavours that showcase the freshness of its ingredients. Chao Ting is a new fast-casual concept on Amoy Street that specialises in Teochew pao fan, a classic, simple comfort food of rice in light broth, served with sliced fish or king prawn. Five hours on the stove renders prawns, pork, chicken and fish bones into a flavourful soup in which toothsome cooked rice is simmered and then topped with crispy rice, fried egg floss and fragrant shallots." - Rachel Tan

King Grouper’s fish soup has always been my go-to, but Chao Ting offers a completely different twist. I ordered dual fish. Their rich, thick broth carries a delightful shrimp aroma, while crispy rice is added just before serving—so every bite has a satisfying crunch that softens in the soup. Pair it with their golden, crunchy fried fish skin, and you’ve got a match made in comfort-food heaven. An absolute must-try! Outdoor table, no aircon.

I had the pleasure of trying the fish soup at Chao Ting Teochew Pao Fan, and it was nothing short of spectacular! From the first sip, I was captivated by the delicate yet robust flavors of the broth. It was perfectly seasoned, allowing the freshness of the fish to shine through. The fish itself was incredibly tender and cooked to perfection, with a melt-in-your-mouth quality that I haven’t experienced elsewhere. The addition of fresh herbs and ingredients elevated the dish even further, making each bowl a delightful experience. The service was excellent, with staff who were friendly and attentive, ensuring we had everything we needed for a fantastic meal. Chao Ting has truly mastered the art of Teochew cuisine, and their fish soup is a must-try for anyone who appreciates a well-crafted dish. I can't wait to return for another bowl! Highly recommended!

their soup was good but their slice fish wasn’t the marinated smooth type. the fried fish had a slide “ammonia-like” taste inside. didn’t finish the fried fish as it was weird.

For the overall experience, The harmony of flavors is incredible. The fragrance is intoxicating! You can smell the depth of flavor from across the table. The fish is perfectly crispy and adds such wonderful texture to the dish. This is exactly how pao fan should taste - authentic and heartwarming.

We had the Premium Seafood, Fresh Prawn, and Duo Fish ‘Pao Fan’, complemented by the addition of savoury fried egg floss. The soup is rich but not overpowering and there’s a pleasant natural sweetness. It’s a perfect comforting food for me especially in this rainy weather! To elevate the experience, I’ve added a side dish with crispy elements - Fried Fish Skin! The perfect add on for a satisfying crunch to balance the tender rice and flavorful broth.

My food picture may look rather unappetising but this has always been my all time favourite paofan (rice in fish soup) !!! I have been eating this since those days they were in Simpang Bedok. But the price has been increasing since they have moved to the CBD area. A bowl of fried fish costs about 11 dollars now. There is a mix of fried rice and normal rice soaked in the fish soup. The egg floss soaked in the fish soup makes the soup really fragrant! Fried fish or sliced fish are in big pieces. The portion is definitely filling for one! Long lines expected during weekday lunch hour! I suggest Saturday lunch time would be better.

Service a bit slow as only one person was cooking. The soup broth was tasty, fish slices were fresh but personally disliked the fried fish as the batter tasted a bit bitter to me. Still the preferred pao fan in the vicinity though relatively more pricey!

Long queue at lunch time. Ordered via app for pick up. Takeaway packaging v solid - everything was packed separately so it does not get soggy. Fish was very fresh and firm to bite. Soup is flavourful and not overly salty. Yummy. For the price, there were 4 or 5 slices of fish only. Other than that, nice pao fan.
