"This honey-coloured stone castle is the HQ of a gastronomic restaurant helmed by Julien Martin. Produce from the South of France takes the limelight, distinctively crafted with formal simplicity and flanked by concentrated jus and seasonings, such as a subtle sprinkling of pepper (pigeon, for example, acquires a whole new dimension thanks to an onion miso with smoked paprika and Sarawak pepper). The chef also enjoys adding a fresh kick to dishes, particularly those presented in a trilogy, such as wild Mediterranean shrimp cooked simply in a spicy shellfish jus, as a tartare boosted with finger lime and as a velvety sorbet. What an amazing experience! The feeling of a five star hotel with the flavour of a welcoming Chateau in the Provence region. The staff is amazing, friendly and knowledgeable, the restaurant has a Michelin star and is well deserved. You feel at home but you also feel like a cherished guest. The two owners, Christophe Tailleur et Philippe Huber are present and always ready to help and make your stay as pleasant as possible. Charming persons! A must have experience!

Perfect Stay at Chateau de Collias Our stay at Chateau de Collias was exceptional. The rooms were comfortable and spotless, offering spectacular views. Beautiful Chateau Hotel in a quiet town, an amazing find we somehow stumbled upon. Dinner was as delicious as it was beautiful. Service was perfect. Only just 15minutes off the highway it added on last unexpected surprise on an otherwise ordinary drive home from our holiday.

Old world charm with the comforts of modern times. Nestled in the mountains of the south of France tucked away from the busy city streets. It’s a perfect get away for rest and relaxation. The rooms are warm and inviting. Complimentary snacks, fruit and pastries await you. The food is made to order. The best croissants in the world. Phillips and Christoph, the owners live here and you can feel the care that they put into making this their home and welcoming us as their guests.

Awesome place, the staff is always there to help and listening to your needs. The room was huge, very nicely decorated, great attention given to our dog as well. The restaurant was exceptional as well, both quality and presentation were great. Definitely one of the best Chateaux we've ever been.

Experience could not have been more delightful. The castle has been tastefully restored, and the rooms are filled with wonderful little details, and incredibly charming. The young, but experienced chef, produces an inventive menu that delighted our palette. And over all wonderful experience with delicious food, a lovely environment, friendly service and gorgeous rooms.

Chateau de Collias is a historic gem brought back to life by two owners with a passion for conservation and the arts. Every architectural and decorative piece has been carefuly thought out and blends artfully with one another. The park and it's gorgeous landscape is out of this world charming. Last but not least the food experience is unique. Chef Julien creatively blends flavors and textures into a delicous meal from start to finish. Hats off to everyone at Chateau de Collias for creating this incredible experience!
