Ordered a whole boneless wagyu ribeye loin from here a few months ago that was advertised as "8+ on the Japanese Marbling Score" on their website. It's definitely not that high of a grade, though the marbling actually didn't look that bad - similar to what you typically see sold as prime grade at Costco. I ended up cutting them into steaks and vacuum sealing them. However, every steak I've had (even the one I had on the day of delivery) was pretty dry and not tender at all. I didn't think much of it when I had it the first day cause I just did a quick pan sear, but for every steak thereafter to taste just as dry as the day I received it was disappointing (sous vide, dry brine, etc didn't make a difference). There is barely any juice in the bag even after hours of sous vide, and the meat tasted exactly like how a choice grade would taste. Roughly came out to ~$23/lb, which is quite a bit more than I would have paid at my local butcher or at Costco for better steaks. Would not buy it again!

Absolutely delicious brisket! Also, the brisket was well proportioned. A nice thick flat to go along with a nice sized point. Highly recommended!
