"While eating ramen, salt water from the noodles gradually dilutes the soup. You can experience this for yourself. First, pour a little of the soup into a separate bowl. Finish the noodles in the original bowl, then try sipping the reserved soup—the difference in taste will amaze you. The harmony created by a bowl of ramen goes beyond taste. The slurping of noodles forms a duet with the classical music in the background. The joy of ramen knows no bounds: ‘mugen’." - Michelin Inspector

We made a reservation and we were very well acomodated. We tried the shoyu and shio ramen both delicious and full of umami. The egg was a little more curated for my taste. But the broth, noodles and chashu were incredible. They suggest you take some part of the broth to taste in the end, and it’s true the soup changes flavour during the all experience. Empty bowl in the end.

A highly-rated ramen shop around five minutes from Ebie station or 10 minutes from Noda station. There were only counter seats, with their consistent Michelin Bib Gourmand plaques on display. I ordered their special niboshi soba for 1600 yen and second bowl of chuuka soba for 600 yen. They don’t do large servings, just second bowls. The bowl is quite pricey, but trust me it’s worth it. The noodles were very silky. The chashu did the harden up over time, and as far as niboshi style ramen goes, this was the clearest I’ve eaten so far as there were no sediments at the bottom when I finished the bowl. Overall an easy to take meal. They didn’t give me the full experience however with the separate small bowl for cooling down the stuff so I have to deduct points for that. I recommend having the niboshi over the chuuka soba at is has more flavor packed.

Very tasty chicken based shoyu- arrived a bit before 11 am on a Thursday - had reserved slot on tablecheck but everyone there got in. English menu and guide to vending machine exist

Exquisite tasting broth and impeccable service at this 'chuuka soba' ramen shop. Staff provide guidance on how best to taste their soup and ramen, quality was top notch.

What a bowl of Ramen! Everything is perfect. The presentation, the broth, the noodles, and the pork is succulent and very flavorful. Well worth every Yen¥!

Small classy ramen joint with seating for about 10-15 people. The noodles and shoyu broth were the best I've ever had. The pork was a bit tough and had chewy fat. The service was excellent with 3 attractive Japanese women being the only workers there. The atmosphere was nice with classy music playing in a quiet setting.

A beautiful experience and incredible ramen. Definitely worth going out of your way to visit. Be sure to follow the instructions on how to eat the ramen so you can experience the changing flavors of the soup. Every part of the food was amazing, all the way from the soup to the toppings. It's nice that they have an option where you can try an additional flavor of ramen with a mini bowl for only 600 yen.

Yelp
this was the first ever full on meal my bf and i had when we got off the shinkansen and arrived in osaka -- honestly it's true when they say to avoid popular food spots and to just walk in/ stumble upon a place randomly... it's up on my list for sure and still my bf's favorite by far a nice fellow burmese waiter too lol
