Florence’s First Chef Residency: Martino di Napoli Rampolla on Food, Art, and Community

"A go-to of mine for its local, seasonal produce and those iconic two or three dishes that never leave the menu, all delivered with the nice spirit of the owners." - Laura Rysman

"Although the cuisine at this restaurant is influenced by Asian concepts, the young Korean female chef uses many Tuscan ingredients in her skilfully prepared dishes which have a real individual flavour and are often inspired by Japanese cuisine (such as the gyoza noodles). The extensive menu features numerous small plates, while the prints on the wall and the wooden trays lined up on the counter give the intimate dining room an Asian feel. Guests are required to book in advance." - Michelin Inspector

Delightful Tuscan-Japanese fusion meal at Cibleo today. We were ready for a change from pure Italian after being here a few weeks and Cibleo did not disappoint. From the warm welcome, to an introduction to sake through our multicourse tasting menu and a great dessert with a caramel soy topping everyone in our party enjoyed the experience. Each dish was a tasty surprise. Excellent, professional service. Lovely calm and quiet dining experience. Highly recommended it.

Highly recommend the tasting menu and experience here. We enjoyed sitting at the bar to watch the chefs. High quality ingredients and good flavors. Excellent service and suggest making a reservation. Unique mix of Japanese and Tuscan flavors. Outdoor seating also available.

Lovely and filling 7 course tasting menu. Each dish is prepared with utmost care and we happy left the restaurant with a full belly. The ambiance was great too. Would definitely recommend. Early December 2025 a weekday night - online booking was available on the same day, but the restaurant was already full at 7:30 for its first round of customers :)

What a fantastic evening! I was here alone and had dinner at the bar. You’re immediately made to feel comfortable. Enjoyed 7 delicious courses, each with its own explosion of flavors. Highly recommended: add the Gyozas to your menu. There’s an excellent selection of great Sake! Tip: order the No. 315. Compliments to the staff, who are also super friendly. Gr. Luuk

After watching Tucci in Italy and realizing Florence was on our itinerary, we knew we had to try Cibleo – Tortelli e Ravioli. As a huge fan of Asian cuisine, the idea of an Asian-Tuscan fusion spot in the heart of Florence was too intriguing to pass up. Every dish was crafted with intention and creativity—combinations I never would have imagined, yet they worked beautifully. The standout for me was the pork belly tacos. They had just the right amount of heat and were incredibly well balanced. We also opted to add the bao buns to our course, which were equally fantastic—pillowy soft and packed with flavor. We were lucky enough to sit at the bar, right in front of the chef, who walked us through each dish as it was prepared. It turned a great meal into a truly memorable experience. Amazing food, thoughtful fusion, and a personal touch—definitely a highlight of our trip.

From the beginning till the end of the delicious food session everything was absolutely perfect. Each dish is well thought out by the Japanese chef, who knows everything about both the Japanese cuisine and the Italian cuisine, making perfect fusion dishes. Absolutely recommended and we will come back here again!

A unique and exceptional experience. We had heard about the other Cibreo restaurants, and this wound up being our favorite meal in Tuscany (and one of our favorite ever). Truly unique flavors and outstanding drinks, too (including some sake they brought us to try on the house). No, it’s not a traditional Tuscan meal, but the flavors are remarkable, it clearly still has a local influence, and the overall experience and service are special. A memorable evening.

Cute and cozy place. Food unique but flavours are not fully developed. Too much salt in some dishes for my taste. At this price point, I expected more refinement to be honest. But we still had a good time. Chef and staff were kind and welcoming.
