Love Collins! To call this place "classy" is like saying Taylor Swift has a few fans. Collins really is a step above. Elegantly furnished, airy ambiance, it has the feel of a social room built within palace walls that serve the socially relevant of Noble family members. The Steinway piano is also a very nice touch.
I won't touch on the cocktails here because I need more than a one-drink reference, but the one Old Fashioned I did have came with the quintessential giant ice block. Can't wait to come back for more and review further.
They have a limited tapas menu, but I MUST draw your attention to the shortrib plate. 3 scrumptious bites of shortribs on a bed of whipped potato.... We not only ordered seconds, but also 3rd and 4th servings. I can't remember the name of it, but they also have a tasty mushroom pastry, and I was honestly happy NOT to share it.
We also ordered their version of a charcuterie plate, which was a small 3-plate tower of fruits, cheeses, and meats, but to be honest, was pretty lacking. They need to work on their pairing and abundance. The setting just didn't work. Yes, I get the European style of presentation (I lived in Paris and London for a decade), but it doesn't work here because it just looks pretentious, and we didn't even finish everything.
The tuna tartare is decent, nothing worth mentioning.
I had a great bartender (think his name was Alex), who was formerly of Resorts World. The servers need a bit of work. They were very sweet, but very slow. They really need to beef up the training here to merit a full 5-stars.
I'll definitely be back. Very memorable first-impression, and very Insta-worthy.
