2 Days in Paris: Authentic Bistros and Hidden Gems Locals Love

"It looks like a bistro, it feels like a bistro (with some gussied-up decor), but Chef Baptiste Borderie brings a more modern flair to Colvert through his work with sauces, flavor pairings and textures. Of course, given the restaurant’s name — “colvert” is French for “mallard” — the menu leans heavily on meat and game. “You have the codes of the bistro here, but we’ve tried to update them,” says Borderie. “We have all the classics but we’ve lightened them, modernized them with newer techniques and influences from our travels.” However, while making classics lighter, he and his team have also preserved the generosity one expects from a bistro meal. A classic leek vinaigrette recipe was refreshed with the earthy flavors of raw champignons de Paris (button mushrooms) and cooked trompette de la mort mushrooms, plus toasted hazelnuts and fried onions for added texture. The vol-au-vent was served with ris de veau (sweetbreads) and seasonal root vegetables, dressed in a Comté cheese sauce. And if you’re lucky, dessert might be a riff on the classic clafouti, prepared with poached plums instead of sour cherries and topped with a scoop of cardamom-almond ice cream." - Lindsey Tramuta

Where to Dine Near Notre-Dame: 12 Must-Try Paris Restaurants

"Recently reopened with a new concept and chef, the airy Colvert bistro in Saint‑Germain‑des‑Prés gives French classics a contemporary, gastronomic spin—think compressed and candied potatoes with caramelized onion juice and summer truffle—offered via a weekly-changing, three-course prix‑fixe that showcases Top Chef alum Arnaud Baptiste’s talents and is paired with a thoughtfully curated wine list from both legendary producers and surprising newcomers." - Lane Nieset

"Revealed by the French Top Chef TV show, Arnaud Baptiste and his flamboyant moustache and numerous tattoos, is something of a media darling. He has set up shop in a vintage street corner bistro (banquettes, bistro chairs, tightly packed tables, bare stone walls, cement tiled floor and a counter which now serves standing customers) in the somewhat touristy, but nonetheless picturesque 6th district of Paris. Arnaud happily crafts market-fresh, bistronomic fare. The seasonal menu is suitably concise and hits the spot every time: confit of cod, hollandaise sauce, courgettes and absinthe gel or figs, served roasted, raw and in pickles with a fig sorbet and ice cream." - Michelin Inspector

I discovered this restaurant through a food blogger’s good review. In October, I had a pleasure trying their 5-course tasting menu. Overall, the meal was superb and the chef and staffs were very attentive, offering detailed and engaging descriptions of each dish. 1. Scallops carpaccio: a refreshing start with the sauce. 2. Leeks vinaigrette: one of my favorites. The combination of leeks, pork belly and sauce was harmonious and the texture was very soft. 3. Wooden Scent Arctic char fish: another standout. The fish paired beautifully with the pear, mushrooms, and sauce, creating a delightfully fragrant dish. 4. Roasted wild mallard duck: Though bolder in flavor than the other courses, the figs and creamy polenta provided a perfect counterpoint. 5. Pink praline tart: a traditional French dessert. The sweetness of the praline was balanced by the sour ice cream and green apple sauce. I would recommend those you to add this fascinating place in your itinerary. I certainly look forward to returning in my next Paris visit!

Went here tonight with a large group for a corporate dinner. There were two vegans in the party and the chef made some delicious vegan risotto. The starter salad was great. The wine, champagne, service, etc. The rest of the party enjoyed their food. Hands down recommend this restaurant whether you’re a vegetarian or not. Thank you to the amazing staff.

Colvert delivered an unforgettable experience for our family reunion dinner, accommodating our table of 13 with absolute grace and ease. From the moment we arrived, the staff made us feel like honored guests—welcoming, attentive, and incredibly professional. It’s rare to find a restaurant in the heart of Paris that can manage a large group so seamlessly, yet Colvert did it without missing a beat. The service was beyond exceptional. Our host was a true five-star professional—warm, intuitive, and always one step ahead. Drinks were refilled before we had to ask, dietary preferences were remembered without reminders, and every course was served with impeccable timing. What could have easily been a chaotic dinner turned into a joyful, relaxed evening where every family member felt seen and cared for. And of course, the food lived up to the high standard set by the service. Every dish was beautifully presented and deeply satisfying, capturing that refined yet soulful Parisian flavor. Colvert created more than a meal for us—it gave our family a moment we’ll remember for years. If you’re planning a special gathering in Paris, this place is an absolute gem.

The course is set up due to chef’s recommendation. We had 5 dishes. The food was very small in plate. You can have something in advance or afterwards. Cod fish is so good and should try. Thick soup was also nice. But the duck was so sticky and thick. Too sticky for me. But the tastes are great.

Each visit is with surprises and plenty of good memories. The chef truly knows how to make beautiful dish with the most fresh seasonal ingredients. I hope to come back for dinner soon. The carpaccio was like a great dance in the mouth, each bite was delightful. The pavlova was the highlight of the joy, I have never tasted anything like this. It brings the dish to the high level. The lemony anise sorbet with hazelnut butter, fresh peach purée and the citron cream.. wow ! How can it be so magical !! I cannot wait for the next visit !

Overall: solid spot tucked within the chamring streets of Paris, good food, authentic, small restaurant, limited wait staff, expect to spend some time here. Food: Food and desert were pretty good. I wouldn’t recommend the cheese plate, but everything was perfect. Order the cherry pie thing, that was fire. Service: there were only 2 people running the whole floor, so service was naturally slow but you could tell they were doing their best. Atmosphere: I liked the vibe of this restaurant, it was small but cozy and had a good feel to it. It was packed with tables though so might not be everyone’s vibe. Even though it was tight it was Not too loud so you will be able to carry a conversation just fine. The best part was there was no obnoxious music playing like in America.

Amazing staff, friendly and super welcoming! The food is different experience, I took the 5 course blind menu experience recommended by the chef and it was beyond expectations, they were super nice when I told them I don’t eat duck and the chef made a special risotto for me. Dessert was okay but everything else was perfect

I was super disappointed with my recent dinner experience at Colvert. I had made a legitimate booking through The Fork app using my honestly earned Yums points. However, upon arrival, we were rudely turned away by the manager because my sister had also made a separate booking. Instead of simply combining the bookings or explaining the issue in a professional manner, the manager chose to deny us proper service, effectively turning down two paying customers. What made it worse was how it was handled: the manager was rude, dismissive, and even accused us of trying to cheat the system. WTH?! I’ve worked in this industry for a long time, and I have never encountered such poor service or insulting behavior. We had originally come with the intention of ordering two full tasting menus. But after the way we were treated, we were so turned off that we ended up ordering the absolute minimum from the à la carte menu, just enough to use the booking and get out of there. As for the food, it was okay. But honestly, after that kind of treatment, it was hard to enjoy anything about the experience.

Yelp
Best dinner in Paris! Truly exceptional. With Michelin-star-level cuisine set in a cozy, unpretentious atmosphere, this restaurant perfectly balances elegance and warmth. We did not have a reservation, but were warmly welcomed by the host and seated at the bar, which felt like the best spot in the house. Front-row seats to a beautifully orchestrated service in an intimate dining room. The sommelier was incredible--his wine recommendations were thoughtful and spot-on, enhancing each course with perfect pairings. The staff's kindness and attentiveness added to the welcoming feel, making us feel at home from the start. Each dish was not only visually stunning but also a creative journey of flavors. You can sense the great care and artistry poured into each plate, which made for a meal that was as satisfying to the eyes as it was to the palate. For an extraordinary Parisian dining experience that feels both elevated and accessible, Colvert is a true find. Highly recommended! Thank you, Colvert for an amazing dinner. Grateful. I would fly back to Paris just to eat at Colvert.

Yelp
Was on a semi-solo trip this past week, and the 1st night I was alone while my friend was traveling elsewhere, I solicited a recommendation from my hotel, requesting something "casual, good for dining solo, and where they are able to speak a degree of English." He pointed me to Le Colvert a block down. Even so, I did a quick drive-by to glance at the menu...then kept moving with my day, still unsure if I should go. On the way back to my hotel, I stopped by again. It was at this point that Greg (the manager?) said hello and greeted me, so warmly. As an American I felt intimidated on this first trip to Europe but he helped ease my apprehension with even this simple gesture of kindness. I told him I'd be back, he encouraged me to make a reservation with him since it would get busy...and boy was he right. When I returned I was seated and presented with the best service, from multiple staff members. He sat me outside on the side and it was perfection, from people watching to just being present during my solo meal. And the FOOD...I can't even explain how good it was. I ordered the "crispy risotto with prawns and creamy bisque" and it was literal perfection. I hear "bisque" and I assume it will be heavy, Not the case here. Each bite was heaven; this is one of the places where the food looks as good as it tastes. Just the prawns themselves were absolute beauties on the plate. A 5-star experience at a bistro no less (aren't they supposed to be casual??) so worth every penny and then some. Wine was delectable and dessert...my god. I went with Greg's recommendation of "chocolate ganache and hazelnut praline" (he was so confident in how it was the right choice which I loved,) and it was literally the best dessert I've had in my life, All taste sensations activated...pure heaven in every bite. 10/10 would recommend. One of the best food experiences I had in Paris.

Yelp
This cute modern bistro was recommended by our Parisian friends and did not disappoint. Food was interesting and reasonably priced. Waiters warmed up to us as we spoke French and appreciated the creativity on the plate. We'll return for sure.

Yelp
The food is exceptional, the service is a travesty. We had 9:30pm reservation within minutes of being seated we were asked to order our entire meal before being offered any drinks. We obliged and ordered cocktails as well and asked to order wine. After ordering wine the cocktails and the first course arrived. At the end of the first course, our wine was served ... the main came as soon as the entree was cleared. Then we waited an hour for dessert. A further 30min later the staff were drinking and texting on their phones and we had to walk up to ask for the bill. Very good food but the evening was ruined by very poor service.

Yelp
It was so cute when we first found it that we booked a table for the next night. Liked the meal so much we went back the following night! Delicious food with a hand-cut beef tartare that blew me away! Desserts weren't quite of same Wow factor but the after dinner drink RATAFIA from a venerable Champagne house was memorable. Great sommelier. I prefer to speak French but you can easily dine entirely in English--staff all bilingual. Cute ambiance.

Yelp
So good we came here twice during our 3ish day stay in Paris. Literally the best meal of my life. What's so magical about this place is everything that makes French food a culinary experience. If you get a little bit of everything on your plate in every forkful, you have the perfect bite. The flavors dance together to create almost a spiritual experience. I couldn't believe my taste buds! The same was true for both my and my Husband's meal selections. The staff here are very friendly and accommodating, and I loved how delighted they were when they recognized us when we came back the second time. This is quintessential French food, and definitely not to be missed. Not to mention, this place is a hell of a bang for your buck. We are forever grateful to our hotel front desk person for this recommendation. Wondering where the Michelin star(s) are for this place. No, seriously, where are they?

Yelp
We went for a dinner during the summer heat wave of 2022. They had two large windows open and there was a little breeze. I'd be lying if I said it wasn't still a little hot. The food was all delicious. We had the duck nuggets, wild boar starter, the sea bream and a few other dishes. Everyone was very happy with the food. I would definitely go back, more so if it were not 90+ degrees outside.

Yelp
Delicious!! Had both fish dishes sea bream with blanc beurre with leeks. The blanc beurre really made this dish! Seared swordfish was a cold dish on a bed of Napa cabbage and the mango really brightened it up! Well thought out dishes with attribute that balanced each other out. Would love to come back whenever I get the chance!

Yelp

Yelp
Their hospitality was incredible being an American in Paris. We had their beef tartare and that was my best dish of my whole trip. The owners are busy at work but never too busy to assist you in wine picks, what entrees they recommend or to fill up water glasses. Le Colvert is a place I'd recommend.
