"Concept Kitchen is just that — a concept. Operated out of a cargo container next to End of Days Distillery, it offers a near-constant rotation of different pop-ups throughout the year. Recent cuisines include Vietnamese, Hawaiian barbecue, empanadas, Peruvian, Costa Rican, and barbecue. The Lao pop-up Sap Lai has been so popular that it’s now a regular presence on most Wednesday evenings. Although the service is quick, the flavors of their dishes will remind you of a meal that an Italian grandmother lovingly prepared. One of their must-try dishes is the Eggplant Parmesan. Even if you had reservations about eggplant, their rendition is a game changer. It has a crispy exterior, melt-in-your-mouth interior, and a robust flavor profile that is an absolute must-experience. My husband tried it and loved it. I enjoyed their Chicken Parmesan, which is layered with prosciutto, adding a savory depth often missing in more traditional recipes. The dish is flavorful and satisfying, and the freshly baked bread accompanying it provides an extra layer of texture and freshness. They also served the sauce on the side, a nice touch to adjust the saucy and savory balance to your liking. Their Caesar Salad is perfectly dressed and crispy, and you should leave some room for their homemade Rainbow Cookies. These cookies are a labor of love, evident in their soft texture and the sweet, layered flavors that make them an irresistible conclusion to any meal. The service was outstanding. This is a food truck, so not a lot of atmosphere. I had the tacos. The beef was in one big piece and you couldn't chew through it, so it all came out in one bite. Good flavor, just hard to eat.
