"Situated in an impressive setting just a few steps from the Plaza Mayor, where head chef Carlos Hernández del Río conjures up contemporary cuisine that is both technical and in tune with its local surroundings. His focus is on showcasing ingredients from Salamanca province (Consentido has its own organic vegetable garden and vineyards, and produces cocktails and drinks made from ingredients they harvest themselves) as well as championing recipes from the region of Castille. The à la carte, which includes half-plate options and surprising dishes such as grilled spring onions from the banks of the River Tormes with oregano and pistachio, is complemented by an interesting tasting menu entitled “The Pillars of our Surroundings” (9 plates, expandable with several smaller ones). For a more full-on dining experience, why not eat at the counter with the kitchen behind it to watch the different cooking processes in action in front of you. Always our best dining experience in Salamanca, we always make time to return when we visit the city. The food is always delicious, creative and thoughtful. Wines are always a great match. We always receive amazing service and, although we visit only a few times a year (we live abroad), they remember us and our preferences. The restaurant has 2 soles and should have been Michelin starred years ago.

Food is good for not worth paying London prices for it (in Salamanca…). We were also “pressured” to order more and ended up with the impression we didn’t need so many plates. Worth noting that the menu mentions a minimum consumption of 50€/person.

Haute cuisine with traditional roots and local produce. You can either choose the tasting menu or order individual dishes. We had the tasting menu (€70 per person), which consists of 18 "snacks" and up to 4 optional add-ons. Every single dish was great. Our favorites were the chorizo éclaire, the mushroom broth, the garlic soup and the grilled potato with Iberian carbonara (the last one was an optional add-on for €10 per person). The cuisine is creative and elaborate, yet firmly rooted in the local gastronomy—a perfect blend of tradition and experimentation. Despite its two Soles Repsol, the atmosphere is pleasantly relaxed.

Spectacular food, wine, and ambiance. Highly recommend the tasting menu with wine pairing. Just outside of Plaza Mayor and much better than any restaurant inside the Plaza.

My husband and I share a birthday and we celebrated at ConSentido. The service, value, food, everything was incredible. We ordered the tasting menu. Definitely do that the first time you go. Yes, it was expensive but not for the level of food or compared to similar restaurants in the US.

Tasting menu was very good. We particularly liked how much of it was from Salamanca and the surrounding area, and how several courses used different parts of the same animal.
