"Situated in an impressive setting just a few steps from the Plaza Mayor, where head chef Carlos Hernández del Río conjures up contemporary cuisine that is both technical and in tune with its local surroundings. His focus is on showcasing ingredients from Salamanca province (Consentido has its own organic vegetable garden and vineyards, and produces cocktails and drinks made from ingredients they harvest themselves) as well as championing recipes from the region of Castille. The à la carte, which includes half-plate options and surprising dishes such as grilled spring onions from the banks of the River Tormes with oregano and pistachio, is complemented by an interesting tasting menu entitled “The Pillars of our Surroundings” (9 plates, expandable with several smaller ones). For a more full-on dining experience, why not eat at the counter with the kitchen behind it to watch the different cooking processes in action in front of you.
