Although they're closing, I did want to save this memory in the hopes they one day reopen, even if they're not planning on it. Wishing them the best in future endeavors and to continue spreading their cookie joy.
Tried Coping Cookies a while back ago and was surprised when I saw them on Yelp. I was in a cookie phase and trying out all the spots with friends, so definitely had some notes set aside. Their cookies were on the softer side like cake. Enjoyed their punny flavors.
Congrats to their official storefront! Lovely, thick cookies but definitely not good for health, especially being so hard to put down. You're kinda obligated to finish the job once you start you know? The other downside is they're a bit heftier in price, not totally unreasonable given specialty flavors and size, but something to be aware of. Size and price remind me of Levain Bakery.
Cake It Easy - ingredients "red velvet, white chocolate" listed. Red velvet, pretty self explanatory. Instead of cake form, it's a soft cookie. Instead of cream cheese frosting, white chocolate chips are used and they're creamy! While a nice spin to try, I prefer cakes for the delicate texture. In a cookie form, you lose the velvety feel in favor of compactness.
PB Practice - ingredients "cocoa, peanut butter, semi-sweet chips, PB chips" listed. Chocolate peanut butter as a fairly original flavor, I didn't think it was exceptional but it was consistent. Safe choice for a more classic taste.
No S'more - ingredients "graham, marshmallow, Hershey's" listed. Looking at this cookie, it's evident that the taste would be enhanced through baking (or reheating). The Hershey's filling and marshmallow topping would become richer. If not fresh, it's still a good cookie but has much more potential. With a pop-up, heating is a hard option, but maybe with a storefront they'd be willing to help!
Carrot 'Bout It - ingredients "carrot cake, white chocolate, cream cheese flavored frosting" listed. Another cake spinoff, but I really enjoyed this one more than the red velvet. Creamy white chocolate chips plus a cream cheese frosting help push towards a more realistic expectation of cake. Really, it's a portable carrot cake.
Strawberry Feels - ingredients "white cake, strawberries, white chocolate" listed. This was likely the least memorable. I think I recall it being overly soft and cakey. Personally would skip this with a big reason being all other options were better.
Basic Chip - ingredients "graham, chocolate chips" listed. Rounding it all out, the best way to compare cookie spots is through the OG chocolate chip. It's pretty trendy to add some sea salt to draw out contrasting flavors and they do that here as well. It's a solid chocolate chip, but I do think the unique flavors here are the biggest draw and would recommend them over original options if visiting.
