People were lining up for the famous tripe sandwich, and it was totally worth the wait! The warm, juicy strips with their chili sauce and slight stiff bun were such a great combo. I was honestly blown away. It is the best signature dish I tried in Florence.

Tucked away in one corner of the Central Food Market in Florence, Da Nerbone is a bit of a culinary institution, serving up delicious paninos. They offer the Tuscan speciality of Lampredotto (tripe/cow stomach), or if you're less adventurous, the roast beef and the roast pork variants, slow cooked in a flavourful, rich broth until the meat is tender and fall-apart consistency. They ladle a spoonful of that fragrant broth on both sides of a crusty Italian bread, pile on generous amounts of the roast meat of your choice, add a few secret sauces and then pour another ladle of the broth on top of the assembled sandwich, which the Italian bread drinks in with delight, allowing a softer, more luxuriant bite. The queues are long but move quick; their paninos are the best sellers but they also serve big plates of their roast beef, pork and tripe by themselves too. Supremely filling, ridiculously affordable for a city bustling with tourists (€5.50 for the roast pork, €6 for the roast beef, and one was enough to knock out a big eater like me.) Well worth your time and money.

Best sandwich I’ve ever had. It was so good that I made a special trip back to Florence on another visit to Italy just to have it again. The key to ordering is to ask for the roast beef and be served by the experienced sandwich artist with the ponytail. He takes his time crafting the sandwich, carefully removing some of the bread from the top bun before dipping it in the broth - surprisingly, one of the most important steps. If you have it any other way, you’re missing out on the full magic. Ask for extra red (spicy) and green (not spicy) sauce on the side.

Nice sandwiches- definitely worth trying. This place is super busy but I didn’t queue for long. They are mostly cash only so please be aware. I would say it’s better to just take away but you could dine in. I definitely recommend it. I had lampredotto sandwich.

Classic tuscan dish. This place has been in the business for a long time. They open daily. We came back twice because once was not enough. It is a must dish you need to try. The place is inside Mercato Central of Florence, on ground floor.

Quick, cheap and delicious. We visited at opening (8:30 on a Saturday) and had about ten people in line in front of us. In the morning the only thing is available is the Lampredotto, so those in our party that did not want to try it (one wanted their turkey and the other roast beef) went elsewhere. You line up to pay, your receipt is put on a tray, and then you slide down the line while the panino are prepared. Worth the twenty minutes of line standing in our opinion. Glad they accepted both cash and card. Not the only Lampredotto we had while in Florence and we thought Pollini was better only because their bread seemed fresher and not as rock hard. Would absolutely return on our future visits to Firenze.

Their Lampredotto Panino is an iconic Florentine dish. Lampredotto is part of the cow’s stomach and comparable to tripe. Its juices oozed out with each bite. The star of the sandwich was their chili oil, which had the perfect amount of spice and elevated the dish. Mercato Centrale is a great spot to try a vast array of Italian dishes and is a must-see attraction during your time in Florence.

Da Nerbone is located inside Mercato Centrale. You won't miss it because it's the sandwich place in the corner with a long line. We got there on a Tuesday at around 1:15 and waited about 15 minutes. Since this was our first stop in the market and we wanted to try other things, we only got one panini to share. We had the classic lampredotto sandwich (spicy). Immediately after the first bite, we wished we had ordered two. The tripe was so tender and the sauce was really flavorful. It comes smeared with a green and red (spicy) sauce, which I'm sure was probably some sort of herb (parsley?) and chili sauce. Whatever it was, it really made the sandwich. It's a messy sandwich, but worth the trouble. Just make sure you have plenty of napkins and some wet wipes on hand for the aftermath.

There was a decent size line that took about 10ish mins around 12:15am on a Saturday. The meat from Lampredotto sandwich (€5) was melt in your mouth. Worth trying because it's unique and local, but would not say it's a staple that I would go back for. Also wanted to try the roast beef plate (€9). It came with slices of bread (which you can ask for more for free). I didn't, as the bread is pretty tough and dry. It works well as a vehicle to soak up the oil/meat juice/soup, but not as a stand alone. There is some seating on the side. They take card.

I had a friend recommend this place and claim it was the best things she's ever tasted, so I had to come by! By chance, we stumbled upon this in the Mercato Centrale and just followed wherever the line wrapped around. I was so excited to try this. The menu is all in Italian, but honestly everything on the menu is pretty good. They're known for their lampredotto, as it is a typical Florentine dish. It may not be for faint hearted, but I think it's very worth trying. A lampredotto is essentially the stomach / triple of a cattle. The meat is braised with a bunch of veggies and makes it super tender and flavorful. The bread is sliced in half and hollowed out, so the juices can be absorbed but the sandwich itself won't be too dense. Everything comes together with a salsa verde and hot sauce. Everything coming together is a flavor bomb in your mouth. My friend and I enjoyed this meal so much, we had to come back again! Unfortunately their hours are only until 3pm so you would def have to swing by here before the lunch hours are over. The sandwiches are a little cheaper than the plates, because I think the portion for the plates are a little bigger. Both are pretty good!

Si... Oui.. Yes.. Expect to wait in line or be loud to get your order. This eatery locates on the first floor of the mercato centrale where the locals go to buy their groceries and dried goods. Don't be scared of the ingredients if you come from a country (eg. The US) where eating offal is not common. Actually, it took me a full 24 hours after reading about it to "man up" to give it a try. Holy smoke, it was so good. So tender and juicy and not gross at all. For 5 euro, you get their Lampredotto sandwich. You can also get a place if you don't want a sandwich. Give it a try before you decide that you don't like it.

We're so glad we decided to squeeze in a visit on our last morning in Florence to try their famous tripe (lampredotto) sandwich. This place is located on the perimeter inside the mercato centrale. We showed up around 10am and there was no line at all. They do have english speaking staff here although their menu is all in Italian. We ordered at the counter and waited just a few minutes for the sandwich to be made in front of us. There's seating available right in front of their counter so you can easily sit and enjoy your meal after ordering. Da Nerbone's is the only lampredotto sandwich we were able to try during our visit to Florence, so we arent sure how it compares to the others, but I will say that this has made my list of things that I would ask for as my death row meal. I regret ordering one to share with my husband and wish I had gotten us each our own hahaha. Highly recommend their lampredotto sandwich. Can't wait to go back and have it again.

They prefer cash but we didn't have any so they took our credit card. Customer service was straight to the point. Taking our order and recommendations. The lamprodotto sandwich was good. A bit strong for me so I didn't finish it but the sauce they put on them are good. My husband porchetta sandwich was bland and dry. Maybe more sauce for his would have helped. There was no wait but this is the off-season.

During our tour of the Central Market, stopped by this iconic spot for a quick lunch meal. The lines are usually long, the ordering process a bit chaotic, but things actually moved along fairly fast and we were seated with our food in no time. Had heard such good things about the lamprodotto sandwich (i.e., shaved and slow cooked tripe), but my wife chickened out at the last minute and we did the porchetta sandwich and a risotto dish instead. Both items were really delicious, but I see why folks say the bread can be a bit dry, so the extra meat juices are critical to making the sandwiches easier to eat. Glad we tried, but not sure we'll be returning to this spot.

I had had this place bookmarked for years but never went because I didn't think my wife would be into it. On our most recent trip, we had our lunch plans messed up and needed something in or near Mercato Centrale, and then we noticed that they had pasta and other non-tripe dishes. We were both really glad it worked out like this. The pasta was excellent -- not top tier, but really, really enjoyable. The lampredotto sandwich was even better -- I get why people from all over come here for this. But to me the star was actually the porchetta sandwich, which was just perfect. In the states, a messy, liquidy sandwich like this would fall apart after a couple bites, but this is the kind of thing Tuscan bread was made for. The insanely crunch bread, perfect porchetta, and whatever else they put on it just worked so incredibly well together. This sandwich will have to be on my todo list next time we're in Florence.

On the first floor of central market by the main entrance. Get it for lunch, but be prepared to wait in a long line and bring cash. Get the lampredotto sandwich with the salsa verde and the boiled beef mixed plate. We came here twice. The first time I thought I got the stracotto but I was mistaken. The stracotto is a healthier version of a sloppy Joe. It was fine but not amazing like the boiled beef mixed plate. There is seating next to the stall or go upstairs to the food hall where it is more lively.

Da Nerbone specializes in lampredotto which sounds unappetizing, but definitely worth getting here! Lampredotto is considered a traditional Florentine dish made of tripe, the cow stomach lining. The lampredetto name is derived from lamprey eels which has a resemblance to the tripe meat. For this dish, they cook it in broth with tomato, onion, parsley and onion until the meat is velvety smooth. While there is an option to have this as a sandwich, I decided I just wanted to enjoy it as a soup. The person prepping the dish picked out several pieces of tripe to slice up before drowning it with the broth. In addition, they gave two sauces, one was like salsa and the other was like chimichurri. Getting that little extra spice from the salsa with the brightness of the chimchurri really adds something to the meat!! It was the one dish I left Florence thinking I had gotten once more~! While there are plenty of other places at the Mercato Centrale that now offer the lampredetto, it is worth waiting to get it from Da Nerbone! Please note the hours! Only open in the morning to lunch hours. The service was pretty fast and efficient! Overall, Da Nerbone is worth getting for the lampredotto to get the full Florence experience.

This spot is a must stop when visiting Mercato Centrale. There will be debates about who has the best Lampredotto but for sure Da Nerbone has earned their place on the top/best list. They stay busy so that should be an indication. There was a line around 1:30 on a Thursday but it moved quickly. They do offer pasta and salads. That said, its all about the Lampredotto but not to be overlooked are the Bollino (boiled, juicy, fatty tender beef sandwich), and Stracotto (beef cheek stew sandwich) to name a few. Ordered the Lampredotto and it was excellent! The broth that the Tripe has been cooked in is soaked up by the bread which gives it the just right soft texture. So rich, saucy and the Tripe is so tender. Paired it with a Greek Salad and house red wine. Perfect! Service is friendly, that said, have your order ready as this is how they keep the queue under control. Don't miss this Florence gem that's been around since the 1800s!

Da Nerbone is housed in Florence's Central Market and is well known for its Panino con Lampredotto. This basically translates to tripe sandwich. My wife and I quickly found the stall which unsurprising had a long line to order. We waited about half an hour and found some community seating nearby after we got our food. OMG! The sandwich was phenomenal! Hearty bread was filled with melt in your mouth flavorful juicy tripe. This could have been the best tripe I have ever had. We also ordered the pasta of the day: Tagliatelle alla Boscaiola. This pasta also super delicious! Savory pasta was covered in a creamy mushroom sauce and mixed with briny black olives. Da Nerbone is a must visit.

Located inside Mercato Centrale, Da Nerbone is a fantastic lunch spot. Long line but it moved fast. I tried the lampredotto and porchetta sandwiches, as well as a veggie grain salad. The porchetta was absolutely perfect, though I also loved the tripe!

If you love tripe, you must try the lampredetto, a well-known tripe sandwich, ​and Florentine specialty. It's a popular snack you can get from street vendors all over Florence, but you won't find it anywhere in the San Francisco Bay Area. At least I haven't seen it, and I'd be one of the first to find it​ because I absolutely LOVE tripe! I'm always up for a dish of tripe, whether it be in Mexican menudo, Chinese black bean sauce or in an Italian tomato-based​ sauce. If you're averse​ to tripe or offals, stay away from this place. Consider yourself forewarned. However, if you love tripe and offals as much as I do, put on your running shoes and run to this place now! I specifically came here for the lampredotto because Da Nerbone has been around since 1872. It was one of the first vendors to come into the ​Mercato Centrale, where they currently remain today. My instincts lead me in the right direction. There were huge lines every time I came by. The tripe was EXCELLENT! It's essentially boiled in a broth, sliced and placed in between bread with a dollop of a chimichurri-like sauce. There was too much bread for me, so I literally tossed the bread and just ate the tripe. So delicious! So moist! I'm guessing that the chimichurri-like sauce was intended to help tame the flavor of the tripe, but there was so little that it didn't seem to make a difference in that sense. Not a problem for me at all though. Just be sure that you like tripe​ because you will definitely taste the essence of the tripe. You can also get other things here, like a Florentine-style tripe dish, which seemed to be popular, but looked a bit soupier than I prefer in a Florentine-style preparation. My only regret was only coming here only once. The lampredotto is definitely on my radar for my next visit to Florence, and wherever else I can find it. If you come here, have one for me, please!

Tiny place pumping out a lot of good looking food. Staff speak English and are friendly. There is a small seating area, but they put the sandwiches in plastic bags so you can eat it walking without making a mess. Tripe was excellent.

I heard about Da Nerbone and the lampredotto sandwich so when I was nearby, I had to try it, especially since I was hungry at 9am. There were only a couple of people in line and I ordered one lampredotto sandwich to go. The sandwich was prepared in front of me. The tripe was soft, a little fatty, and a bit salty. The green and red sauces added more flavor to sandwich, a little bit of garlic and spice. The sandwich cost 4.50 euros, which was an affordable meal/snack. I shared this sandwich with my bf, and he liked it. I think it would have too been much of the same flavor and texture for me to eat a whole sandwich.

If you visit the central market, eventually you'll stumble across a really long line. We did, and saw people walking off with plates of delicious looking & smelling food. We vowed to return for lunch to see what all fuss was about. So here's the deal - Nerbone serves really good, really cheap food. I'd liken it to ordering a cheesesteak in Philly - there's a system, no ones going to explain it to you, but if you hold up the line or expect hugs and kisses...well - that's not going to happen. So if you want a sandwich (many people do, they're just €3.50) you tell the man at the register and he gives you a ticket. You slide on down, give it to the sandwich man in exchange for your food. If you don't want that, there's a small list of plates - I opted for a veg risotto which was just lovely, a large amount and something like €5. The Mister had rare sliced beef and mashed potatoes - all of this along with a carafe of wine was less than €20. And the mashed potatoes were OUT OF THIS WORLD good. The line moves fast - partly because they aren't going to take to explain things to you. When you're done eating, the guy in the corner stall nearby (#201) has the best prices in the market for dried porcinis and he'll vacuum pack them for you. You're welcome.

I would come back to Florence just for this sandwich. It's that's good. I stayed in Florence for 5 days and came back to this stall 3 times. That's something. I tried a few different place too but nothing hit like this one. The lampredotto is so soft and buttery. Like butterryyyy. The bread soak up all the juice and goodness and made it perfect bite every time. I will go back to the state and dream about this every night. Mostly coz not sure if I can find something like this again. This will def give me a reason to visit Florence again.

Located in Florence's Mercato Centrale, Nerbone is a classic institution nearly a century-and-a-half old, dishing out panini sandwiches, pastas, and other prepared dishes from metal trays. Everything on the handwritten menu was cheap (nothing more than 8 Euros) and was simply delicious! One classic Florentine dish to try is Lampredotto, made from the fourth stomach of a cow--sounds strange, but this cut of meat was so tender and delicious, stewed in tomatoes/onions, and served on a crusty roll. My favorite part was the hot chili sauce that was layered on the meat mixture, which gave the Panino con Lampredotto an amazing spicy kick! Next, I tried a plate of Peposo con Funghi, a Tuscan stew made of hearty chunks of beef with sliced porcini mushrooms in a tomato-based sauce. The chunks of beef were so tender, and the mushrooms had plenty of umami flavor. Finally, I got a side of broccoli all'olio, which was nothing more than broccoli cooked down to a soft, tender mixture with olive oil. This was a nice side dish to round out the meal, but the Lampredotto is the thing worth coming for!

Da Nerbone is a classic joint to stop by in Florence. Located inside the Mercato Centrale, it's been around since 1872 so they must be doing something right. We stopped by for lunch and there was a huge line already. Don't worry because the line moves quickly. Make sure someone grabs the limited amount of seating while you order the food. I ordered the roast beef sandwich, as they had run out of the porchetta. The roast beef was slow cooked and thinly sliced. The meat was tender and the juices from the meat soaked the bread. The bread was crispy and fresh. You could tell the bread is freshly baked every day. I'm usually not a fan of tripe, but Italy seriously made me reconsider my decision. My mother ordered the tripe sandwich and it looked absolutely delicious. From what I understand, they are known for the tripe sandwich so I would suggest you try it. For 6-8 euros for each sandwich, this place was a steal!

9.10.16: Da Nerbone was all over blogs and thought alright lets get some TRIPE! I didn't know what else was good there so unfortunately for us we got the beef sandwich as well. It wasn't bad but I felt we should have gotten their other dishes instead. So just a tip, try something else besides their beef, it was super dry to us. I got the tripe in a soup instead of sandwich, sandwich may have been a better choice as it's the same bread and the bread is super duper hard. Service is quick and easy. Located in Central Market, great stop for breakfast. =)

Inside the central market stall. Nice to visit and everyone is so friendly. This stall is similar to "Katz in NY", brisket and tripes on a bun. Love their sauces especially the spicy one, it is so fragrant of the chili pepper. Italian know how to get their spices right.

Super worth the hype. My husband and I don't even like tripe, but we decided that we had to get it since they were known for it. We got one beef sandwich and one tripe one. Surprisingly, hubs liked the tripe one more...which worked out, because I definitely liked the beef one more lol. The trip was super tendor, completely unlike what we are used to in Asian cuisine. It was very very delicious, and we were glad that we were able to try it out. They also have a seating area where you can just sit down, relax, and eat...which is definitely an oddity in Italy but very welcome since hubs had gigantic blisters on his feet from walking :(

this is quite possibly my favorite street food. The beef is seasoned to perfection and the sauces take this sandwich over the top. the meat is so tender and juicy and the sauce is spicy. The line is always long but it's worth the wait. This is a must if you're in Florence and visiting the indoor market.

Be sure to visit this eatery on the first floor of Mercato Centrale -- it's delicious! This is where I was introduced to the world of boiled beef, and I'm glad it finally happened. Boiled beef is delicious! We ordered a boiled beef sandwich and a porchetta (pork) sandwich for €5 each. The porchetta was a little bit dry but turned out to have decent flavor, but the boiled beef sandwich was the star of the show. It came with a spicy (and a little sweet) red sauce which added another layer of depth. Very tasty, and a great snack!

We made a special stop in the CentralMmarket to see our friends at Da Nerbone. We have fond memories of eating Bistecca alla Fiorentina in their restaurant on the Oltrarno and in Greve in Chianti. It is one of the oldest stalls in the market and crowds still line up to enjoy their hot boiled beef and lampredotto. They offer seating to enjoy your food.

It took me 3 tries to get my panino bollito (boiled beef) sandwich from this spot. It was so worth it. I suffered the smirk and asked for both sauces because I couldn't choose between the garlic one and the pepper one. The meat was amazing. It is like a cross between a perfect pot roast and pulled pork in texture and very juicy. Meat drippings were rolling down our wrists and we had to convince ourselves not to get a second on the same day. The bread is a bit sturdy but good flavor and holds up well to the filling. Now to explain the 3 tries: this place does not open at 7 despite what the internet says. We got there a few minutes before 10 and there was no line. We previously tried at 8 and they were not helping people yet. I think they start cooking at 7. Also, this spot is on the ground floor in the back of the mercato, not where all the branded stalls are upstairs. I wish I had knows there were more hidden legit spots downstairs earlier. Third time today was the charm and I will aim for another one before I leave this lovely cit

Had the tripe sandwich. Asked for a mix of beef and tripe but they don't do that so I dove in and tried it out. For breakfast. It was really good. Super tender unlike the chewy texture of tripe in Asian food. The bread in Italy has been amazing and the pesto and spicy sauce gave it some extra flavor. Could have used more of the spicy sauce but that's the American in me. For 6euros it was a nice filling breakfast to give me energy for my walk around Florence.

Love this stand in the Central market (aka San Lorenzo market). Locals and tourists queue up to buy their inexpensive and delicious food! I stopped by on a cold day and enjoyed the pasta of the day (a conchigliette shell-shaped pasta with ragu). There is an informal row of tables and chairs where you can carry your sandwich, plate of food, glass of wine/other beverage. The staff are a big happy family who seem to have worked there for years. There is even mural next to the tables with the faces of some of these men in it! I turned and looked in the mural and turned my head to see that same face behind the counter. What's great about Nerbone is that they serve delicious food that is quite inexpensive with all the joy and passion you expect from Italian cooks who love food and want to serve it to you. It feels like you are part of this big Italian family...and I love that!

Panino con lampredotto: 'nuff said. This stand is located in Mercato Centrale on the first floor, really close to one of the entrances. This place is popular among locals and some tourists that know about it and most likely you will have to wait in line for lunch. They have their own seating section or you can eat on the side and watch them make other people's food. I read some reviews prior to my visit here saying they had the best panino & lampredotto in Florence. For 3.5 euros, it is a MUST try! The lampredotto was so juicy, and you can watch them take it out of the broth, slice it up, place it on the bread, and smother it in their green and red sauce that make it a little spicy. Holy geezus it is heaven. It was really filling to the point where if I had any more of the sandwich I would probably yack. I may just have to come back here before I leave! They also have panino con trippa fiorentina and some pasta dishes. Lampredotto may not be for everyone, but it is worth a try!

Get the TRIPE! I went here twice while I was in Florence for 3 days since I stayed right around the corner. It is tucked away in the corner of the markets on the main floor not upstairs. You'll walk by all the butcher stands and grocery stands before you find the hidden gem. Can't say I've ever had a tripe sandwich. First time we got there around 9 am and I was expecting a long line but there was only a handful of people. I was amazed by the tender texture of the tripe, the sauces and kick, which go very well with the crunchiness of the bread. Everything just worked. Got it a 2nd time before we were leaving. Yelp says they open at 7 AM. It was 8 and the lights were still off and they were just starting to get settled. There was already a line waiting for them to open. They definitely take their time here and don't care about anyone. They'll keep talking to their friends while there is a line of people. The menu shows multiple things but they basically sell stomach (tripe) or meat? Just go with the stomach, you won't regret it. Just don't expect great customer service. They barely speak English too.

Da Nerbone was one of the top places on my list for all the food I wanted to try in Florence. My husband and I stopped by here twice during our trip to Florence. We had the boiled beef sandwich and the lampredotto sandwich.The bread wasn't as fresh the second time we went, but overall the food were delicious. The sandwiches were simple but so tasty! It was very affordable too. The sandwiches are served in the morning, and they start serving more lunch dishes around noon. There was a line every time we went, but it moved pretty fast. I hope to go back to Florence and stop by Da Nerbone again!

The tripe sandwich with tomato is out of this world!!! It is so tender and just melts in your mouth. The bread is a little harder than I would like, but the delicious tripe makes up for it! My husband hates tripe and he LOVED this sandwich! Just goes to show you how delicious it is! The lines are long but it moves fast! It's very fast paced here, so don't expect someone to explain the menu to you! Just take a look at what you want and order it! (I can't imagine anything out of this kitchen tasting bad! Everything looked awesome) You sit wherever you can find a seat, or just bring the sandwich to go. This place definitely has a "hawker" like feel to it being in the market with good prices and delicious food! I ate here everyday of my trip! It is an absolute MUST GO to when in Florence. You will not be disappointed.

What can I say about this amazing little stand inside the Central Market, it is simply the best. I've been coming here to eat a quick meal since 2005 and I am never disappointed. The service is friendly and fast, even with the long lines that start rounding the corner if you arrive past 1pm. If you come to eat here with another person, have someone stand in line and the other go scope out the menu, that way you already know what you want to order before you get to the register. It will help you speed things up. Each day, they switch up the menu, so it's never boring even if you feel like returning the very next day. Things that I love to order when they have it in season: Pasta al ragù (don't expect a very heavy red meat sauce, it's more of a simple meat sauce no tomatoes), Polpettone (large sliced meatballs in a red sauce), Tacchino ripieno (stuffed turkey with a nice olive oil and rosemary sauce), Carciofi sott'olio (artichokes in an olive oil sauce) and we can't forget their various sandwiches. They serve the sandwiches even before they start lunch, lunch usually begins around noon, but you can always order a lampredotto sandwich or a boiled meat sandwich on a nice toasty bun. The prices for the primi (first course) on average are around €4-5 and the secondi (second course, usually meat) are around €6-7. The best food will be gone if you arrive late (they close up around 2pm), so get there early to grab a seat and eat a fast lunch!

Sandwiches only before 12pm. They close at 2pm so beside to get here before then. Located on the first floor. Got the lampredotto (tripe) and bolitto (beef) sandwiches. Both 3.5euro each. Great tasting sandwiches with a green sauce and made better if you make it spicy. For the uninitiated, tripe may be an acquired taste and you should opt for the bolitto; however, I'd urge you to try it because it is so soft delicious. Lots of other options here as well, including salad and pasta. Menu changes daily I believe.

UPDATE: Someone who appears to be associated with the business created an account just to taunt me about my review and said to "enjoy the experience or stay home". Unprofessional to the max. Eat this sandwich upstairs for a better experience. I was excited to try this place when I first visited Florence. We ordered the tripe sandwich and boiled beef at 4 Euros each. You have to order and pay first at the counter, but this was very unclear (no signs). Worst of all, the old man who served us was very rude to the Asian tourists yelling at them to "speak up!" He looked in my direction so I said "one lamprodetto and.." to which he scolded me for not being patient and spoke a flurry of Italian, obviously talking badly about us. How the hell was I supposed to know how this crappy system works? The sandwiches were okay, but this sandwich nazi left a very bad taste in my mouth. The bread was a bit stale. You can get these sandwiches upstairs with kinder (and at least more respectful) service which I highly recommend you do.

Tripe plate or tripe sandwich is a must while at San Lorenzo market in Florence. Extremely popular and so lines will be long, and finding a table can be a challenge. Your patience will be rewarded as the meat well seasoned and delicious. Pieces of meat and buttery tripe blend together to create something truly special. This might have been one of my favorite meals while traveling Italy. Its a take away counter so hard to deal with for families. Also, the sandwich takes additional time vs. the plate because they have to cut the bread and and prepare it for you. Eat away friend, 5 stars!

My favorite meal of all of Italy. And the cheapest. Of course I had the lampredotto. I had it as a sandwich which I washed down with a moretti. It was so good I went back for seconds. But I got a plate instead, half lampredotto and half trippa de florentine which was from a different part of the cow stomach. They were both amazing but I personally prefer the lampredotto. And now I search for it in nyc. Who shall join and help me.

After all the trattorias and osterias, it was nice to have a change in scenery. Da Nerbone lived up to the hype. Traditional Florentine street food while not for everybody was the perfect fix for me. Cow stomach sandwich, tripe stew and boiled beef brisket plate tasted like anything but Italian food. In fact reminded me a lot of Chinese 牛杂, which is various cow organs (tripe, stomach and honeycomb). This is the only restaurant/food that I distinctively remember and craze since leaving Florence.

You cannot come to Florence without trying Da Nerbone. I wrote an essay on Da Nerbone for my study abroad class about Italian food. Da Nerbone celebrates the recently revived trend of "poor people's food". They serve classic sandwiches and pastas, for a great price. The stall is as old as Mercato Centrale itself, and still attracts many regulars. The line is long but moves quickly so take a look at the menu first to decide. There are a few seats at the end and tables nearby, but you can also walk and eat while you enjoy the rest of what Mercato Centrale has to offer. If you are adventurous, try the classic lampredotto sandwich. It's tripe - the stomach of the cow. Delicious! If you can't stomach that (sorry, had to say it), try the panino con bollito, which is a boiled meat sandwich that is dipped quickly into a boiling vat of water before being served. Both go great with the green parsley sauce, which has a bit of a kick so wash it down with a soda or some Tuscan wine!

So so good.. soft, melt-in-your-mouth meat... not sure what cut it is .. come early so you don't have to wait long. It's a counter at the end of the market. Look for the place where large number of people hang around. Don't expect fancy service.
