Daiboku Ramen Review - Campus - Austin - The Infatuation

"Just like a good song or latte flavor, a bowl of ramen should fit your mood, the season, and the weather. And while a lot of people associate ramen with rainy days, we’ve found it’s just as great in triple-digit temps or breezy fall afternoons. Daiboku Ramen is a ramen shop just north of the , where you can choose your own noodle adventure.  Daiboku is from the same team behind —a spot we really like—but unlike its sister restaurant with a hyper-focus on chicken-and-pork paitan broth, Daiboku’s menu is all over the place (in the best possible way). Sure, you can get a similar, creamy chicken broth here in the form of spicy, very spicy, or very very spicy miso ramen. But you can also get a light and delicate bowl of smoked chicken shoyu ramen with chicken thighs, or give up subtlety altogether and get the miso jirokei bowl topped with flaming hot cheetos, american cheese, and extra pork fat. There’s even a vegan version of the miso and shoyu bowls, so your meat-free friends don’t have to resort to filling up on white rice and Japanese pickles. And since this is right by UT, the drinks are priced with student budgets in mind, with a few house cocktails, sake, beer, and wine.  There’s a ramen bar inside with a half-dozen seats where you can pop in for a quick meal between classes or between meetings, but there are also a handful of long wooden tables spread around a fairly large dining room decorated with dim lanterns and hanging plants. It’s dark and sleek inside—it’s easy to forget that you’re sitting in a small strip mall restaurant between a bookstore and a Juiceland just a few blocks from UT.  Maybe you like listening to Summer Breeze in December, maybe you prefer your pumpkin spice lattes in the heat, and maybe you just want a choice on what you want to eat and when you want to eat it. You can go a lot of directions at Daiboku Ramen, and we’ve yet to find a bad one.  " - Nicolai McCrary

Austin Restaurant Sazan Ramen Opens New Restaurant Daiboku in West Campus - Eater Austin

"Austin Japanese restaurant Sazan Ramen is opening its new restaurant in the West Campus neighborhood this week. Daiboku will open at 609 West 29th Street starting on Wednesday, May 17. The new restaurant will include both omakase and casual counter services. For the former, the varying five-course menu will include two different kinds of ramen and a variety of dishes with optional beverage pairings. This will be served at the 10-seat ramen bar. It’s $39 for the food menu, with additional pricing for beverage pairings to come. Then there’s the casual counter-service menu, which will focus on shoyu and miso-style ramens and other Japanese dishes. This includes smoked chicken shoyu ramen and spicy miso ramen with pork shoulder chashu and a habanero-lime slaw. There’s also a bar stocked with Japanese whiskey, sakes, beer, and wine. The physical space includes that ramen bar plus family-style tables. Initially, the restaurant will run with limited hours and menu in the evenings from 5 to 10 p.m. The omakase service will start later on Friday, June 16, with booking information to come later. I love it so much!! There is a ramen here for every mood, and they’re ALL amazing and worth trying. My go to is the spicy miso, super hot! I love how you can still distinguish every flavor despite the amount of heat you request. I could eat it every day. My second favorite is the jiro. This bowl is a bit heavier because the noodles and broth are thicker. When I’m hungry af or hungover, this bowl sets me straight. smoked chicken shoyu is pure class. If you want a lighter option, this one is for you. Just like Sazan, the wings are amazing— Daiboku’s are juicier and lighter on the spice. Love coming here to sip on a one cup and eat the best ramen in Austin. Well done, chefs!

Daiboku had a pretty relaxed, casual vibe. Lot of space and comfortable seating. And parking was available with an issue. We had the chicken Ramen with spice bomb. It wasn't very hot even with the spice bomb. Overall, the taste was good but wasn't mind-blowing. They have a limited sake selection, but I liked the grain sake I had. Strong yet refreshing. This is kind of self service place. You place the order and get a number for your order. Food came out pretty quickly.

We went for the creamy duck ramen we heard about so much. It comes with three different proteins on top and each is deliciously tender. The noodles had a delicious consistency and great slurpiness. All around, a great ramen option for the neighborhood.

They were able to accommodate our large party which was great. Food was good. My ramen had a nice flavor but was quite rich. I asked for some vinegar but they didn’t have any. They did have this dry spice on the table that you could add which was good and helped some - just felt like it was missing some balance of flavors and acid. I got the daiboku miso jirokei. Edamame was good. Server was very nice. Explained the menu well. Definitely seemed like maybe they misplaced our ticket because I notice everyone else around us who ordered after us getting food before us so it took like 45 min from sitting down to getting our food which wasn’t ideal, but the waiter came over and apologized multiple times for the delay but I wish I would’ve asked why. Overall good spot, close to campus. Clean. Would order something else next time but good option that seems easier to get right into compared to other spots in town.

I came here during lunch on a weekday. I was the only customer. The seating area and atmosphere is very nice. I got the Daiboku Miso Jirokei with extra bean sprouts and fresh garlic for $14.50 (add-ons were free). The portion was HUGE. The broth was overly thick and bland. I do not recommend this ramen. Maybe the other dishes are better quality.

This restaurant is what ready-to-wear is to haute couture. The couture parent is Sazan and they’ve done an excellent job in the simple powerful delivery of three types of ramen mainly due to two things. 1st is the koshu which is not found in Austin and 2nd are the noodles made by hand in San Francisco to specs and shipped weekly to this locale. The canteen like atmosphere is fine for the local UT students who frequent the place as well as for quick casual dining. I had a variety of sake cold, fruity and dry that was smooth and paired well with the smoked chicken (full flavored thick juicy pieces)shoyu ramen I ordered. A bowl will put you back less than $17.00. Definitely worth it. I also had the slightly spicy and tangy pickled cucumbers. Not so traditional but so what. Delicious indeed.

As a person who like to eat ramen, I think the ramen here is not the best but ok. I wish the flavors could be richer, and the meat could be more flavorful. Otherwise, Daiboku has a great location since it's quite close to campus. The prices are not crazy. The atmosphere in the restaurant is very nice as well.

Understand that the term "delicious" is subjective. However, the ramen soup base here really needs to be reevaluated. Starts with the service and Atmosphere, these are no doubt some of the best you can experience. We had the chicken wings as appetizers, 4/5! It is when the ramen was served... The first bite of ramen is always the soup and "plain" is the first word that hits me. Regarding the ingredients with the price, a lot of competitors have increased the protein amount to suit the Texan's taste, this is something to consider. It is the kind of situation where you can still take another bite and say "Meh, we paid already, and it tastes ok." and continue eating... They serve alcohol here, so people who come here at night might be careless about the broth from the ramen. However, the lunch group customer visitation may just stay at this rate. It is a 3-month-old restaurant! There is still a lot of room to improve, and this review is my humble opinion. Cheer up we'll be back again, and we wish to leave y'all 5 stars soon! :)
