How Dan the Baker Grew Into One of Chicago’s Buzziest Bakeries | Eater Chicago

"A small bakery operation that grew out of pandemic home baking and a popular Instagram presence, known for loaves of sourdough plus trays of butter-forward croissants, sweet and savory Danish, and kouign-amann filled with seasonal jam. Orders are taken by direct message and fulfilled via weekend pre-order pickups at a hotel café, daily citywide deliveries, and seven wholesale accounts; the business moves thousands of croissants and pastries weekly and frequently rotates offerings to showcase seasonal ingredients (examples include pumpkin cruffins and strawberry-and-cream tarts made with farm fruit). The founder photographs products himself on an iPhone, hires a compact team as demand grows, and aims eventually for a robust wholesale operation with a small, cozy retail counter where customers can watch pastry production." - Sam Nelson

there are a few pastry shops in the world that people have begun to talk about, and this one earned its spot on the list for sure. something that I believe people have become accustomed to as a higher level of pastry like Dan the Baker does and as you could see in these pictures, I tried almost everything and right out of the gate. It’s the balance that will get you. it’s not just the intense flavors but the balance between them a lot of times things are just too much but not here and you get to taste every little component to each one of these fantastic items. It doesn’t matter what you get you can’t lose so just go in and try stuff and if you’ve been here before, and you’ve been sticking to the same thing, definitely venture out. Great service and worth hanging out in line.

Update: I originally said it was over priced… I’ve been back at least two days a week 😂 it’s that good!!! The iced honey vanilla latte is the best latte I have had in Columbus. I ask for an extra shot for a stronger coffee taste and for it to be sweet. The coffee alone keeps me going back. All pastries are so fresh buttery, not too sweet and perfectly balanced. The breakfast burritos and house made salsa are delicious. I haven’t tried something I don’t like yet. Great bakery!!! Original: Truly delicious pastries and drinks, but fare warning… it’s pricey. $18 for a pastry and 8oz tea. I loved my vanilla raspberry cruffin. Excellent customer service, clean nice restaurant, and free parking.

This bakery is one of the best and I have been to many!!! Visited on a Thursday AM- was lucky there was no line and lots of delicious looking pastries to choose from. The staff were super helpful and friendly. The cardamon bun- probably the best I have ever had- last summer I went to Scandinavia where had about a dozen and this one stands above them all! So good. Each bite so flavorful! The egg pancetta pastry was so unique and delicious! I wish I could go back and try every pastry they have! Definitely will stop by again when in Columbus.

Hear me out. The cheese danish and the smoked salmon dip…. Is an insane combination! I enjoyed every crumb! I also got the raspberry vanilla cruffin , ham and Gruyère croissant and a maple latte. Everything was fantastic! But the smoked salmon stole the show!

This is a small little shop you go in and buy your bakery and then head out. We purchased a roasted garlic Asiago sourdough loaf as well as two croissants. The roasted garlic Asiago sourdough loaf was amazing. It had the nice crispy crust in the inside was very soft. The garlic flavor was infused throughout every bite, and the Asiago was a little bit more subtle at the top and little tiny bits throughout the loaf. This bread is excellent by itself or with a little bit of butter, olive oil, or with a little bit of marinated artichoke. The croissant was really good. We toasted it so it was a little crispy on the outside yet. Still warm and fluffy on the inside though it was fluffy. It wasn’t completely airy like some croissants. They had a buttery taste, and the flakiness perfect. Edit: Went back again. And I highly recommend the bacon and egg pastry as well as the garlic Asiago loaf. But everything is good so you can’t make a bad choice. Their new location has one table for seating.

Best bakery in Columbus. Worth the price and hype. Cardamom bun is outstanding. The panettone is the best I’ve ever had. You really can’t go wrong with anything on the menu. You really can tell everything is made with high quality ingredients. They have a great selection of fun groceries and drinks as well. Staff are all super friendly. The downside is the new location is already quite busy, typically a line out the door. You want to get here early! There’s very little seating or standing room, which would make coming here a little more difficult in inclement weather. Otherwise, they’re doing what they do best!

Premium baked goods, Dan the Baker and crew make some great sweets. From the incredible powdered sugar chocolate almond croissant, the very unique cornflake toasted marshmallow cookie, and the Cinnabon roll. Now, the bacon egg and cheese croissant is also a marvel of a meal and a really creative take.

The best local, bakery made pastries you will find in Columbus. While the prices are a little steep, you are paying to indulge in something truly heavenly. The cardamom cruffin and the egg and bacon pastry were flawless. Also it is a pick up and go kind of place, no seating but still very nice vibes.
