"Pézenas is not only the city of Molière, it is also the HQ of Matthieu de Lauzun. Established in a winery in the priory of Saint-Jean de Bébian, this venue provides a stage for the chef to roll out his manifold talents. A chic neoteric interior, done up in stone, wood and copper, provides the perfect foil to the chef’s delicate, tasty Mediterranean score, liberally scattered with childhood and globetrotting souvenirs. The Grenoble-style skate wing and its gribiche sauce are consummately curated, as are the chicken pastilla with marinated beetroot, a nod to the chef’s roots, and the Ségala veal with an aubergine and feta flan and a punchy red wine gravy. The Michelin star is apparent in all aspects of the five-couse menu, offering flavors, textures, and combinations that will leave you enchanted. Definitely the best fine dining restaurant in the area. Excellent performance in food, service, drinks, venue and general experience. Food - It is a set surprise menu. both my partner and I found some dishes less appealing at first, because they contained ingredients that we generally don’t like, but after tasting the dishes we found them all good, or great, or simply “wow”. We really enjoyed every dish on the surprise menu, which is not common. Compliments to the chef! Drinks - a very extensive and impressive wine list, some wines from the house next door. Great house aperitif. The sommelier seemed a bit less acquainted with the digestives, but the choice was more than adequate. Service - definitely meets the expectations for a star restaurant. Friendly, attentive and helpful , yet not overwhelming. Elegant and graceful. Only one waiter spoke English, but it was sufficient. Venue - very chic combination of old walls with modern lighting and nice designs. Attention to details, like providing the ladies with a stool/table to put their bags. Beautiful plates and cutlery (changed after every course, naturally). Excellent toilet/lounge areas. Overall, after trying 3 star restaurants in the area, this is definitely my choice.

When you book a table at a Michelin Star restaurant there will always be expectations, probably higher than normally. The question is will the restaurant deliver? De Lauzun did meet and exceeded my expectations. The place is nicely decorated in an old refurbished building. Staff is attentive, knowledgeable and friendly. We ordered the 5 course menu, which was a good choice as it turned out. Food was excellent, beautifully presented, with lots of different flavours. Wine paring outstanding and they offer a special deal if you drive. We will definitely come back! Thank you for an excellent evening.

One of my all time favourite restaurants. The food is truly magnificent, the service is wonderful and the place is beautiful. We had the five course tasting menu and there was not one thing that wasn’t a true taste sensation. Thank you to the Chef and his team for the most memorable evening of 2022.

The restaurant did not meet its Michelin standard. The presentation was excellent but the quality of my veal was not to the same standard and my wife found a long blond hair in her desert. This is our second visit and was overall disappointing for the price.

Four course tasting menu with wine paired with each course, and explained by the sommelier. Delicious amuses bouches, pre dessert and 'mains', and wonderful wines. Beautiful building.
