I am writing to formally express my extreme dissatisfaction with my recent dining experience at your restaurant. Given that your establishment presents itself as a Michelin-recognized restaurant, the overall quality and professionalism fell far below any acceptable standard.
To begin with, a fish priced at VND 4.2 million was served to us undercooked. When we raised this concern, the service staff insisted that the fish was fully cooked and proceeded to pour sauce over the fish, seemingly to alter its appearance and conceal the issue. Upon reaching the central bone, the fish meat could not be properly separated, clearly confirming that it had not been steamed thoroughly. Only then was the dish taken back to the kitchen for additional steaming. This handling of such an expensive and premium ingredient is completely unacceptable.
Furthermore, despite the restaurant having very few customers at the time, both ordering and food service were extremely slow. The inefficiency was difficult to understand given the low occupancy.
We were also deeply concerned about hygiene and service procedures. The serving plate was noticeably hot, and the staff member carried it by holding the sides with fingers cushioned only by a paper napkin. The napkin became soaked with sauce, raising serious concerns that the liquid on the staff member’s fingers may have come into contact with the food on the plate. This reflects a lack of basic service training and food safety awareness.
Overall, this experience was profoundly disappointing and nowhere near the standard one would expect from a Michelin-associated restaurant. Frankly, it has led us to question whether the Michelin designation displayed at your entrance is legitimate.
We hope you will take this feedback seriously, conduct an internal review.

At the time of the incident, we did consider asking to speak with your manager in person. However, as other guests were present, we felt uncomfortable causing a scene and therefore chose not to do so.
To clarify further, the fish meat near the central bone was clearly raw. There was visible blood on the meat, and it was completely impossible to separate the flesh from the bone. Under such conditions, it is difficult to understand how the dish was considered suitable for consumption. We would like to know whether your service staff provided any explanation when they attempted to cover this issue by pouring sauce over the affected area.
Moreover, even after the dish was sent back and served to us again, the handling and service procedures still showed serious deficiencies. We strongly believe that the way the dish was re-presented requires significant improvement, particularly given the price and positioning of the restaurant.
We sincerely hope that, should we have the opportunity to visit again in the future, we will see clear improvements in both food quality and service standards.
