An absolutely unforgettable adventure from start to finish. Dstage is a brilliantly orchestrated experience that plays with your perceptions in the most masterful way. Upon walking in, we were immediately greeted with a very warm and welcoming smile. The service is a big part of the magic here; the staff isn't just friendly, they are passionate, knowledgeable, and the execution throughout the evening was absolutely flawless. Every single dish that arrived at our table was an innovative work of art, and we had 22 courses. (Without spoiling too much), each bite challenges your senses. The joy of discovery is a huge part of what makes this place so special. For anyone who appreciates creativity and innovation served by a team that clearly loves what they do, Dstage is an absolute must.

No doubt this was a good meal, but it wasn’t special. Our expectations were high, and the food did not deliver. There were a few highlights and standouts, but the overall experience was not what we hoped for. If you like everything fermented though, this place is for you. We opted for the tasting menu paired with wine (18 courses I think) and were immediately being upsold to the next bigger menu option. This was not appreciated, although I understand the reasoning. It should have been softer and more sophisticated, not immediately giving a customer the impression they are not spending enough before they have even had their first sip of water - let alone wine. Food. It kept coming and standouts were the fish, beef steak, and caviar. The ‘Happy Ending’ for us fell flat and was not a good way to finish. Service. Exemplary. The staff were the best part of the restaurant. Friendly, attentive, non-intrusive but available. After the initial upsell speed bump, they were great. The restaurant is also smaller than it appears in images, with tables just on one floor and the bathrooms downstairs. It would have been nice to have a drink at the bar, but it did not seem in use all evening. We were not offered an aperitif or digestif there. Very nice experience but not mind blowing. Unfortunately (for us) the issue was the menu. It will suit some, not others. Do your research before you book to make sure it is for you!

Terrible experience. The worst nightmare. I went there with my fiance and ordered 22-course menu. We added wine pairing to anticipate for the upmost experience. Firstly, most food had strong taste and we could barely eat half way, and the taste only got stronger while some dishes made of fish and fermented smelled and tasted fishy. Secondly, the service was really unacceptable . A waiter accidentally knocked down a cup of white wine onto my fiancé, splitting the wine and broken glass all over onto my fiancé’s body. He got all wet and shirt soaked in wine, and there were still more than half of the courses not served yet. The waiters only said sorry once and immediately left, leaving both of us sitting there in shock. We both have no napkins and not dare to move with all the broken glass pieces on our feet and the floor. After a while, another waiter came back with two towels for us cleaning by ourselves, which were useless given that my fiancé’s shirt was fully wet. He only apologised once more, without any compensation or further following up. The main chef greeted every table and chatted with them for a long time, except our table. He did not even greet us or said goodbye when we left. We have never experienced such terrible services even in normal restaurants, not to mention this is a two stars Michelin. Totally disappointed and highly not recommend anyone to come, unless you would like to try such unique experiences.

Great experiences! Just WOW. Had 16 courses menu with a wine pairing for too. Molecular kitchen can seem to be small portions but at the end of the dinner I was so full! Different varieties of different tastes combinations… must try this 2 stars Michelin star restaurant when in Madrid.

I could write a novel about our experience at DSTAgE. Truly a special experience, elevated by well trained and exuberant staff! A couple notes worth mentioning. 20+ courses isn’t quick! It’s a 4-5 hour experience, this was a surprise to me but absolutely not an issue. Of the 20+ courses, I didn’t enjoy all of them from a flavor perspective. Many dishes are fairly “hardcore”, with examples like tuna heart coming to mind. That said, they were all an absolute joy to try! As a self proclaimed “home chef”, quite literally zero of the dishes were things I could even dream up creating much less actually acquire the ingredients to create. Highly recommend the wine pairings as you will try some wines that you truly cannot get outside of DSTAgE. Vineyards producing 700 or 2500 bottles a year where DSTAgE acquires most if not all of them. Was very happy to see orange wine and kombucha as part of the 10 or so wine pairings. They even have their own private salt supplier that makes a small amount of finishing salt just for DSTAgE, and believe it or not… you can tell! Favorite dish, and most surprising as it isn’t something I would ever seek out, the tongue! Just wow!

Honestly, it was the worst meal I had in Madrid. I’ve eating at Michelin star restaurants before and this had the worst service and food I’ve had. From the moment we walked in, the greeting was lukewarm and we waited for around 10 minutes from the moment we sat down to getting service. The food was disappointing to say the least. One of the dishes was a slice of beef seasoned with just salt… like yes it was cooked perfectly but I don’t see how this is of caliber of 2 stars.

We did the 22 tasting experience paired with a wine tasting. The food presentation was fabulous. I didn't love all the items but the experience was a fun gastronomic experience. The tuna heart and beef tongue were pleasant surprises. Plan to spend at least 2 hours for a tasting.

Sadly don't see what all the fuss is about. My boyfriend and I came here for dinner one night and we got the "denjoy" menu aka an 18-course menu and a bigger pricetag. I wish we could have been told what the dishes would be ahead of time, if we had, we probably wouldn't have proceeded with the meal. The service is great, the ambiance is nice, it feels very upscale. Will say the presentation of all dishes were beautiful. They do a great job with not only plating the dishes but the way they present everything. In terms of the flavors (which I think is the most important part), I was very disappointed. The whole menu was "fungus"-themed which was immediately unappetizing to me. We told our waiter we were lactose intolerant but could still have dishes with butter and light dairy because we brought lactaid pills; we just wanted to let him know since he asked if there were any dietary restrictions. We think he may have misunderstood us and thought we said we were vegan because we were served things like a single stalk of asparagus, a block of tempeh, and their vegan take on a hot dog while people around us were being served steak. I was pretty horrified. And disappointed! The flavors weren't even that good, most were quite bland. One dish on a wasabi leaf I couldn't even eat, the flavor was extremely off-putting to me and made me nauseous. And I'm someone who's not picky with food usually, I eat everything! We eventually realized he didn't misunderstand that we were vegan because we were served some dishes with fish and pigeon. Never had steak. I think they're so strict about not removing dairy or cream from some of their dishes that they gave us vegan alternatives instead, but I wish we were asked and given the option because a $220 meal for what we had? No way. I wouldn't have even paid $100. Overall an extremely overpriced and disappointing meal.

A look at the server's shoes asks "What the fuck is DSTAgE?," a question repeated on the Restaurant's Michelin Man and one that Chef Diego Guerrero hopes guests will understand as "Days to Smell Taste Amaze Grow & Enjoy." Unmarked at Calle de Regueros 8, though two Stars and a full book of reservations assumes most seeking DSTAgE will know where to look, it is upon entry that guests are led past seats to a counter and open kitchen, greetings from staff quickly followed by Beverage selections and the first of eighteen courses featuring nothing but Squid - its inner Pen and Entrails used for fibers and Sauce that mimic Breading plus Butter. Rooted in Spanish products but brought up in the Basque with eyes on the likes of Adria and Berasategui, it is from here that diners are led on an adventure from Japan to Italy with frequent stops in modernist cooking, the first aerated and frozen Horchata topped in an incongruent Filet of Anchovy. Described often as a "concept," entirely Vegan Chorizo next to an Egg Yolk with bright acid indistinguishable from Pork, one may be surprised to learn that Caviar pairs well with Olive-lacquered Cauliflower preceding a continuous curl of Pasta topped tableside with Yeast. Not shying away from abrupt shifts, Charred Corn over Custard with Chevre and Chili Oil anything but subtle, Chef Guerrero's Red Pepper Rose harkens memories of Tomato Soup with Grilled Cheese while its follow-up of Potato, Truffle and Honey gently cleanses the palate for what comes later. Elaborating on the production of "Cereal Syrup" more so than a Mushroom and Manchego it coats, the reason revealed later, Kokotxa in piquant Foam achieves great depth while Eel and Pigeon wrap up savories in a traditional manner along with Bread to sop up the Sauces. Wrapped around a two-story courtyard, designed rustic yet modern as Guerrero's Food, Dessert begins with a bit of knifework making Rhubarb bloom amidst fragrant Cava before moving on to sweet Mushrooms amidst melting Liver and Onion Cream. Recalling the Syrup from earlier in course sixteen, Bread with "Chocolate" using no Cocoa but achieving that flavor through residual starches, Popped Corn Ice Cream asks guests to wrap it in spun Sugar before finishing with two bites of crisp Seaweed suggesting the idea of Key Lime Pie.

I have no idea how this place has two Michelin stars. Everything that was put in front of us seemed to be some version of fermented rice. Some dishes were just gross -- which I have never said about the food at a Michelin restaurant. The servers are very friendly and helpful, although some of the descriptions they have been taught to deliver go on too long. There are also just too many courses. Twelve or 13, I think? In order to get through that many dishes, plates are practically flying on and off the table. It was rare we were able to finish drinking the wine paired with each dish before the next one was coming at us. Just too manic. One interesting observation we made was the owner/head chef spent most of our meal sitting with a friend at a table in the restaurant. This prompted an assumption on our part that he doesn't feel the need to involve himself in tasting the food before it goes out, or otherwise offering advice to his kitchen staff. We found it bizarre, especially considering what we were being asked to consume. We did like the wines that were paired with the meal, and they got better as the dinner went on. That plus the attitude of the staff, which cannot be easy to maintain given what they are doling out, amounts in our estimation to two stars out of five, but certainly nowhere near two Michelin stars. Recommendation: HARD PASS

D'STAgE which stands for: Days to Smell Taste Amaze Grow & Enjoy is a homage to Renowned Basque chef Diego Guerrero's mission to bring haute cuisine to a wider audience. Although awarded two Michelin Stars (3 is the max) and listed among the top 50 restaurants in the world, D'STAgE is laid back. Patrons sit at tables made by Guerrero, with no table cloths or fancy music in the background. Instead you get to jam out to Bruce Springsteen and the Red Hot Chili Peppers (check out the bands logo tattooed on his arm). The kitchen is open in order to create a "natural empathy" between patron and the kitchen, according to Guerrero. You can see Guerrero working in the kitchen. You can choose from a 12 or 16 course meal and we opted for the former. My favorites were the Roasted cauliflower, Corn Kefir, chocolate bread, white tuna, octopus, and pepper. The corn is served in a small bowl and roasted with goat cheese. The pepper is roasted and the liquid cleaned up with bread lying on a bed of rosemary. The dish is inspired by his mother as he would watch her cleaning the dishes at home. The white tuna is delicious. The octopus a nod to his Basque roots and the abundance of octopi in the Bay of Biscay; a staple for Basque and Galician restaurants. The food is inspired by Mexican cuisine, a nod to the chef's travels and personal friends. The restaurant will email you your menu the next day. Unfortunately most of the explanation was lost in translation between masks and English being a second language. This is not you tourist chic trap, but a real restaurant catering to the sophisticated Madrileño. If you think your gonna get some tapas etc, this is not for you. Chef Guerrero has elevated eating to an art form that was inspired by his friends, and he wants to share it with you without any barriers; sit back and enjoy. Reservations are a must and should be made WAY in advance. The restaurant also sometimes closes on the weekend to allow the staff to have a "normal life" according to Guerrero.

the dining experience at DSTAgE to me was sort of like going to an art museum...every dish was a work of art in its own way and i'm sure my interpretation of every piece i took in was different from that of the next person... long story short, i didn't like every dish i ate, BUT i fully appreciated how much thought, time, and effort that went into every ingredient i ate...the layers of flavors and textures and "play on" interpretations of this and that was overwhelming... the 18 courses were full of rich & decadent broths and stocks along with all sorts of molecular gastronomy 101...things were not as they seemed...textures were often misleading than how they looked, but the flavors were so bold and almost abrasive at times... smooth jazz and old r&b classics played in the background, while flavors were bursting off the spoons and forks, exploding in my mouth, like punk rock feedback turned up enough to make your ears bleed all in all, just a real fun dining experience...most of my michelin meals usually consists of enjoying the food, service, and ambience...but this meal kept me engaged and on my toes...knowing that every other bite was more than what meets the eye!

So I am a chef de partie at a 3 michelin star restaurant in the US. I decided to treat myself to an experience while in Spain for my birthday. Was so excited to try this place based on reviews. When we first sat down we were out at a table by the door with no view of the kitchen and it honestly felt like the worst seat in the house. That was definitely not the best way to start. Honestly all the dishes were extremely off putting. The only dish I loved was the "squid game" due to its insane creativity and successful execution. In all of 18 courses I only loved one. (I was eating with my partner who is also a chef and felt the same exact way.) The first 2 courses tasted very similar and contained a lot of strong flavor like yeast garum and black garlic, which for the beginning of a tasting menu is pretty intense. The "anchovy lasagna" for us was the beginning of the end. That was the point we started dreading the next course. The Twinkie looking dish that you were expected to eat in one bite and was filled with some juice, actually made me nauseous and it tasted like piquillo pepper juice from the can without even adding salt. The majority of the dishes were fish focused, which I normally love, but all the sauces tasted the same and even looked the same, without even simple herb garnishes to distinguish the flavors they were going for or even just the difference in the different fish courses. A little herb garnish would have gone a long way in this meal. However, I did really enjoy that the chefs came out for some of the dishes to try to make an experience. We also got the wine pairing, which in my experience of working at restaurants of this caliber is and should definitely more elaborate due to the price being almost half the cost of the food. The server just stated the varietal and vineyard and walked away, while speaking very fast I might add. Not the wine pairing experience I've been used to. Unfortunately, the service fell as hard as the food. I worked as a chef and also a food runner at restaurants above the caliber of DSTAgE, and the service was honestly appalling. The female server was extremely unpleasant and sometimes rude(ON MY BIRTHDAY!) and they even don't practice open handed service or even try to have the michelin service standards. They left dirty wine glasses from other tables 2 feet away from our table in eye sight for most of the meal. When we had finally finished our 18 courses 3 1/2 hours later we were held hostage for an additional 25 minutes to get our check because none of the servers could be found as they were making espresso shots for themselves in the bar which could be seen from our table. We were left in extreme regret for spending over 600$ on this meal and extremely confused as to why they have a 2 michelin star rating. Very sad that we didn't use that 4 hours and 600$ to walk around Madrid and try a bunch of different stuff, especially because we only had a few days in the city. My advice would be to check out the food market that's within walking distance of the restaurant and try 18 things there. You'll have spent a lot less money and would have had a much better time. Lesson learned.

Another one for the win. Eating here is like eating in a treasure museum. Inspired by Mexican cuisine, it highlights the chef's travels and personal friends, throughout his life. We chose the 16 course menu with wine and we were in Heaven. Some highlights were the Corn Kefir, chocolate bread, Octopus, white tuna, and pepper, and Roasted cauliflower. The corn is served roasted with goat cheese. Peppers are roasted and the sauce soaked up with bread on a bed of rosemary. Inspired by his mom, as he would watch her clean. The white tuna is amazing. The octopus is a hat tip to his Basque roots and the overwhelming culture of octopi in the Bay of Biscay. Its time to make a reservation as you travel to Madrid.

We were not impressed with the food for such a hefty price tag. We felt like some of it was plain, and some of the more intricate dishes were not explained well (although we loved a few dishes like the corn). It was a very creative experience but not my favorite. In one of the dishes, the server rolled up a "butterfly cocoon" in front of us. She rolled up rocks into my food and I had to spit it out. 10/10 for creativity but 3/10 for taste.

The only reason this is not a 3 star Michelin restaurant is because it's not super stuffy - it's elegant, yet casual. Service is top notch, never in your face but always a step away to serve as needed. And the food? We had the great pleasure of watching Diego Guerrero work with his team behind the counter in the kitchen - the food was simply marvelous. Even my vegetarian wife was blown away by the unique flavor combinations that came through with each morsel. They didn't skimp with the vegetarian creations either - some places will simply remove the meat and call it vegetarian. While there was some over lap between mine and hers, like the surprise chorizo, my wife had a few creations that I had to steal a bite from as they were specifically made for vegetarians. I'm from the US, grew up in NYC, a lover of NY institutions like Jean Georges, Daniel, Le Bernardin, etc. This place ranks up there with these establishments. I was kind of bummed I couldn't get into XO, but they don't do vegetarian- this place made up for my disappointment by blowing me away.

What an absolutely amazing dining experience, worthy of the Michelin 2 star approval and begging for the reviewers to return for an upgrade to the coveted 3 star approval. I came here as my first fine dining experience in Madrid with my wife to celebrate our honeymoon. Fortunately, we were able to get our reservation placed by our hotel and once I navigated the meandering streets of Madrid proper, guided by our GPS, we finally stood face to face towards this unnamed gastronomic bliss. As soon as we arrived, we were immediately seated in the lounge with a free drink (made fresh and to our liquor preferences) and served dishes from the kitchen. As far as the dishes go, I can only ask y'all to view the pictures, as I'm sure your experience may differ depending on when you read this review, however, I can assure you that we were literally taken on a physical culinary journey to dine at numerous areas of the restaurant, and even face to face with the chefs. It is so interesting to see all of the staff carry a small forceps on their apron, but after seeing the delicacies in which they plate all of the dishes, I can see why that little tool is a necessity. After 3 hours and 14 meals, my wife and I were pleasantly full and felt like kings and queens. This was by far my favorite Michelin 2 star experience during our honeymoon and I strongly recommend anyone with a thick wallet who enjoys sampling food and flavors in new and unexpected ways to make this spot a must-visit destination. Of note, I did not like the Asian pork bun, but that was it. By the way, did I mention we were seated facing the chef directly? How awesome is that?

DSTAgE was probably one of the very best meals I've ever had. On our spring break trip to Madrid, my friends and I decided to splurge one night here and it is well worth the price if you can afford it. We chose the 12 course meal but you can choose from 12, 13, or 17 courses for dinner. The first course is served at the bar area where you're also served drinks (extra). By the second course, they've led you to the kitchen where you get to see a chef hand make your next course. The remaining courses are served at your table with descriptions of the food and recommendations on the number of bites to eat it in and how to eat it. All in all, an amazing experience! The staff was friendly and helpful and well equipped to handle any languages the patrons spoke. Our waiter for example spoke pretty fluent English. If I'm ever in Madrid again, I would definitely come back: the food is absolutely spectacular. The fresh and unique combinations of ingredients are so well done in every single course!

Here you will sit for between 2-3 hrs eating a journey of mushy bitter dishes one by one. A dish arrives described as Chorizo (served in some vaguely undefined mush) only to find after you've consumed it - surprise! That wasn't chorizo! That was lentils made to LOOK like chorizo. Well thank goodness because that didn't taste anything like chorizo. But also, patrons don't like being told they're eating one thing only to find they've consumed something completely different. That's not a good experience. There was also an "omlette" that we were encouraged to eat in one bite - another unpleasant surprise- the omelette was filled with some bitter semi gooey liquid. It was so foul I literally watched a patron at another table spit it out all over herself, in a near vomit reaction. By the time the 15th course arrived I couldn't wait to leave. The service however was excellent. If you like this kind of experience and food, you'll enjoy dishing out the €175 per person. We did not.

My trip to Spain consisted of 4 Michelin Star restaurants: one 1 Star, one 2 Star, and two 3 Stars. This restaurant was by far the worst, and far from the least expensive. Compared to the 1 Star Michelin restaurant we went to a few days before, DSTAgE was wildly inferior. Out of 14 dishes (and a very bad wine tasting, one glass of which they spilled on me) we loved about 4 and liked about 3 more. That's 7 dishes that just weren't that good. Many of these were far too salty, not well cooked, or simply tasted bad. I understand that tasting menus are an experience, with presentation and flow very important- but the MOST important part of this experience should be how it tastes. There were a few dishes that shone, and their butcher's cut beef was some of the best I've ever tasted. It was probably one of the best plates of any of the restaurants and I wish the rest of the plates could've matched. It's also nice for there to be a fancy ambience for such an expensive restaurant, but if I simply looked at pictures this could be anything, ranging from a bar to a slightly upscale restaurant. Overall, flavorless, overpriced, and disappointing are the main adjectives I'd use to describe this experience. I hope we came on a bad day, and can't imagine how our meal could've earned 2 Michelin stars.

It was a very interesting experience. I enjoyed the appetizer being served in the bar waiting area. My favorite was the 2nd course at the kitchen, having the chef speak and describe to me what was being prepared. The staff were good to eplain all the dishes when they were presented. This was truly an amazing experience. Trying out new flavors and learning that how food looks and taste in your mouth, may be completely different. Your eyes deceive you! This is truly the ingenuity of the Chef to formulate a menu such as this. We came to celebrate a birthday, and was happy that my side note on the reservation was recognized, and we were given a surprise. Thank u so much. All in all, if budget permits, this place is definitely worth a try.

After lots of research, my boyfriend and I chose DSTAgE as the perfect place to celebrate my birthday and the end of my master's program in Madrid. Nevertheless, our meal really put a damper on both of these celebrations, and it was such a bad experience that we ended up doing a "do-over" meal elsewhere in Madrid. We made our reservations several months in advance and informed them both in the reservation notes and via email that we were celebrating a birthday, that I had several food allergies, and that we would like to do the 14 course tasting menu (in Spanish, so that there was no possible confusion). When we walked into the restaurant and gave them our names, they seated us at the bar for the first course. When the bartender noticed that I was translating from Spanish to English for my boyfriend, he graciously switched to English so that both of us could understand him. Although we had sent DSTAgE an email regarding my allergies and with respect to which tasting-menu we would like, we were asked again. When I told the waiter that I had shellfish allergies, he gave me a quizzical look and then went off to make our drinks and bring us the first course. I was a bit confused because, in my past experience with high-caliber restaurants, they have confirmed things like food allergies, but have also referred to both the notes for the reservation and the emails from the patron. I was a bit perplexed that a restaurant of DSTAgE's caliber and repute did not pay attention to such details. Overall, the courses were very hit or miss. The first two courses, the anchovy and the "egg," were very creative and left me with high-hopes for the remainder of the meal. After these courses, we were seated in a table in the back, despite being the last seating for lunch and the restaurant being mostly empty. We were then served the third course, a sweet mole mochi, which was also one of the well-executed courses. After the third course, we decided to do the wine pairing with our meal; as my boyfriend and I are both enophiles, we thought this would be an excellent choice. However, when the waiter was explaining the wines to us throughout the entire meal, he rarely looked or even spoke in my direction, instead focusing all of his attentions on my boyfriend. Not only could I not hear what he was saying, this really marred my experience. Despite this, we mostly enjoyed the wines. The rest of the courses were not very memorable, with the exception of the blood sausage and the corn, which were stunning. However, out of fourteen courses, we only enjoyed five, which for a $500 meal was simply not worth it. Also, I found it strange that they did not acknowledge my birthday in any way, as I did notice that other reviews mentioned a course specifically for one's birthday and/or an acknowledgement of the meal's celebratory nature. Overall, I cannot simply fathom how DSTAgE has garnered two Michellin stars with such blatant inattention to detail and multiple bland courses.

Went with another person for the 18 course meal with wine pairing. It came with two tasters at the beginning which were fantastic and was a promising start. However, everything went down hill from there. We were asked what kind of flavors we disliked and I specifically mentioned nothing too sweet. Everything seemed to miss the mark and had odd overly fishy flavors. At a certain point, they served a very sweet drink and I asked the drink to be replaced with something else. Apparently, that was a big no no because she was trying to argue that was the best pairing and I shouldn't drink anything else. Not sure what the point of asking me what kind of flavors I didn't enjoy was.

Did you ever think about going to an adventure around the world, exploring the world while comfortably seating at table? well this is what me and my lady experienced in this magic place. It's like the chef Diego Guerrero is taking you by hand and fly with you in the different continents, from south america to japan, while speaking in Spanish to you. Too poetic? Well that's what it is. Poetry on a sequence of dishes. Every single dish speak with you in a different language, and everyone of them is reminding you about different places and people, here we are in China, here in India, oh this is Peru, and what's this smell? yes Egypt, or Tunisia. But in every single dish there is always the "Origin Factor". Diego is telling you "Yes I love to discover, I love to explore, but I am Spanish, and not only Spanish, but I'm Basque, and I'm proud of my origin, and I want to remind you that while I'm travelling with you". I can tell you about the deliciousness of the ceviche, the incredible taste of the smoked pork we had or the astonishment received by the spice trail (indian inspired chocolate and spices dessert), but I don't think that would be right. I'm sorry but this was our personal travel with him. You have to do your own. And preserve it in your heart, as we do. Days to Smell Taste Amaze Grow & Enjoy Thank you Diego.

I don't understand how this is Michelin rated or ever enjoyed. The service and atmosphere was top notch and what you'd expect but that's where all expectations ended. The food is all gimmicky, and did not taste good. Things were extremely fishy, had weird textures, and there was no progression to the meal. With so much great food in Madrid this is a must skip.

Wow! What an amazing experience! I loved starting in the bar for the appetizers, transitioning to the kitchen for a bite made in front of you, then heading to the dining area for the rest of the meal. I went for lunch and ordered the 14 course option, I wasn't over stuffed and was still able to function the rest of the day!

My favorite non sushi restaurant so far. It was quite an exquisite dining experience. The entire meal tantalized all our senses. Presentation was amazing and price was really reasonable. We came her for lunch and it was about $100 per head. This kind of meal can easily cost up to $300 in New York City per head. I can not recommend this restaurant enough. The staff was knowledgeable about each dish they served. The only part they could improve on was the dessert dish which I thought was not an exciting ending to this epic meal.

Visited DSTAgE during my last week in Madrid after studying there for 6 months. There's one thing I can tell you, best meal I've ever had in my life. The service was extremely pleasant and all dishes were beautifully curated. I loved the ambiance of the restaurant; wasn't stuffy/traditional but modern. I would return if I ever visit Madrid again.

I can't put into words how great this place was. The food is wonderful it's not just food it's an experience. The atmosphere is very nice the staff is very attentive and knowledgeable. The chef is an amazing person very humble and made a dish for everyone there at the counter before you sat at your table. I wish more chefs would take the time to interact with their customers like that. For the level of skill and experience that we had here I have to say it's one of the best values I had on my trip in Spain.

The creativity,execution and hard work that went into our lunch today was truly amazing. For example the celeriac soup served in a terrine made from the root was delicious,theatrical,and perfectly executed. I love hanger steak and again the preparation was fabulous. They slowly cooked it to medium rare,then grilled it briefly,and then finished in small smokers brought to the table in which they burned whiskey barrel chunks. A piece of tuna loin which was lacquered with a sweet glaze was plated and then finished table side by grating a chilled log of foie gras combined with wasabi. It went on for 14 courses and was guided by a skilled sommelier.Each course was as brilliant as the next. Our experience was exquisite in every respect but relaxed and fun.
