After lots of research, my boyfriend and I chose DSTAgE as the perfect place to celebrate my birthday and the end of my master's program in Madrid. Nevertheless, our meal really put a damper on both of these celebrations, and it was such a bad experience that we ended up doing a "do-over" meal elsewhere in Madrid.
We made our reservations several months in advance and informed them both in the reservation notes and via email that we were celebrating a birthday, that I had several food allergies, and that we would like to do the 14 course tasting menu (in Spanish, so that there was no possible confusion). When we walked into the restaurant and gave them our names, they seated us at the bar for the first course. When the bartender noticed that I was translating from Spanish to English for my boyfriend, he graciously switched to English so that both of us could understand him. Although we had sent DSTAgE an email regarding my allergies and with respect to which tasting-menu we would like, we were asked again. When I told the waiter that I had shellfish allergies, he gave me a quizzical look and then went off to make our drinks and bring us the first course. I was a bit confused because, in my past experience with high-caliber restaurants, they have confirmed things like food allergies, but have also referred to both the notes for the reservation and the emails from the patron. I was a bit perplexed that a restaurant of DSTAgE's caliber and repute did not pay attention to such details.
Overall, the courses were very hit or miss. The first two courses, the anchovy and the "egg," were very creative and left me with high-hopes for the remainder of the meal. After these courses, we were seated in a table in the back, despite being the last seating for lunch and the restaurant being mostly empty. We were then served the third course, a sweet mole mochi, which was also one of the well-executed courses.
After the third course, we decided to do the wine pairing with our meal; as my boyfriend and I are both enophiles, we thought this would be an excellent choice. However, when the waiter was explaining the wines to us throughout the entire meal, he rarely looked or even spoke in my direction, instead focusing all of his attentions on my boyfriend. Not only could I not hear what he was saying, this really marred my experience. Despite this, we mostly enjoyed the wines.
The rest of the courses were not very memorable, with the exception of the blood sausage and the corn, which were stunning. However, out of fourteen courses, we only enjoyed five, which for a $500 meal was simply not worth it. Also, I found it strange that they did not acknowledge my birthday in any way, as I did notice that other reviews mentioned a course specifically for one's birthday and/or an acknowledgement of the meal's celebratory nature.
Overall, I cannot simply fathom how DSTAgE has garnered two Michellin stars with such blatant inattention to detail and multiple bland courses.
