"After a year in the making, the 20-year-old brand founded by Brad Burdsall completed construction on its first northwest location and plans to open its roomy, built-from-scratch breakfast and lunch restaurant on Monday, Oct. 7 at 7591 Tule Springs Road in Centennial, on a former empty plot near Norman Rockwell Lane and a short walk from Streets of New York and Ben’zaa Cantina at The Village of Centennial Springs. The 5,535-square-foot space is decorated with glass-etched windows and continues the Egg Works tradition of a working model train track mounted above customers. The restaurant expects to follow its sibling locations and open daily from 6 a.m. to 3 p.m., offering an eight-page breakfast, brunch, and lunch menu highlighted by skillets, burritos, eggs Benedict, omelets, Hawaiian-inspired dishes, waffles, pancakes, salads, soups, and sandwiches. Another local favorite is the Cincinnati-style chili, available with spaghetti and a blanket of cheese or served on a hot dog.
