"Revealed last July, I found that local breakfast and lunch favorite Egg Works is making up for a long delay with rapid progress on a super-sized, built-from-scratch Centennial restaurant: a 5,535-square-foot building at the corner of Tule Springs Road and Norman Rockwell Lane near The Village of Centennial Springs. The shell structure now has framework up; original plans called for an open dining area large enough for 226 inside, a private dining room, and a 1,125-square-foot outdoor patio. No opening date has been announced, but the expansion is expected to follow the lead of the six restaurants in the Egg Works and Egg & I family and offer its large menu of hearty breakfast and lunch dishes from 6 a.m. to 3 p.m. daily. Brad Burdsall created the restaurant in 1998." - Bradley Martin
