"A restaurant that has managed to adapt with the times to the delight of its guests. Despite the bright, renovated new look and cuisine that is more in keeping with contemporary trends, it still retains the informal character of the early roadside “mesón” first opened by grandmother Valentina and whose name recalls her Cuban roots. It is impossible to talk about El Bohío without mentioning celebrity chef Pepe Rodríguez, who champions the DNA of this area by highlighting the culinary legacy of La Mancha, while at the same time adapting its flavours and ingredients to the present day in line with one of his maxims: “the cuisine of old seen through the eyes of today”. His signature dishes here include lentils with Butifarra sausage, La Mancha-style gazpacho, and updated versions of “pringá del cocido”, with cabbage and broth. Best culinary experience ever. I admire so much Pepe's work and finally my dream came true and hubby and i went to "El Bohio" in our trip to Spain. The food is.....I think I have no words to describe it... we enjoyed it so much ...it's perfect and unique. The service it's excellent!!!!! Every plate is exquisite. We asked for the "Menu degustacion" and we ended sooo full!!! 🤰Definitely we're going to come back in our next trip!

The finest dining I have ever experienced. The staff was very attentive and professional. Please make sure you have transportation back from the city because the town is off the main areas and getting a taxi or bus after 10:00 pm can be very difficult. We experienced that ourselves. Luckily the staff was kind enough to call several cab companies for us to get us back to Madrid. The wine parings were excellent. Do not expect the staff to speak much English.

Great experience. -Pros: food, food, food. Every dish was deeply thought, tried beforehand like a chemical formula, and carefully cooked to make you feel a great merge in between the classic 'castellano' flavors and the new techniques. -Room to improve: ambience. Despite the staff is attentive, I missed a more comfy ambience, you are living an experience at the end of the day. & Coffee, when will you serve barista in Michelin star restaurants??? In any case, good job 'El Bohío' team for a great lunch in the middle of Castilla La Mancha, Don Quixote would be proud

Service is outstanding, they take care of every detail so you only need to enjoy all elaborations. You can feel safe here if you have any food allergy as they will ask you about them and they would make changes on elaborations adapting them to you. We have tasted the Autumn menu, it was delicious. Elaborations were modern with traditional tastes. Also we have delighted with special breads. The price is high (about 120 pax with the menu, a glass of wine, breads and coffee) but it is worth thinking into the high quality service, the care in each detail, the elaborations and the spent time on each creation. Parking is at the street, you could need some time finding a place where parking. Furthermore some streets have regulated parking so you need to pay on some main hours of some week days.

From earth to heaven. We came here for lunch and we could not enjoy this experience more. Not only food but service was extraordinary. We loved it so much that we reserved dinner here. The largest menu is so good you can't imagine. Lenties ball, deer was extraordinary.

What an experience! Getting to Illescas isn’t as hard as you would think: €45 from center of Madrid or a “two-train and a bus” 1 hour trip.

My first experience in a Star Michelin restaurant could be summarized as AWESOME! I visited with my family and all of us have the same feeling after enjoying with great dishes. The food, the service and the atmosphere are aligned to enjoy the menu with great wines. Definitely Pepe cooks the most traditional Spanish food in a different way but with the same spirit and better tasting. For sure, this is a MUST place to visit. Thank you Pepe and your team.
