Incredible fine dining experience at ESSE. We had high expectation for Matt Orlando, the former head chef at Noma, but Mr. Orlando and his team surpassed it at every level - the food, the wine, the ambiance, the service. We had the 12-course chef’s menu and each course complemented the next. There was such a balance and harmony to the meal that at the end, we felt extremely satisfied without the food coma experienced at other tasting menus.
Also as a TCM doctor/acupuncturist and functional medicine practitioner, I applaud Matt Orlando’s commitment to circular gastronomy with WHOLE foods, local & seasonal ingredients, and fermentation techniques for a healthy microbiome. Dining at Esse, was not only the highest level gastronomic experience, but it also felt modern and healthy, as if Mr. Orlando is ahead of his peers in both educating his diners and also answering to what we want in fine dining now.
