A Chile Road Trip on the I-25 from Las Cruces to Denver | Eater

"A local café offering a gargantuan tostada built on a fried flour-tortilla base, paired with rice so drenched in tomato sauce it reads like a bowl of broth—hearty, saucy, and unapologetically substantial." - Gustavo Arellano

Cute cafe tucked into an industrial area of Pueblo. Very friendly and fast staff. They make you feel welcome from the moment you walk in. Food was good, their green chile was excellent. Beans were tasty but the rice was a little overcooked for my taste. Serving sizes were very generous. Drinks were constantly refilled. Prices were not too bad considering the portion sizes. Complimentary sopapillas served at the end of your meal with honey and a cinnamon/sugar shaker. This just tops off the excellent service and family like atmosphere.

If I could give them 10 stars, I would! The food is AMAZING, and the service is absolutely wonderful! Beat authentic Mexican food around here. The only bad thing is we have to drive far to come, but it's definitely worth it. Nothing comes close in thr Springs.

I read through the ratings first because honestly I wanted to see other people as pleased as I was. Tried to see if I could find a local family-owned restaurant to put my money towards since I was in from out of town and love supporting those kind of businesses. I was incredibly impressed with this place, what a gem. They treat everyone that comes in like old friends, they do not let you go hungry, they show up before you even said anything about needing anything, they are intuitive, these people are pros. Service aside, this was also some of the best Tex-Mex style Mexican food I have had in Colorado. I have seriously been looking for decent sopapillas for 20 years in this state. These are the best ones in Colorado. If you are in Pueblo you have to come check this place out. Honestly I hope they don't change or get bigger in size, just bigger in their wallet and their joy. I ordered the chili relleno because that's a personal favorite. Theirs is soft pillowy egg style. It was great.

Absolutely delicious! I got the beef stuffed sopapillas (Wed's special) with green chili and their jalapeno guacamole. This was hands down the best food I've had since leaving Memphis a decade ago. Tons of food, enough for another delicious meal, and comes with sopapillas with honey and cinnamon sugar for dessert. Service was awesome as well. Probably good that we only occasionally come down to Pueblo cause this place is dangerously good.

Our experience can be summed up in one word - wow. To start, these are some of the friendliest people we ever met. Everyone who works here is inviting, friendly and professional. We had a great time chatting and joking around with them. The food was superb! The chips come with three delicious sauces and each of the entrees were bursting with flavor. The sopapillas were a fantastic dessert to end an amazing meal. I wish I could give this place 6 stars. Everything was great and I'm sad that it's so far away from where I reside.

This was my first visit to Estelia's, and I was NOT disappointed!, and the food was delicious! Large portions and fresh ingredients! Our server was so kind and attentive! I will definitely recommend it to friends and family and will be back soon for another meal! LOVE the Old school family own business vibe. Sopapilla's are The Best

Welcome to the Bessemer neighborhood of Pueblo where Estela's Mill Stop Cafe has been cooking wonderful food for over 40 years. I got in at 11:05 and got a booth right away. Within 30 minutes every table was taken and a few diners were starting to sit at the counter rather than wait. Arrive as close to 11am as you can..... I had Huevos con Papas and was totally full and content by the time I left. The word here is "fresh". Don't expect to get any hot sauce in a bottle. The Salsa, Pico de Gallo, and Hot Sauce come in small dishes, perfect for dipping or spooning onto your plate.
