"Situated next to the Etxanobe Atelier, with which it shares its kitchen facilities, this restaurant is much more informal in style, with exposed brick walls and an original iron structure that helps to distribute light. The cuisine here is traditional with a modern touch and is showcased on an à la carte plus three tasting menus: Bilbao, Gastronómico, and Arraigo País Vasco (the latter can be enhanced by choosing the Maridaje Plus wine-pairing option). We recommend asking for one of the dishes off the menu – if it’s available, don’t miss the delicious cod cheeks in a traditional Basque fish stew." - Michelin Inspector

"A restaurant with an unusual setting in a former glass factory in the centre of Bilbao which has managed to retain a few vestiges from its past.Bilbao-born chef Fernando Canales is at the helm of this culinary project featuring an elegant and intimate gastronomic dining room in which he is keen, first and foremost, to impress his guests with creative cooking based around two tasting menus (Chef Atelier and Chef Atelier Plus) and the very best raw ingredients. Elaborate presentation is key here, with fish dishes taking centre stage. Canales is constantly striving to create an ephemeral experience that becomes an unforgettable memory, aided and abetted where necessary by the very latest technology to achieve his goals." - Michelin Inspector

Not too much to add. Great food, great service. The owner/chef visited our table twice, we were there for lunch. The hake was a little salty in my opinion. Other than that everything we had was delicious. We tried snails as well, not everyone’s cup tea.

Visited two times. The first time à la carte, the second time we took the tasting menu. The à la carte experience was great. For the tasting menu, the quality was generally high, however two things were standing out: 1. The wine pairing for the tasting menu consisted of two full bottles of wine (we were only two people) instead of individual glass pairings per dish. The fact that two whole bottles would be served was not stated in the menu, and it was not made clear in any way. Otherwise we would opt out. 2. The meat dish was plain bad, both in consistency, taste, and the doneness (we ordered medium rare but got very blue rare). Hence, one full star off. However, all fish and seafood dishes we’ve gotten over the course of the two visits were great - clearly their specialty.

We quiet loved it for our first experience. But today wasnt ok. The middle of the sea bass was raw, dessert was nothing special and a bit dry. I was offered whatever I want, but just wanted a matching experience. I was alone and ordered a bottle of wine apart of the menu (no gesture on that hand), the bill was 100eur wrong and it took 15min to be corrected, so long that I missed my driver and was charged for it. Unfortunately not a good experience tonight.

Had a wonderful time at the restaurant with top and pleasant service, unique and high quality dishes and enjoyable atmosphere. This was a great and memorable choice for a fine dinning at Bilbao.

Google
Extanobe delivers an exceptional dining experience. The food is a clear 10/10, with beautifully crafted dishes and impressive vegan options from the à la carte menu. I had the best dessert I’ve ever tasted — absolutely unforgettable. We came a bit early at 7:30 when it was still quiet, so I’d recommend booking later. The wine selection is also excellent — well worth it.

The carta is very attractive with a wide range of options. The menus are super interesting, we ended up choosing one. Carpaccio de ciagalas was beautifully done, very thin and fresh, amazing seasoning, powerful taste. The lobster was the best i ever had, perfectly cooked and seasoned. The slow cooked egg with foie gras was great as well. The calamari was also beautifully cooked, strong bold flavours that i loved but too much for my girlfriend. Finally the solomillo with foie was very tender and well cooked, and the red peppers incredibly flavourful. Desserts were good but we were too full to eat / judge them. Service was great, very attentionate, always present and reactive.

Google
We were very disappointed. Bad service. The food was also disappointing. Ordered medium steak and got more than rear even blue steaks.

Google
Perfect restaurant. Very tasty food. Friendly stuff. Were here for wedding anniversary. Booked a table in advance. Restaurant send notification a day before. 2 menus for your choice - with 12 or with 14 courses. You can also select with or without vine pairing. Interesting selection of food. Tasty dishes and beautiful serving. Also were pleased that they changed meat dishes with seafood once, because of allergy. Highly recommend.

Yelp
Not a great experience. Given the fact that it is a Michelin restaurant we expected much more. And having spent four days eating in San Sebastian this restaurant just didn't compare. Our snail appetizer was inedible. Our octopus appetizer was chewy. Our squid entrée was fine, but not memorable. The same thing could be said about our other entrées and the desserts. As for the service, the sommelier and the wait staff were very nice and helpful. However, the headwaiter simply seemed disinterested and rushed us through our choices. The best thing I can say, is that the restaurant has a very nice ambience, but given the number of quality restaurants in Bilbao, I would not recommend this place.

Yelp
Beautiful modern restaurant and excellent accommodating service. The lighting is adjusted to provide pleasant ambient lighting and good lighting on the plates to showcase the dishes. The basque degustation menu was excellent, the squid was memorable, but the red meat although perfectly cooked could have been more tender. The pistachio praline with pineapple cream desert was delicious. In particular, we very much appreciated the staff ability to accommodate our specific dietary requirements for the meal and the chef/owner visit with us to ensure our satisfaction.

Yelp
I would fly back to Bilbao just to experience this culinary art and visual sensations again. This is where gastronomy meets art. From the projected menu, table-side preparation, to 3D goggles, every dish was well orchestrated and carefully presented. The 14-course Chef Plus menu is the best choice and it was a mind-blowing 3-hour journey. I have been to several 3 and 2 stars Michelin Star restaurants around the world, and this one-star establishment gave me more excitement and surprises than some more famous ones. This is the only Michelin star restaurant that I have been to where you get to see the chef several times throughout the dinner. Their seafood dishes were the best ones I have ever had that I can truly taste the intense flavor of the ingredients, not the sauce. I have had numerous cousins with truffle before, but none of them are memorable. The aroma of the white truffle in the soup I had here today was truly legendary. The number one course for me was the dessert named "Caprice of Eucalyptus Raspberry and Tomato." I was curious about the use of tomato in a desert at first, but then it became my most favorite moment of the night. The transformation of a simple ingredient such as tomato into a whole new texture and flavor was just like magic. I have never ordered an a la carte item from a prix fixe menu before, but I did tonight just to experience it twice. Again, the tomato won my heart. The raspberry biscuit was equally amazing by itself, but the shock from the tiny tomato dices hidden inside this dessert was just beyond words. This was easily the best Michelin one-star restaurant for me, and it surpassed some of my past 2-star and 3-star culinary experiences. Maybe Yelp is not commonly used in Spain, so there was only one review about this place. I would not notice this place if I just walk by, since you can't see inside from the street. You have to ring the bell in order to get in. I went to the adjacent restaurant by mistake, since it was the only one open around there. Then I was escorted to the right place. Don't be shy to ring the bell, even though it looks like they are closed from outside. You will not be disappointed.

Yelp
Try the 5 course Basque tasting menu, you will not be disappointed. Everything was dellicious and the service was very gracious.
